Abstract

En la presente se describen composiciones de glicósido de esteviol que contienen mezclas de glicósido de esteviol que aumentan sinérgicamente la solubilidad del rebaudiósido D y rebaudiósido M. Estas composiciones tienen un sabor limpio y pueden usarse como edulcorantes o potenciadores del dulzor en alimentos y bebidas con contenido reducido de azúcar. Reivindicación 1: Una mezcla seca de glicósidos de esteviol que comprende: (a) Reb A, en donde el Reb A es 35 - 80% o 55 - 65% en peso de la mezcla seca; (b) Reb D, en donde el Reb D es 4 - 8% o 5 - 6% en peso de la mezcla seca; y (c) Reb M, en donde el Reb M es 15 - 22% o 16 - 18% en peso de la mezcla seca, en donde los glicósidos de esteviol de la mezcla seca tienen una solubilidad en agua combinada de al menos 10.000 ppm a 21ºC.
