Abstract

Composición rica en polisacáridos que comprende beta-glucano, quitina y quitosano, extraídos de la pared celular de Saccharomyces cerevisiae a partir de biomasa subproducto resultante de un procedimiento de elaboración de la cerveza, el procedimiento para su obtención y sus usos. La composición presenta, entre otras biofuncionalidades, un efecto ligando de grasa selectivo por lo que es útil en la prevención y/o tratamiento de enfermedades como el sobrepeso, la obesidad, la hipercolesterolemia, hipertrigliceridemia, hipertensión arterial y trastornos cardiovasculares. Se puede formular como producto comestible, farmacéutico o veterinario.
