Abstract
新規なゼリー飲料の開発が待たれている。本発明の一態様によれば、ゼリー飲料であって、(A)0.3~3.2g/Lの寒天、0.3~3.2g/Lのカラギーナン、および0.3~3.2g/Lのコンニャクからなる群から選択される1種以上のゲル化剤Aと、(B)0.6~3g/Lのローカストビーンガム、0.6~3g/Lのキサンタンガム、および0.6~3g/Lのジェランガムからなる群から選択される1種以上のゲル化剤Bと、(C)クエン酸カリウム、クエン酸カルシウム、またはクエン酸カリウムおよびクエン酸カルシウムとを含有し、前記1種以上のゲル化剤Aの総量が0.9~6.4g/Lである、ゼリー飲料が提供される。
Description
本発明は、ゼリー飲料、具体的には、複数種のゲル化剤とクエン酸カリウムおよび/またはクエン酸カルシウムを含むゼリー飲料、およびその製造方法などに関する。
これまで消費者の嗜好に合わせて様々なタイプの飲料が開発・販売されてきた。一例として、独特な触感を有するゼリー飲料が挙げられる。ゼリー飲料の中でも様々なものがこれまで開発されており、複数のゲル化剤を組み合わせて触感を調整したものも開示されてきた。例えば、特許文献1(特開2003-125715号公報)では、キサンタンガムと、コンニャク芋抽出物および/またはローカストビーンガムと、紅藻類由来のガム質とを含み、ゲル化点が25~50℃となるように調整されたゲル化剤を含むことを特徴とするドリンクゼリーが開示されている。
特許文献2(特開2012-24081号公報)では、ゲル化剤としてグルコマンナン、ローカストビーンガムおよびカラギーナンを含み、ゲル化促進剤によって形成されるゼリーを含有し、そのゼリーが固形分を含有することを特徴とする容器詰ゼリー飲料が開示されている。
特許文献3(特開2021-23169号公報)では、液状部とゲル状のゼリー部とを含むとともに、カゼインを含むゼリー飲料であって、ローカストビーンガム、カラギーナン、キサンタンガム、油脂を含有し、カルシウムまたはマグネシウムを含有し、カゼインの含有量が所定の範囲内であるゼリー飲料が開示されている。
上記のような状況の下、新規なゼリー飲料の開発が待たれている。
本発明者らは、複数種のゲル化剤とクエン酸カリウムおよび/またはクエン酸カルシウムを用いてゼリー飲料を調製することで、テクスチャーおよびのど越しが良好なゼリー飲料を得ることができるとの知見を得た。本発明はこのような知見に基づくものである。
本発明は、次に示すゼリー飲料および当該ゼリー飲料の製造方法を提供する。

本発明の一態様によれば、複数種のゲル化剤とクエン酸カリウムおよび/またはクエン酸カルシウムを含むゼリー飲料が提供される。本発明の他の態様によれば、テクスチャーおよびのど越しが良好なゼリー飲料が提供される。本発明の好ましい態様によるゼリー飲料は、テクスチャーおよびのど越しが良好であり、かつ、塩素の含有量が低いため、製造設備におけるパイプラインの腐食を抑制することができる。
以下、本発明を詳細に説明する。以下の実施の形態は、本発明を説明するための例示であり、本発明をこの実施の形態のみに限定する趣旨ではない。本発明は、その要旨を逸脱しない限り、様々な形態で実施をすることができる。
なお、本明細書において引用した全ての文献、および公開公報、特許公報その他の特許文献は、参照として本明細書に組み込むものとする。また、本明細書は、2021年6月30日に出願された本願優先権主張の基礎となる日本国特許出願(特願2021-109377号)の明細書及び図面に記載の内容を包含する。
本明細書において、例えば、「A成分の含有量がXg/Lである」との記載は、「飲料1Lに対して、A成分がXg含まれている」ことを意味する。
なお、本明細書において引用した全ての文献、および公開公報、特許公報その他の特許文献は、参照として本明細書に組み込むものとする。また、本明細書は、2021年6月30日に出願された本願優先権主張の基礎となる日本国特許出願(特願2021-109377号)の明細書及び図面に記載の内容を包含する。
本明細書において、例えば、「A成分の含有量がXg/Lである」との記載は、「飲料1Lに対して、A成分がXg含まれている」ことを意味する。
1.ゼリー飲料
本発明は、一態様として、以下のゼリー飲料(以下、「本発明のゼリー飲料」という)を提供する。
本発明の一態様によるゼリー飲料は(A)0.3~3.2g/Lの寒天、0.3~3.2g/Lのカラギーナン、および0.3~3.2g/Lのコンニャクからなる群から選択される1種以上のゲル化剤Aと、(B)0.6~3g/Lのローカストビーンガム、0.6~3g/Lのキサンタンガム、および0.6~3g/Lのジェランガムからなる群から選択される1種以上のゲル化剤Bと、(C)クエン酸カリウム、クエン酸カルシウム、またはクエン酸カリウムおよびクエン酸カルシウムとを含有し、前記1種以上のゲル化剤Aの総量が0.9~6.4g/Lである、ゼリー飲料である。
本発明は、一態様として、以下のゼリー飲料(以下、「本発明のゼリー飲料」という)を提供する。

本明細書において、「ゼリー飲料」とは、ゲル化剤を含み、当該ゲル化剤によってゲルまたはゾル状になっている飲料を意味する。本発明の一態様におけるゼリー飲料はその少なくとも一部がゲル状となっていればよく、ゲル状となっていない部分がゾル状や液状になっていてもよい。また、ゼリー飲料には、ゼリー状食品やゼリー状飲料などと称される食品・飲料も包含される。
[ゲル化剤]
