Abstract
Una crema comestible a base de aceite de oliva y los procesos para elaborar la misma. Los procesos para elaborar una crema comestible pueden incluir: la molienda de las aceitunas para formar una pasta; la malaxación de la pasta; la centrifugación de la pasta para obtener una fase oleosa, una fase acuosa y orujo; la centrifugación de la fase acuosa; la separación de la fase acuosa para obtener un precipitado y un sobrenadante; la filtración del sobrenadante; y la homogenización del sobrenadante, la fase oleosa y un emulsionante para elaborar una crema comestible. Una crema comestible puede estar compuesta por aceite de oliva, alpechín de aceitunas, un emulsionante y, opcionalmente, uno o más ingredientes adicionales.
