Abstract

PREHRAMBENI PROIZVOD, postupak za proizvodnju smrznutih konfekcioniranih proizvoda bez merljivog povećanja zapremine putem smrzavanja ledene mešavine, koja ima do 10% masnoća, a najbolje od 0 do 0,5% masnoća, i 0,2 do 0,5% stabilizatora za restrikciju povećanja zapremine, a zatim dubokim smrzavanjem na uobičajenu temperaturu skladištenja. Smrznuti konfekcionirani proizvod bez nekog merljivog povećanja zapremine, koji sadrži od 8 do 10% masnoća, ili još bolje bez masnoća, čija je vrednost topljenja najviše 0,175 g/min izmedju 4 i 24% sveobuhvatnih gubitaka težine, a ukupni gubitak težine 30 do 80%, što je odredjivano na cilindričnom uzorku prečnika 2,5 cm i težine 10 g, koji je klimatizovan na -20В°C i izložen ambijentnoj temperaturi od 18 do 20В°C pri čemu je bio postavljen na horizontalnu mrežu od čelične žice veličine otvora 2,5 x 2,5 mm.