ゲル化剤とは液体をゲル化するための化学物質である。ゲル化剤としては様々なものが市販されているが、本発明の一態様に用いるゲル化剤は、寒天、カラギーナンおよびコンニャクから選択されるゲル化剤Aと、ローカストビーンガム、キサンタンガムおよびジェランガムから選択されるゲル化剤Bを含む。ゲル化剤Aは、得られるゲルの硬さを調整するためのものであり、ゲル化剤Bは得られるゲルの柔らかさを調整するためのものである。したがって、ゲル化剤Aとしては比較的硬いゲル化剤が選択され、ゲル化剤Bとしては比較的柔らかいゲル化剤が選択されている。本発明の一態様によるゼリー飲料は、本発明の効果を損なわない限りにおいて、ゲル化剤Aおよびゲル化剤Bに加え、他の公知のゲル化剤を含んでいてもよい。
ゲル化剤とは液体をゲル化するための化学物質である。ゲル化剤としては様々なものが市販されているが、本発明の一態様に用いるゲル化剤は、寒天、カラギーナンおよびコンニャクから選択されるゲル化剤Aと、ローカストビーンガム、キサンタンガムおよびジェランガムから選択されるゲル化剤Bを含む。ゲル化剤Aは、得られるゲルの硬さを調整するためのものであり、ゲル化剤Bは得られるゲルの柔らかさを調整するためのものである。したがって、ゲル化剤Aとしては比較的硬いゲル化剤が選択され、ゲル化剤Bとしては比較的柔らかいゲル化剤が選択されている。本発明の一態様によるゼリー飲料は、本発明の効果を損なわない限りにおいて、ゲル化剤Aおよびゲル化剤Bに加え、他の公知のゲル化剤を含んでいてもよい。
(ゲル化剤A)
本発明の一態様に用いるゲル化剤Aは、0.3~3.2g/Lの寒天、0.3~3.2g/Lのカラギーナン、および0.3~3.2g/Lのコンニャクからなる群から選択される1種以上である。ゲル化剤Aとしては、この中から1種類のゲル化剤を選択してもよく、2種類以上のゲル化剤を選択してもよい。例えば、寒天とカラギーナン、寒天とコンニャク、カラギーナンとコンニャクまたは寒天とカラギーナンとコンニャクとの組み合わせであってもよい。
本発明の一態様に用いるゲル化剤Aは、0.3~3.2g/Lの寒天、0.3~3.2g/Lのカラギーナン、および0.3~3.2g/Lのコンニャクからなる群から選択される1種以上である。ゲル化剤Aとしては、この中から1種類のゲル化剤を選択してもよく、2種類以上のゲル化剤を選択してもよい。例えば、寒天とカラギーナン、寒天とコンニャク、カラギーナンとコンニャクまたは寒天とカラギーナンとコンニャクとの組み合わせであってもよい。
本発明に用いる寒天(agar)は、特に限定されず、一般的に市販されているものを使用することができる。例えば、三栄源エフ・エフ・アイ株式会社製のゲルアップ(Gel Up)シリーズ(「ゲルアップJ-1630」、「ゲルアップJ-3749」および「ゲルアップJ-8037」)などが好ましい。本発明の一態様におけるゼリー飲料に含まれる寒天の量は、0.3~3.2g/Lが好ましいが、例えば0.3~3g/L、0.3~3.0g/L、0.3~2.8g/L、0.3~2.6g/L、0.3~2.4g/L、0.3~2.2g/L、0.7~3.2g/L、0.7~3g/L、0.7~3.0g/L、0.7~2.8g/L、0.7~2.6g/L、0.7~2.4g/L、0.7~2.2g/L、0.9~3.2g/L、0.9~3g/L、0.9~3.0g/L、0.9~2.8g/L、0.9~2.6g/L、0.9~2.4g/L、0.9~2.2g/L、1.2~3.2g/L、1.2~3g/L、1.2~3.0g/L、1.2~2.8g/L、1.2~2.6g/L、1.2~2.4g/L、1.2~2.2g/L、1.4~3.2g/L、1.4~3g/L、1.4~3.0g/L、1.4~2.8g/L、1.4~2.6g/L、1.4~2.4g/L、1.4~2.2g/L、1.5~3.2g/L、1.5~3g/L、1.5~3.0g/L、1.5~2.8g/L、1.5~2.6g/L、1.5~2.4g/L、1.5~2.2g/L、1.6~3.2g/L、1.6~3g/L、1.6~3.0g/L、1.6~2.8g/L、1.6~2.6g/L、1.6~2.4g/Lまたは1.6~2.2g/Lであってもよい。ゼリー飲料中の寒天の含有量は原料の添加量から算出することができる。
本発明に用いるカラギーナン(Carrageenan)は、特に限定されず様々なものを用いることができるが、カッパ(κ)カラギーナンが好ましい。本発明の一態様のゼリー飲料に用いるカラギーナンとしては、ゲル強度が1,000g/cm2以上、1,100g/cm2以上または1,200g/cm2以上ものが好ましい。ゲル強度の上限は特に限定されないが、3,000g/cm2以下、2,500g/cm2以下または2,000g/cm2以下であってもよい。本発明の一態様におけるゼリー飲料に含まれるカラギーナンの量は、0.3~3.2g/Lが好ましいが、例えば0.3~3g/L、0.3~3.0g/L、0.3~2.8g/L、0.3~2.6g/L、0.3~2.4g/L、0.3~2.2g/L、0.7~3.2g/L、0.7~3g/L、0.7~3.0g/L、0.7~2.8g/L、0.7~2.6g/L、0.7~2.4g/L、0.7~2.2g/L、0.9~3.2g/L、0.9~3g/L、0.9~3.0g/L、0.9~2.8g/L、0.9~2.6g/L、0.9~2.4g/L、0.9~2.2g/L、1.2~3.2g/L、1.2~3g/L、1.2~3.0g/L、1.2~2.8g/L、1.2~2.6g/L、1.2~2.4g/L、1.2~2.2g/L、1.4~3.2g/L、1.4~3g/L、1.4~3.0g/L、1.4~2.8g/L、1.4~2.6g/L、1.4~2.4g/L、1.4~2.2g/L、1.5~3.2g/L、1.5~3g/L、1.5~3.0g/L、1.5~2.8g/L、1.5~2.6g/L、1.5~2.4g/L、1.5~2.2g/L、1. 6~3.2g/L、1.6~3g/L、1.6~3.0g/L、1.6~2.8g/L、1.6~2.6g/L、1.6~2.4g/Lまたは1. 6~2.2g/Lであってもよい。ゼリー飲料中のカラギーナンの含有量は原料の添加量から算出することができる。
