Abstract

Métodos y composiciones que se relacionan con enzimas fungica desaturasas de hongos, que modulan la cantidad y ubicacion de los enlaces dobles en ácidos grasos poliinsaturados de cadena larga (LC-PUFA). En particular, se proveen métodos y composiciones para mejorar los perfiles de ácidos grasos omega-3 en productos y partes de plantas usando enzimas desaturasas y los ácidos nucleicos que codifican dichas enzimas. En realizaciones particulares, las enzimas desaturasas son 15-desaturasas fungicas.
