Abstract

<p>La presente invención proporciona un extracto de levadura con capacidad de secuestrar selectivamente grasas con efecto hipercolesterolémico, así como su método de obtención. El proceso de obtención comprende: (I) mezclar un residuo de levadura (RL) y un agente saponificador (AS) cumpliendo un índice de proporcionalidad de Ia reacción (IPR) de entre 0,1 y 100; (II) calentar Ia mezcla de Ia etapa (I) a una temperatura comprendida entre 65 y 85°C al menos 1 hora, (lll) separar Ia fase sólida de Ia fase acuosa del producto obtenido en Ia etapa (II); y (IV) someter Ia fase sólida de Ia fase (III) a un proceso de pulverización.</p> <p>El extracto de levadura es útil en Ia prevención y/o tratamiento de enfermedades como el sobrepeso, Ia obesidad, Ia hipercolesterolemia, hipertrigliceridemia, hipertensión arterial y trastornos cardiovasculares. Se puede formular como producto comestible, aditivo alimentario, nutracéutico, farmacéutico o veterinario.</p>