本発明に用いるコンニャク(konjac)は、特に限定されず、一般的に市販されているものを使用することができる。例えば、グルコマンナン比率が50重量%以上、60重量%以上、70重量%以上、80重量%以上、50重量%~100重量%、60重量%~98重量%、70重量%~96重量%または80重量%~95重量%のコンニャクが好ましい。本発明の一態様におけるゼリー飲料に含まれるコンニャクの量は、0.3~3.2g/Lが好ましいが、例えば0.3~3g/L、0.3~3.0g/L、0.3~2.8g/L、0.3~2.6g/L、0.3~2.4g/L、0.3~2.2g/L、0.7~3.2g/L、0.7~3g/L、0.7~3.0g/L、0.7~2.8g/L、0.7~2.6g/L、0.7~2.4g/L、0.7~2.2g/L、0.9~3.2g/L、0.9~3g/L、0.9~3.0g/L、0.9~2.8g/L、0.9~2.6g/L、0.9~2.4g/L、0.9~2.2g/L、1.2~3.2g/L、1.2~3g/L、1.2~3.0g/L、1.2~2.8g/L、1.2~2.6g/L、1.2~2.4g/L、1.2~2.2g/L、1.4~3.2g/L、1.4~3g/L、1.4~3.0g/L、1.4~2. 8g/L、1.4~2.6g/L、1.4~2.4g/L、1.4~2.2g/L、1.5~3.2g/L、1.5~3g/L、1.5~3.0g/L、1.5~2.8g/L、1.5~2.6g/L、1.5~2.4g/L、1.5~2.2g/L、1.6~3.2g/L、1.6~3g/L、1. 6~3.0g/L、1.6~2.8g/L、1.6~2.6g/L、1.6~2.4g/Lまたは1.6~2.2g/Lであってもよい。ゼリー飲料中のコンニャクの含有量は原料の添加量から算出することができる。

(ゲル化剤B)
本発明の一態様に用いるゲル化剤Bは、0.6~3g/Lのローカストビーンガム、0.6~3g/Lのキサンタンガム、および0.6~3g/Lのジェランガムからなる群から選択される1種以上である。ゲル化剤Bとしては、この中から1種類のゲル化剤を選択してもよく、2種類以上のゲル化剤を選択してもよい。例えば、ローカストビーンガムとキサンタンガム、ローカストビーンガムとジェランガム、キサンタンガムとジェランガムまたはローカストビーンガムとキサンタンガムとジェランガムとの組み合わせであってもよい。
本発明の一態様に用いるゲル化剤Bは、0.6~3g/Lのローカストビーンガム、0.6~3g/Lのキサンタンガム、および0.6~3g/Lのジェランガムからなる群から選択される1種以上である。ゲル化剤Bとしては、この中から1種類のゲル化剤を選択してもよく、2種類以上のゲル化剤を選択してもよい。例えば、ローカストビーンガムとキサンタンガム、ローカストビーンガムとジェランガム、キサンタンガムとジェランガムまたはローカストビーンガムとキサンタンガムとジェランガムとの組み合わせであってもよい。
本発明に用いるローカストビーンガム(Locust Bean Gum) は、特に限定されず、一般的に市販されているものを使用することができる。例えば、DANISCO社製の「GRINDSTED LBG 246」などが好ましい。本発明の一態様におけるゼリー飲料に含まれるローカストビーンガムの量は、0.6~3g/Lが好ましいが、例えば0.6~3.0g/L、0.9~3g/L、0.9~3.0g/L、1. 1~3g/L、1.1~3.0g/L、1.2~3g/L、1.2~3.0g/L、1.3~3g/L、1.3~3.0g/L、1.4~3g/L、1.4~3.0g/L、0.6~2.8g/L、0.9~2.8g/L、1.1~2.8g/L、1.2~2.8g/L、1.3~2.8g/L、1.4~2.8g/L、0.6~2.6g/L、0.9~2.6g/L、1.1~2.6g/L、1.2~2.6g/L、1.3~2.6g/L、1. 4~2.6g/L、0.6~2.4g/L、0.7~2.4g/L、0.9~2.4g/L、1.1~2.4g/L、1.2~2.4g/L、1.3~2.4g/Lまたは1.4~2.4g/Lであってもよい。ゼリー飲料中のローカストビーンガムの含有量は原料の添加量から算出することができる。
本発明に用いるキサンタンガム(Xanthan Gum)は、特に限定されず、一般的に市販されているものを使用することができる。例えば、CP Kelco社製の「KELTROL ADVANCED PERFORMANCE-F」などが好ましい。本発明の一態様におけるゼリー飲料に含まれるキサンタンガムの量は、0.6~3g/Lが好ましいが、例えば0.6~3.0g/L、0.9~3g/L、0.9~3.0g/L、1.1~3g/L、1.1~3.0g/L、1.2~3g/L、1.2~3.0g/L、1.3~3g/L、1.3~3.0g/L、1.4~3g/L、1.4~3.0g/L、0.6~2.8g/L、0.9~2.8g/L、1.1~2.8g/L、1.2~2.8g/L、1.3~2.8g/L、1. 4~2.8g/L、0.6~2.6g/L、0.9~2.6g/L、1.1~2.6g/L、1.2~2.6g/L、1.3~2.6g/L、1.4~2.6g/L、0.6~2.4g/L、0.9~2.4g/L、0.9~2.4g/L、1.1~2.4g/L、1.2~2.4g/L、1.3~2.4g/Lまたは1.4~2.4g/Lであってもよい。ゼリー飲料中のキサンタンガムの含有量は原料の添加量から算出することができる。
