Abstract
"PROCESSO DE FABRICAçãO DE PRODUTO LáCTEO, USO DE UMA ENZIMA E PRODUTOS LáCTEOS MISTURADOS". O presente pedido trata de um novo processo de fabricação de produtos lácteos fermentados. Esse novo processo propõe proteolisar pelo menos uma caseína do leite, ou seja pelo menos a caseína kappa, por meio de uma enzima coagulante do leite, tal como por exemplo a quimosina, e misturar o produto após a fermentação. Ele é particularmente apropriado para a fabricação de produtos lácteos fermentados de tipo iogurtes e leites fermentados, aos quais confere uma textura, e em particular uma viscosidade melhorada, sem contudo provocar sinerese.
