Abstract
Composiciones aglutinantes no dulces, productos alimenticios que comprenden tales composiciones aglutinantes y métodos de preparación de productos alimenticios que comprenden tales composiciones aglutinantes. Reivindicación 1: Un producto alimenticio caracterizado porque comprende una composición aglutinante no dulce en base acuosa, donde dicha composición aglutinante comprende fibras solubles, proteínas y grasas, y está esencialmente libre de edulcorantes agregados de alto valor calórico, en donde, la composición aglutinante tiene una primera viscosidad a una primera temperatura efectiva para que se pueda mezclar con los componentes del producto alimenticio, y la composición aglutinante tiene una segunda viscosidad a una segunda temperatura efectiva para aglutinar los componentes del producto alimenticio. Reivindicación 2: El producto alimenticio de la reivindicación 1, caracterizado porque las fibras solubles se seleccionan del grupo que consiste de oligosacáridos, polisacáridos, hidrocoloides, ciclodextrinas, almidones resistentes, maltodextrinas resistentes, fibras de maíz y mezclas de los mismos.
