Abstract

Una galleta reconstituida quebradiza y crujiente compuesta de fragmentos de galleta horneada, aglomerada dentro de un aglomerante que comprende al menos un carbohidrato y grasa, la galleta tiene el rasgo característico de preservar su caracter crujiente durante el almacenamiento a temperatura negativa. Confite helado compuesto que comprende una galleta de acuerdo con la invención y una masa de confitería helada en contacto con esta galleta. El confite helado así obtenido tiene la ventaja del contraste en textura entre la cremosidad de la masa de confitería helada y el caracter crujiente de la galleta, incluso después de largo tiempo de almacenamiento a temperatura de congelamiento.