本発明に用いるジェランガムは、特に限定されず、例えばネイティブ型ジェランガムや脱アシル型ジェランガムが挙げられる。ジェランガムとして一般的に市販されているものを使用することができる。例えば、DANISCO社製の「GRINDSTED Gellan Dai 200」などが好ましい。本発明の一態様におけるゼリー飲料に含まれるジェランガムの量は、0.6~3g/Lが好ましいが、例えば0.6~3.0g/L、0.9~3g/L、0.9~3.0g/L、1.1~3g/L、1.1~3.0g/L、1.2~3g/L、1.2~3.0g/L、1.3~3g/L、1.3~3.0g/L、1.4~3g/L、1.4~3.0g/L、0.6~2.8g/L、0.9~2.8g/L、1.1~2.8g/L、1.2~2.8g/L、1.3~2.8g/L、1.4~2.8g/L、0.6~2.6g/L、0.9~2.6g/L、1.1~2.6g/L、1.2~2.6g/L、1.3~2.6g/L、1.4~2.6g/L、0.6~2.4g/L、0.9~2.4g/L、1~2.4g/L、1.1~2.4g/L、1.2~2.4g/L、1.3~2.4g/Lまたは1.4~2.4g/Lであってもよい。ゼリー飲料中のジェランガムの含有量は原料の添加量から算出することができる。

[ゲル化促進剤]
本発明の一態様におけるゼリー飲料は、ゲル化促進剤としてクエン酸カリウムおよび/またはクエン酸カルシウムを含有する。一般的に、ゲル化促進剤としては、カリウムイオンやナトリウムイオンを発生される塩のうち、食品添加物として使用が認められているものが用いられる。その中で、塩化カリウムや塩化カルシウムなどが広く用いられているが、本発明の一態様においてクエン酸カリウム、クエン酸カルシウム、またはクエン酸カリウムおよびクエン酸カルシウムを用いることで、テクスチャーおよびのど越しが良好であり、かつ、塩素の含有量が低いため、製造設備におけるパイプラインの腐食を抑制することができる。添加するゲル化促進剤の種類によって得られるゲルの特性が大きく変わることが知られているが、本発明では所定のゲル化剤とクエン酸カリウム、クエン酸カルシウム、またはクエン酸カリウムおよびクエン酸カルシウムとを組み合わせることで良好なテクスチャーおよびのど越しを実現している。本発明の一態様におけるゼリー飲料に用いるクエン酸カリウムとしては、クエン酸一カリウムやクエン酸三カリウムが挙げられるが、クエン酸三カリウムが好ましい。本発明の一態様におけるゼリー飲料に用いるクエン酸カルシウムとしては、クエン酸三カルシウムが好ましい。また、本発明のゼリー飲料の性質を損なわない限りにおいて、リン酸カリウムなどの他のゲル化促進剤を含有していてもよい。
本発明の一態様におけるゼリー飲料は、ゲル化促進剤としてクエン酸カリウムおよび/またはクエン酸カルシウムを含有する。一般的に、ゲル化促進剤としては、カリウムイオンやナトリウムイオンを発生される塩のうち、食品添加物として使用が認められているものが用いられる。その中で、塩化カリウムや塩化カルシウムなどが広く用いられているが、本発明の一態様においてクエン酸カリウム、クエン酸カルシウム、またはクエン酸カリウムおよびクエン酸カルシウムを用いることで、テクスチャーおよびのど越しが良好であり、かつ、塩素の含有量が低いため、製造設備におけるパイプラインの腐食を抑制することができる。添加するゲル化促進剤の種類によって得られるゲルの特性が大きく変わることが知られているが、本発明では所定のゲル化剤とクエン酸カリウム、クエン酸カルシウム、またはクエン酸カリウムおよびクエン酸カルシウムとを組み合わせることで良好なテクスチャーおよびのど越しを実現している。本発明の一態様におけるゼリー飲料に用いるクエン酸カリウムとしては、クエン酸一カリウムやクエン酸三カリウムが挙げられるが、クエン酸三カリウムが好ましい。本発明の一態様におけるゼリー飲料に用いるクエン酸カルシウムとしては、クエン酸三カルシウムが好ましい。また、本発明のゼリー飲料の性質を損なわない限りにおいて、リン酸カリウムなどの他のゲル化促進剤を含有していてもよい。

本発明の一態様におけるゼリー飲料に含まれるクエン酸カルシウムの含有量は、好ましくは0.1~1g/Lであり、0.1~1.0g/L、0.2~1.0g/L、0.3~1.0g/L、0.4~1.0g/L、0.5~1. 0g/L、0.6~1.0g/L、0.7~1.0g/L、0.8~1.0g/L、0.9~1.0g/L、0.1~0.9g/L、0.1~0.8g/L、0.1~0.7g/L、0.1~0.6g/L、0.1~0.5g/L、0.1~0.4g/L、0.1~0.3g/L、0.1~0.2g/L、0.2~0.8g/L、0.3~0.7g/Lまたは0.4~0.6g/Lであってもよい。ゼリー飲料中のクエン酸カルシウムの含有量は原料の添加量から算出することができる。
[塩素]
本発明の一態様におけるゼリー飲料に含まれる塩素の含有量は、好ましくは0~300ppmであり、0~260ppm、0~220ppm、0~200ppm、0~180ppm、0~160ppm、0~140ppm、0~120ppm、0~100ppm、0~80ppm、0~60ppmまたは0~40ppmであってもよい。ゼリー飲料中の塩素の量は、原子吸光法により測定することができる。なお、ゼリー飲料に配合された塩素含有化合物の配合量が判明している場合には、その配合量から算出された値を用いてもよい。塩素の含有量が少ないことで、製造設備におけるパイプラインへの腐食によるダメージを低減することができるため、様々な製造設備で製造することができるというメリットがある。
本発明の一態様におけるゼリー飲料に含まれる塩素の含有量は、好ましくは0~300ppmであり、0~260ppm、0~220ppm、0~200ppm、0~180ppm、0~160ppm、0~140ppm、0~120ppm、0~100ppm、0~80ppm、0~60ppmまたは0~40ppmであってもよい。ゼリー飲料中の塩素の量は、原子吸光法により測定することができる。なお、ゼリー飲料に配合された塩素含有化合物の配合量が判明している場合には、その配合量から算出された値を用いてもよい。塩素の含有量が少ないことで、製造設備におけるパイプラインへの腐食によるダメージを低減することができるため、様々な製造設備で製造することができるというメリットがある。
