Abstract
Un licor de cacao es sometido a un proceso por el cual la manteca de cacao es inmovilizada por los sólidos de cacao. Esto se logra formando una suspensión de licor de cacao en un medio acuoso y removiendo el componente de medio acuoso de la suspensión. No hay percolación de manteca de cacao del licor de cacao procesado resultante cuando el licor es sometido a una temperatura de 50°C durante toda la noche. El licor de cacao procesado es un ingrediente útil en la industria alimenticia. Es un ingrediente particularmente útil para productos alimenticios donde la migración de manteca de cacao produce florecimiento de grasa. El reemplazo de licor de cacao estándar por el licor de cacao procesado de la invención reduce en gran medida el florecimiento de grasa en productos de repostería.
