本発明は、豆類を含有する加熱調理用固形状ペースト組成物(以下、「本発明の固形状ペースト組成物」とも称する。)に関する。
本発明において「加熱調理」とは、一般的に、火やマイクロ波を用いて直接的に、又は、水や空気等の媒体を通じて間接的に、食品に熱を加えることで、食品の温度を上げる調理方法をいい、一般的に、例えば約70℃以上、典型的には80℃~180℃程度の加熱温度で、例えば1分以上60分以内の時間に亘って調理することを表す。調理方法として、例えば、焼く、煮る、炒める、蒸す等を挙げることができるが、これらに限定されない。
本発明において「固形状」とは、加熱調理されてもその形状を保持できる程度の固形性を有することを表し、「ペースト組成物」とは、豆類等の食材を混練して製造した食品組成物を表す。
ロングパスタとは、通常細長いパスタの総称であるが、本発明においては、うどんやそば等も包含する概念である。具体例としては、これらに限定されるものではないが、例えば、スパゲッティ(直径:1.6mm~1.7mm)、スパゲッティーニ(直径:1.4mm~1.5mm)、ヴァーミセリ(直径:2.0mm~2.2mm)、カッペリーニ(直径:0.8mm~1.0mm)、リングイネ(短径1mmほど、長径3mmほど)、タリアテッレ又はフェットチーネ(幅7mm~8mmほどの平麺)、パッパルデッレ(幅10mm~30mmほどの平麺)等が挙げられる。ロングパスタはその組成物同士の接触面積が大きく、なめらかさが失われた結果結着しやすい商品特性を有しやすいため、本発明の固形状ペースト組成物とすることが有用であり好ましい。
ショートパスタとは、通常短いパスタの総称であるが、本発明においては、フレーゴラ(粒状のパスタ)やクスクス等の成型後更に小サイズに加工されたものも包含する概念である。具体例としては、これらに限定されるものではないが、マカロニ(直径が3mm~5mm前後の円筒状)、ペンネ(円筒状の両端をペン先のように斜めにカットしたもの)、ファルファーレ(蝶のような形状)、コンキリエ(貝殻のような形状)、オレッキエッテ(耳のような形状のドーム型)等が挙げられる。
本発明の固形状ペースト組成物は、豆類を含有する。豆類の性状は特に制限されないが、微細化された豆類(微細化豆類)であることが好ましい。本発明において「微細化豆類」とは、超音波処理後の粒子径d90が1900μm以下である豆類をいう。ここでいう微細化豆類には、生地組成物中の微細化豆類が加工に伴ってペースト組成物中において溶融し混然一体となった状態のものも含まれる。本発明の固形状ペースト組成物に含まれる微細化豆類の超音波処理後の粒子径d90は、1500μm以下が好ましく、1000μm以下が更に好ましく、中でも800μm以下、又は600μm以下、又は500μm以下、又は450μm以下、又は400μm以下、又は350μm以下、又は300μm以下、又は250μm以下、又は200μm以下、又は150μm以下、又は100μm以下がより好ましい。また、下限は特に制限されないが、工業上の生産効率という観点から、例えば通常1μm以上、さらには3μm以上である。また、本発明の固形状ペースト組成物に含まれる微細化豆類の超音波処理後の粒子径d50は、1500μm以下が好ましく、1000μm以下が更に好ましく、中でも800μm以下、又は600μm以下、又は500μm以下、又は450μm以下、又は400μm以下、又は350μm以下、又は300μm以下、又は250μm以下、又は200μm以下、又は150μm以下、又は100μm以下がより好ましい。また、下限は特に制限されないが、工業上の生産効率という観点から、例えば通常1μm以上、さらには3μm以上である。ここで、本発明において「粒子径d90」及び「粒子径d50」とは、測定対象の粒子径分布を体積基準で測定し、ある粒子径から2つに分けたとき、大きい側の粒子頻度%の累積値の割合と、小さい側の粒子頻度%の累積値の割合との比が、それぞれ10:90及び50:50となる粒子径として定義される。また、本発明において「超音波処理」とは、特に断りがない限り、周波数40kHzの超音波を出力40Wにて3分間の処理をすることを意味する。なお、超音波処理後の粒子径d90及びd50の測定条件については、後記に従うものとする。