[ナトリウム]
本発明の一態様におけるゼリー飲料に含まれるナトリウムの含有量は、好ましくは150ppm以下であり、130ppm以下、110ppm以下、90ppm以下、70ppm以下、50ppm以下、30ppm以下、10ppm以下または実質的に0ppmであってもよい。ゼリー飲料中のナトリウムの量は、原子吸光法により測定することができる。なお、ゼリー飲料に配合されたナトリウム含有化合物の配合量が判明している場合には、その配合量から算出された値を用いてもよい。
本発明の一態様におけるゼリー飲料に含まれるナトリウムの含有量は、好ましくは150ppm以下であり、130ppm以下、110ppm以下、90ppm以下、70ppm以下、50ppm以下、30ppm以下、10ppm以下または実質的に0ppmであってもよい。ゼリー飲料中のナトリウムの量は、原子吸光法により測定することができる。なお、ゼリー飲料に配合されたナトリウム含有化合物の配合量が判明している場合には、その配合量から算出された値を用いてもよい。
[pH]
本発明の一態様におけるゼリー飲料のpHは、好ましくは3~4.8であり、3.0~4.8、3.2~4.8、3.4~4.8、3.6~4.8、3.8~4.8、3.2~4.6、3.4~4.6、3.6~4.6、3.8~4.6、3.2~4.4、3.4~4.4、3.6~4.4、3.8~4.4または3.8~4.2であってもよい。pHをこの範囲に調整することで、微生物の繁殖を抑えつつ、ゲルのテクスチャーとのど越しを良好に維持することができる。
本発明の一態様におけるゼリー飲料のpHは、好ましくは3~4.8であり、3.0~4.8、3.2~4.8、3.4~4.8、3.6~4.8、3.8~4.8、3.2~4.6、3.4~4.6、3.6~4.6、3.8~4.6、3.2~4.4、3.4~4.4、3.6~4.4、3.8~4.4または3.8~4.2であってもよい。pHをこの範囲に調整することで、微生物の繁殖を抑えつつ、ゲルのテクスチャーとのど越しを良好に維持することができる。
[果汁]
本発明の一態様におけるゼリー飲料は、果汁を含んでいてもよい。本発明の一態様におけるゼリー飲料に含まれる果汁としては、特に限定されないが、例えば、オレンジ、ミカン、レモン、グレープフルーツ、ライム、パイナップル、イチゴ、ラズベリー、ブルーベリー、カシス(blackcurrant)、クランベリー、ブルーベリー、グァバ、バナナ、アセロラ、パパイヤ、パッションフルーツ、マンゴー、リンゴ、ブドウ、桃、梅、梨、アンズ、スモモ、メロン、キウイフルーツおよび花梨から選択される1種以上が挙げられる。本発明の好ましい一態様におけるゼリー飲料は、カシス果汁を含む。
本発明の一態様におけるゼリー飲料は、果汁を含んでいてもよい。本発明の一態様におけるゼリー飲料に含まれる果汁としては、特に限定されないが、例えば、オレンジ、ミカン、レモン、グレープフルーツ、ライム、パイナップル、イチゴ、ラズベリー、ブルーベリー、カシス(blackcurrant)、クランベリー、ブルーベリー、グァバ、バナナ、アセロラ、パパイヤ、パッションフルーツ、マンゴー、リンゴ、ブドウ、桃、梅、梨、アンズ、スモモ、メロン、キウイフルーツおよび花梨から選択される1種以上が挙げられる。本発明の好ましい一態様におけるゼリー飲料は、カシス果汁を含む。
本発明の一態様におけるゼリー飲料に含まれる果汁は、ストレート果汁、濃縮果汁等、製造方法によらず使用することができる。なお、濃縮果汁は、加熱濃縮法および冷凍濃縮法のいずれによって調製されたものであってもよい。果汁の含有量は40%以下、35%以下、30%以下、25%以下、20%以下、15%以下、10%以下、1~40%、1~35%、1~30%、1~25%、1~20%、1~15%、1~10%、5~40%、5~35%、5~30%、5~25%、5~20%、5~15%または5~10%であってもよい。
[甘味料]
本発明の一態様におけるゼリー飲料は、甘味料を含んでいてもよい。甘味料としては、低甘味度甘味料、高甘味度甘味料またはその組み合わせを含んでいてもよい。低甘味度甘味料としては、例えば、グルコース、スクロース(グラニュー糖など)、フルクトース、マルトース、オリゴ糖、果糖ブドウ糖液糖、乳糖、プシコース、アロース、タガトース、キシロースまたはリボースが挙げられる。高甘味度甘味料としては、例えば、アスパルテーム、ネオテーム、アドバンテーム、スクラロース、アセスルファムカリウム(アセスルファムK)、サッカリン、サッカリンナトリウム、サイクラミン酸ナトリウム、ズルチン、グリチルリチン酸二ナトリウム、グリチルリチン酸三ナトリウム、ネオヘスペリジンジヒドロカルコン、ソーマチン、モネリン、クルクリン、マビンリン、ブラゼイン、ペンタジン、ヘルナンズルチン、4β-ヒドロキシヘルナンズルチン、ミラクリン、グリチルリチン、ルブソシド、フィロズルチン、モグロシドIV、モグロシドV、ステビオール配糖体(レバウジオシドA、レバウジオシドD、レバウジオシドM)、ソーマチン、モネリン、ブラゼイン、モナチン、羅漢果抽出物またはステビア抽出物が挙げられる。

[他の任意成分]
本発明の一態様におけるゼリー飲料は、本発明の効果を損なわない限りにおいて、上記の成分以外に通常の飲料に添加可能な成分を含有していてもよい。そのような成分として、例えば、水、酸味料、香料、ビタミン、色素類、酸化防止剤、乳化剤、保存料、調味料、エキス類、pH調整剤、品質安定化剤などが挙げられる。
