Abstract

La presente se refiere a un procedimiento para la manufactura de productos lácteos fermentados. Este procedimiento propone proteolizar por lo menos una caseína de leche, a saber por lo menos la caseína capa, mediante una enzima que coagula la leche, tal como por ejemplo la quimosina, y someter a agitación el producto después de su fermentación. Es particularmente adecuado para la manufactura de productos lácteos fermentados de tipo yogur y leches fermentadas, a los cuales confiere una textura, y en especial una viscosidad mejorada, sin por ello inducir una sinéresis.