本発明において、超音波処理後の粒子径d90及びd50等の粒子径分布に関する各種パラメータの測定条件は、レーザー回折式粒度分布測定装置を用いて、以下の条件にしたがうものとする。まず、測定時の溶媒は、組成物中の構造に影響を与え難いエタノールを用いる。測定に使用されるレーザー回折式粒度分布測定装置としては、特に制限されるものではないが、例えばマイクロトラック・ベル株式会社のMicrotrac MT3300 EXIIシステムを使用することができる。測定アプリケーションソフトウェアとしては、特に制限されるものではないが、例えばDMS2(Data Management System version2、マイクロトラック・ベル株式会社)を使用することができる。前記の測定装置及びソフトウェアを使用する場合、測定に際しては、同ソフトウェアの洗浄ボタンを押下して洗浄を実施したのち、同ソフトウェアのSet zeroボタンを押下してゼロ合わせを実施し、サンプルローディングでサンプルの濃度が適正範囲内に入るまでサンプルを直接投入すればよい。測定試料は、予め超音波処理を行ったサンプルを投入してもよく、サンプル投入後に前記の測定装置を用いて超音波処理を行い、続いて測定を行ってもよい。後者の場合、超音波処理を行っていないサンプルを投入し、サンプルローディングにて濃度を適正範囲内に調整した後、同ソフトの超音波処理ボタンを押下して超音波処理を行う。その後、3回の脱泡処理を行った上で、再度サンプルローディング処理を行い、濃度が依然として適正範囲であることを確認した後、速やかに流速60%で10秒の測定時間でレーザー回折した結果を測定値とする。測定時のパラメータとしては、例えば分布表示:体積、粒子屈折率:1.60、溶媒屈折率:1.36、測定上限(μm)=2000.00μm、測定下限(μm)=0.021μmとする。
本発明の固形状ペースト組成物は、不溶性食物繊維を含有する。本発明において「不溶性食物繊維」とは、人の消化酵素で消化されない食品中の難消化性成分のうち、水に不溶のものを指す。その定量には、例えば日本食品標準成分表2015年版(七訂)に準じ、プロスキー変法等を用いることができる。
本発明の固形状ペースト組成物は、不溶性食物繊維の含量が多い場合でも、ボソボソとした食感の組成物とならないため有用である。その原因は定かではないが、高温高圧処理により、豆類中のタンパク質と食物繊維がでんぷんと相互作用してネットワーク構造を形成することで、不溶性食物繊維の食感が改善されている可能性がある。
本発明の固形状ペースト組成物は、でんぷんを所定割合以上含有することで、加熱調理後の組成物が結着しにくく、なめらかさが保持されるという本発明の効果が奏される。その原因は定かではないが、豆類中のタンパク質と食物繊維がでんぷんと相互作用してネットワーク構造を形成し、その結果として本発明の効果を奏している可能性がある。
本発明の固形状ペースト組成物は、タンパク質を所定割合以上含有することで、加熱調理されても組成物が結着しにくいという効果が奏される。その原因は定かではないが、豆類中のタンパク質と食物繊維がでんぷんと相互作用してネットワーク構造を形成し、その結果として本発明の効果を奏している可能性がある。