本発明の一態様におけるゼリー飲料は、本発明の効果を損なわない限りにおいて、上記の成分以外に通常の飲料に添加可能な成分を含有していてもよい。そのような成分として、例えば、水、酸味料、香料、ビタミン、色素類、酸化防止剤、乳化剤、保存料、調味料、エキス類、pH調整剤、品質安定化剤などが挙げられる。
[容器および殺菌]
本発明の一態様におけるゼリー飲料の形態は限定されず、例えば缶、瓶、PETボトル、パウチ、紙パックおよびプラスチック容器等の容器に封入して容器詰めされた容器詰ゼリー飲料の形態としてもよい。容器詰めした後に加熱殺菌を行う場合、その種類は特に限定されず、例えば転倒殺菌、UHT殺菌およびレトルト殺菌等の通常の手法を用いて行うことができる。加熱殺菌工程の温度は特に限定されないが、例えば65~130℃、好ましくは80~120℃で、1~40分である。ただし、上記の条件と同等の殺菌価が得られれば適当な温度で数秒、例えば5~30秒での殺菌でも問題はない。
本発明の一態様におけるゼリー飲料の形態は限定されず、例えば缶、瓶、PETボトル、パウチ、紙パックおよびプラスチック容器等の容器に封入して容器詰めされた容器詰ゼリー飲料の形態としてもよい。容器詰めした後に加熱殺菌を行う場合、その種類は特に限定されず、例えば転倒殺菌、UHT殺菌およびレトルト殺菌等の通常の手法を用いて行うことができる。加熱殺菌工程の温度は特に限定されないが、例えば65~130℃、好ましくは80~120℃で、1~40分である。ただし、上記の条件と同等の殺菌価が得られれば適当な温度で数秒、例えば5~30秒での殺菌でも問題はない。

2.ゼリー飲料の製造方法
本発明は、別の実施形態として、上記本発明のゼリー飲料を製造する方法(以下、「本発明の製造方法」という)を提供する。本発明の製造方法は、(A)0.3~3.2g/Lの寒天、0.3~3.2g/Lのカラギーナン、および0.3~3.2g/Lのコンニャクからなる群から選択される1種以上のゲル化剤Aと、(B)0.6~3g/Lのローカストビーンガム、0.6~3g/Lのキサンタンガム、および0.6~3g/Lのジェランガムからなる群から選択される1種以上のゲル化剤Bと、(C)クエン酸カリウム、クエン酸カルシウム、またはクエン酸カリウムおよびクエン酸カルシウムを含有し、前記1種以上のゲル化剤Aの総量が0.9~6.4g/Lであるゼリー飲料が得られれば特に限定されない。
本発明は、別の実施形態として、上記本発明のゼリー飲料を製造する方法(以下、「本発明の製造方法」という)を提供する。本発明の製造方法は、(A)0.3~3.2g/Lの寒天、0.3~3.2g/Lのカラギーナン、および0.3~3.2g/Lのコンニャクからなる群から選択される1種以上のゲル化剤Aと、(B)0.6~3g/Lのローカストビーンガム、0.6~3g/Lのキサンタンガム、および0.6~3g/Lのジェランガムからなる群から選択される1種以上のゲル化剤Bと、(C)クエン酸カリウム、クエン酸カルシウム、またはクエン酸カリウムおよびクエン酸カルシウムを含有し、前記1種以上のゲル化剤Aの総量が0.9~6.4g/Lであるゼリー飲料が得られれば特に限定されない。
本発明の一態様の製造方法は、調合と、加熱と、冷却とを含む。例えば、本発明の一態様の製造方法は、(A)0.3~3.2g/Lの寒天、0.3~3.2g/Lのカラギーナン、および0.3~3.2g/Lのコンニャクからなる群から選択される1種以上のゲル化剤Aと、(B)0.6~3g/Lのローカストビーンガム、0.6~3g/Lのキサンタンガム、および0.6~3g/Lのジェランガムからなる群から選択される1種以上のゲル化剤Bと、(C)クエン酸カリウム、クエン酸カルシウム、またはクエン酸カリウムおよびクエン酸カルシウムと、(D)水とを含み、前記1種以上のゲル化剤Aの総量が0.9~6.4g/Lである混合液を調合することと、得られた混合液を加熱することと、加熱した混合液を冷却することとを含む。本発明の好ましい一態様の製造方法は、これらに加え、充填や殺菌を含んでいてもよい。それぞれについて以下に説明する。
(調合)
本発明の一態様による製造方法における調合では、ゲル化剤A、ゲル化剤B、クエン酸カリウム、クエン酸カルシウム、またはクエン酸カリウムおよびクエン酸カルシウム、水ならびに所望により他の任意成分を混合し、混合液が(A)0.3~3.2g/Lの寒天、0.3~3.2g/Lのカラギーナン、および0.3~3.2g/Lのコンニャクからなる群から選択される1種以上のゲル化剤Aと、(B)0.6~3g/Lのローカストビーンガム、0.6~3g/Lのキサンタンガム、および0.6~3g/Lのジェランガムからなる群から選択される1種以上のゲル化剤Bと、(C)クエン酸カリウム、クエン酸カルシウム、またはクエン酸カリウムおよびクエン酸カルシウムと、(D)水とを含み、前記1種以上のゲル化剤Aの総量が0.9~6.4g/Lであるように調整する。調合はタンクなどの一般的に用いられる装置内で行うことができる。原料は同時に投入してもよく、逐次投入してもよい。あるいは、事前にいくつかの原料を混合した上で他の原料と調合してもよい。調合後に撹拌やろ過を行ってもよい。
本発明の一態様による製造方法における調合では、ゲル化剤A、ゲル化剤B、クエン酸カリウム、クエン酸カルシウム、またはクエン酸カリウムおよびクエン酸カルシウム、水ならびに所望により他の任意成分を混合し、混合液が(A)0.3~3.2g/Lの寒天、0.3~3.2g/Lのカラギーナン、および0.3~3.2g/Lのコンニャクからなる群から選択される1種以上のゲル化剤Aと、(B)0.6~3g/Lのローカストビーンガム、0.6~3g/Lのキサンタンガム、および0.6~3g/Lのジェランガムからなる群から選択される1種以上のゲル化剤Bと、(C)クエン酸カリウム、クエン酸カルシウム、またはクエン酸カリウムおよびクエン酸カルシウムと、(D)水とを含み、前記1種以上のゲル化剤Aの総量が0.9~6.4g/Lであるように調整する。調合はタンクなどの一般的に用いられる装置内で行うことができる。原料は同時に投入してもよく、逐次投入してもよい。あるいは、事前にいくつかの原料を混合した上で他の原料と調合してもよい。調合後に撹拌やろ過を行ってもよい。
