Abstract
Ácidos grasos poliinsaturados encapsulados que se pueden incorporar en una masa o pasta cocida sin desmenuzado ni disolucion del producto encapsulado que contiene gotitas de aceite recubiertas por una película encapsuladas por un material de matriz, un plastificante líquido que plastifica el material de matriz, y un antioxidante ácido dispersado en todo el material de matriz plastificado que ayuda a prevenir la oxidacion de los ácidos grasos poliinsaturados; y la produccion de un dejo a pescado o malos olores y sabores. El material de matriz incluye un componente de almidon que ayuda a evitar una consistencia y textura gomosa y promueve la extrudabilidad, y un componente de proteína, que endurece el producto encapsulado y previene un sustancial desmenuzado y disolucion durante el mezclado y la coccion de la masa o pasta.
