Abstract

La presente invencion describe un procedimiento y aparato de moldeado de pequenos artículos de repostería congelados, particularmente paletas congeladas,por congelacion rápida en línea en una cámara termoaislada, donde reina una temperatura muybaja, producida por un gas criogénico, que contiene una cadena detransporte de los moldes, constituidos de mitades de molde, por avance de los juegos de molde a una seccion de moldeado, y después a una seccion de desmoldado,en la cual el desmoldadode los artículos tiene lugar por medio de un dispositivo de separacion de las mitades de barra de los moldes.