(加熱)
本発明の一態様による製造方法における加熱では、調合によって得られた混合液を好ましくは70~100℃、より好ましくは80~100℃に加熱する。加熱時間は適宜選択することができるが、例えば10秒~10分である。後述の冷却によってゲル化剤をゲル化させるために一旦調合液を加熱する。加熱後に容器に充填してもよく、また、加熱が殺菌処理を兼ねていてもよい。
本発明の一態様による製造方法における加熱では、調合によって得られた混合液を好ましくは70~100℃、より好ましくは80~100℃に加熱する。加熱時間は適宜選択することができるが、例えば10秒~10分である。後述の冷却によってゲル化剤をゲル化させるために一旦調合液を加熱する。加熱後に容器に充填してもよく、また、加熱が殺菌処理を兼ねていてもよい。
(冷却)
本発明の一態様による製造方法における冷却では、加熱した混合液を好ましくは35℃以下、より好ましくは30℃以下に冷却する。冷却時間は適宜選択することができるが、例えば10~60分である。この冷却によってゲル化剤がゲル化し、本発明の一態様によるゼリー飲料が得られる。
本発明の一態様による製造方法における冷却では、加熱した混合液を好ましくは35℃以下、より好ましくは30℃以下に冷却する。冷却時間は適宜選択することができるが、例えば10~60分である。この冷却によってゲル化剤がゲル化し、本発明の一態様によるゼリー飲料が得られる。
(任意処理)
本発明の一態様による製造方法において、加熱前または加熱後の調合液を容器に充填し、その後冷却してもよい。殺菌処理は上述のとおり加熱と共に行ってもよく、加熱・充填後に別途行ってもよい。殺菌処理としては、例えば、転倒殺菌、UHT殺菌およびレトルト殺菌が挙げられる。
本発明の一態様による製造方法において、加熱前または加熱後の調合液を容器に充填し、その後冷却してもよい。殺菌処理は上述のとおり加熱と共に行ってもよく、加熱・充填後に別途行ってもよい。殺菌処理としては、例えば、転倒殺菌、UHT殺菌およびレトルト殺菌が挙げられる。
本発明の一態様の製造方法において、「ゲル化剤」、「ゲル化促進剤」、「塩素」、「ナトリウム」、「pH」、「果汁」、「甘味料」、「任意成分」、「容器および殺菌」は、上記ゼリー飲料の項目で述べた記載が当てはまり、その数値は上記ゼリー飲料の項目で述べた数値がそのまま当てはまる。
本明細書において、「少なくとも」との文言は、特定の項目の数が、挙げられた数以上であってよいことを意味する。また、本願内において、「約」との文言は、主体が「約」に続く数値の±25%、±10%、±5%、±3%、±2%または±1%の範囲に存在することを意味する。例えば「約10」は、7.5~12.5の範囲を意味する。
以下、実施例を示して本発明を具体的に説明するが、本発明は下記実施例に制限されるものではない。
[実施例1]
〈例1-1~1-9〉
まず、表1に示す原料を、ホモミキサーに投入し、3500rpmの回転数で分散することにより調合液を得た。使用した原料は次のとおりである:グラニュー糖、寒天(三栄源エフ・エフ・アイ株式会社製、「GEL UP J-8037」)、キサンタンガム(CP Kelco社製、「KELTROL ADVANCED PERFORMANCE-F」)、果汁濃縮物、アスコルビン酸、クエン酸三カリウム、フレーバーおよび水(RO水(逆浸透水))。
〈例1-1~1-9〉
まず、表1に示す原料を、ホモミキサーに投入し、3500rpmの回転数で分散することにより調合液を得た。使用した原料は次のとおりである:グラニュー糖、寒天(三栄源エフ・エフ・アイ株式会社製、「GEL UP J-8037」)、キサンタンガム(CP Kelco社製、「KELTROL ADVANCED PERFORMANCE-F」)、果汁濃縮物、アスコルビン酸、クエン酸三カリウム、フレーバーおよび水(RO水(逆浸透水))。
得られた調合液を95~97℃に昇温した後、容器に充填し、密封した。その後、容器に充填密封されたゼリー飲料の転倒殺菌(品温が≧81℃、3分以上保持される条件)を行い、再度35℃以下に静置し、冷却してゲル化させることでゼリー飲料を調製した。
上記手順で得られた容器入りゼリー飲料について、製造数日後のサンプルを各々品温5℃に調整した。各サンプルを専門パネラー3名にて喫食し、「テクスチャー」および「のど越し」についての評価を下記の基準で行った。

〈例2-1~2-9〉
表3に示す原料を、実施例1と同様に、ホモミキサーに投入し、3500rpmの回転数で分散することにより調合液を得た。キサンタンガムの代わりにローカストビーンガム(DANISCO社製、「GRINDSTED LBG 246」)を用いた以外は、実施例1と同じ原料を用いた。得られた調合液を、実施例1と同じ方法でゲル化させることでゼリー飲料を調製した。
上記手順で得られた容器入りゼリー飲料について、製造数日後のサンプルを各々品温5℃に調整した。各サンプルを専門パネラー3名にて喫食し、実施例1と同じ基準で「テクスチャー」および「のど越し」についての評価を行った。その結果を表4に示す。表に示す結果は3名の専門パネラーによる評価の平均値である。また、「テクスチャー」および「のど越し」について得られた結果の平均値から「総合評価」の値を決定した。
[実施例3]
〈例3-1~3-16〉
