Abstract

Se provee un proceso para el mejoramiento de las propiedades organolépticas de bebidas fermentadas y no fermentadas de mosto. Las vides son tratadas antes de la cosecha de las uvas con una composición de levadura para balancear la madurez fenólica y de azúcar en las uvas. Las uvas son cosechadas y procesadas para producir bebidas fermentadas y no fermentadas de mosto que tienen mejoradas propiedades organolépticas. Se proveen además bebidas fermentadas y no fermentadas de mosto que tienen mejoradas propiedades organolépticas, obtenidas por el proceso descripto anteriormente.