表5-1と5-2に示す原料を、実施例1と同様に、ホモミキサーに投入し、3500rpmの回転数で分散することにより調合液を得た。ゲル化剤として、寒天とキサンタンガムに加えてローカストビーンガム(DANISCO社製、「GRINDSTED LBG 246」)、カラギーナン(カッパカラギーナン(ゲル強度:1,200g/cm2以上))、コンニャク(グルコマンナン比率:88重量%以上)およびジェランガム(DANISCO社製、「GRINDSTED Gellan Dai 200」)を用いた以外は、実施例1と同じ原料を用いた。得られた調合液を、実施例1と同じ方法でゲル化させることでゼリー飲料を調製した。
〈例3-1~3-16〉
表5-1と5-2に示す原料を、実施例1と同様に、ホモミキサーに投入し、3500rpmの回転数で分散することにより調合液を得た。ゲル化剤として、寒天とキサンタンガムに加えてローカストビーンガム(DANISCO社製、「GRINDSTED LBG 246」)、カラギーナン(カッパカラギーナン(ゲル強度:1,200g/cm2以上))、コンニャク(グルコマンナン比率:88重量%以上)およびジェランガム(DANISCO社製、「GRINDSTED Gellan Dai 200」)を用いた以外は、実施例1と同じ原料を用いた。得られた調合液を、実施例1と同じ方法でゲル化させることでゼリー飲料を調製した。
上記手順で得られた容器入りゼリー飲料について、製造数日後のサンプルを各々品温5℃に調整した。各サンプルを専門パネラー3名にて喫食し、実施例1と同じ基準で「テクスチャー」および「のど越し」についての評価を行った。その結果を表6-1および6-2に示す。表に示す結果は3名の専門パネラーによる評価の平均値である。また、「テクスチャー」および「のど越し」について得られた結果の平均値から「総合評価」の値を決定した。表中、「ゲル化剤A」、「ゲル化剤A-2」および「ゲル化剤A-3」はそれぞれ「カラギーナン」、「寒天」および「コンニャク」を意味し、「ゲル化剤B」、「ゲル化剤B-2」および「ゲル化剤B-3」はそれぞれ「ローカストビーンガム」、「キサンタンガム」および「ジェランガム」を意味する。
[実施例4]
〈例4-1~4-9〉
表7に示す原料を、実施例1と同様に、ホモミキサーに投入し、3500rpmの回転数で分散することにより調合液を得た。寒天の代わりにコンニャク(グルコマンナン比率:88重量%以上)を用いた以外は、実施例1と同じ原料を用いた。得られた調合液を、実施例1と同じ方法でゲル化させることでゼリー飲料を調製した。
〈例4-1~4-9〉
表7に示す原料を、実施例1と同様に、ホモミキサーに投入し、3500rpmの回転数で分散することにより調合液を得た。寒天の代わりにコンニャク(グルコマンナン比率:88重量%以上)を用いた以外は、実施例1と同じ原料を用いた。得られた調合液を、実施例1と同じ方法でゲル化させることでゼリー飲料を調製した。

〈例5-1~5-6〉
表9に示す原料を、実施例1と同様に、ホモミキサーに投入し、3500rpmの回転数で分散することにより調合液を得た。ゲル化剤として寒天とキサンタンガムの代わりにカッパカラギーナン(ゲル強度:1,200g/cm2以上)とローカストビーンガム(DANISCO社製、「GRINDSTED LBG 246」)を用いた以外は、実施例1と同じ原料を用いた。得られた調合液を、実施例1と同じ方法でゲル化させることでゼリー飲料を調製した。

表11に示す原料を、実施例1と同様に、ホモミキサーに投入し、3500rpmの回転数で分散することにより調合液を得た。ゲル化剤として寒天とキサンタンガムの代わりにカラギーナン(ゲル強度:1,200g/cm2以上)とローカストビーンガム(DANISCO社製、「GRINDSTED LBG 246」)を用い、さらに塩化ナトリウムを用いた以外は、実施例1と同じ原料を用いた。得られた調合液を、実施例1と同じ方法でゲル化させることでゼリー飲料を調製した。

- (A)0.7~2.6g/Lの寒天、0.3~2.6g/Lのカラギーナン、および1.6~2.6g/Lのコンニャクからなる群から選択される1種以上のゲル化剤Aを含む、請求項1~3のいずれか一項に記載のゼリー飲料。
- (B)0.7~2.4g/Lのローカストビーンガム、0.6~2.4g/Lのキサンタンガム、および1~2.4g/Lのジェランガム、からなる群から選択される1種以上のゲル化剤Bを含む、請求項1~4のいずれか一項に記載のゼリー飲料。
- 2種以上のゲル化剤Aを含有する、請求項1~5のいずれか一項に記載のゼリー飲料。
- 前記2種以上のゲル化剤Aの合計含有量が1~5g/Lである、請求項6に記載のゼリー飲料。
- 2種以上のゲル化剤Bを含有する、請求項1~7のいずれか一項に記載のゼリー飲料。
- 前記2種以上のゲル化剤Bの合計含有量が1~4g/Lである、請求項8に記載のゼリー飲料。
- pHが3~4.8である、請求項1~9のいずれか一項に記載のゼリー飲料。
- 25%以下の果汁を含む、請求項1~10のいずれか一項に記載のゼリー飲料。
- ナトリウム含有量が150ppm以下である、請求項1~11のいずれか一項に記載のゼリー飲料。
- ゼリー飲料の製造方法であって、
(A)0.3~3.2g/Lの寒天、0.3~3.2g/Lのカラギーナン、および0.3~3.2g/Lのコンニャクからなる群から選択される1種以上のゲル化剤Aと、(B)0.6~3g/Lのローカストビーンガム、0.6~3g/Lのキサンタンガム、および0.6~3g/Lのジェランガムからなる群から選択される1種以上のゲル化剤Bと、(C)クエン酸カリウム、クエン酸カルシウム、またはクエン酸カリウムおよびクエン酸カルシウムと、(D)水とを含み、前記1種以上のゲル化剤Aの総量が0.9~6.4g/Lである混合液を調合することと、
前記混合液を加熱することと、
加熱した前記混合液を冷却することと、を含む方法。