従来の加熱調理用固形状ペースト組成物は、組成物中に油脂を含有させることで結着しにくい品質としているが(例えば前記の特許文献2及び3)、味に影響を与えたり、カロリーを上昇させるため問題があった。一方、本発明の固形状ペースト組成物によれば、油脂の使用量を極微量に抑えたり、或いは油脂を使用したりしなくても、結着しにくい組成物が得られるため有用である。すなわち、本発明の固形状ペースト組成物は、その全油脂分含量が一定値以下であっても、結着しにくい品質となるため好ましい。ここで、本発明において「全油脂分含量」とは、本発明の固形状ペースト組成物の原料に由来する油脂分の総量を意味する。
従来の加熱調理用固形状ペースト組成物のうち、水分含量(乾燥基準含水率)が低い状態のものは、加工工程の圧力、温度等の負荷によって組成物中の細胞組織が破損することから、加熱調理後に本願の課題を強く有し問題となりやすいため、本発明の固形状ペースト組成物は水分含量が一定値以下の組成物において特に有用である。すなわち、本発明の固形状ペースト組成物は、その水分含量が一定値以下であっても、加熱調理後に結着性が抑制された品質となるため好ましい。具体的には、本発明の固形状ペースト組成物中の水分含量(乾燥基準含水率)は、例えば通常50質量%以下、中でも40質量%以下、更には30質量%以下、更には25質量%以下、更には20質量%以下、とりわけ10質量%以下であってもよい。本発明の固形状ペースト組成物中の水分含量の下限は特に制限されないが、工業上の生産効率という観点から、例えば0.5質量%以上、或いは1質量%以上、或いは2質量%以上とすることができる。なお、本発明の固形状ペースト組成物中の水分含量は、組成物の各種成分に由来するものであってもよいが、更に水として添加してもよい。
本発明の固形状ペースト組成物は、液中加熱した場合でもその不溶性成分が組成物外に流出しにくい性質を有することで、加熱調理後の組成物が結着しにくく、なめらかさが保持されるという本発明の効果を奏するため好ましい。斯かる不溶性成分が流出しにくいという性質は、以下に説明する組成物の水中恒温処理水のヘイズ値を指標として判断することができる。例えば、本発明の固形状ペースト組成物1質量部を40質量部の90℃の水中に投入し、90℃で5分間恒温処理した後、当該組成物を投入した水のヘイズ値を測定すればよい。斯かるヘイズ値が所定値以下であることで、加熱調理後の組成物が結着しにくく、なめらかさが保持されるという本発明の効果が奏される。その原因は定かではないが、後述の高温高圧条件で加工された組成物については、組成物表面にでんぷん、タンパク質、食物繊維がネットワーク構造を形成することによって、比較的サイズの大きい組成物を構成する組織が流出することを抑制しているのではないかと推測される。
本発明の固形状ペースト組成物は、その可溶性構成成分(アミロース等)が組成物外に溶出しにくい性質を有することで、なめらかさに加え、更に調理後の組成物が経時的に弾性を失わない特性を有するためより好ましい。斯かる可溶性構成成分が流出しにくいという性質は、以下に説明する組成物を処理したヨウ素液(特に指定が無い限り富士フイルム和光純薬社製「0.5mol/Lよう素溶液」を水で希釈して使用する。)の吸光度に基づいて規定することができる。即ち、組成物(測定に際して事前に表面に付着している粉末等がある場合は組成物表面に傷をつけないように除去したもの)1質量部を、10質量部のヨウ素溶液(0.25mM)に投入し、常温(20℃)で5分間静置後、0.20μmフィルター(Millex-LG、0.20μm親水性ポリテトラフルオロエチレン(PTFE)、13mm)でろ過する。その後、組成物添加前のヨウ素溶液と、組成物添加後のヨウ素溶液のろ液の各々について、通常の分光光度計(例えば島津製作所社製UV-1800)によって光路長10mmの角セルを用いて吸光度(500nm)を測定し、両者の吸光度の差分(組成物添加後のヨウ素溶液のろ液の吸光度-組成物添加前のヨウ素溶液の吸光度、すなわちヨウ素溶液(0.25mM)の吸光度と、10倍量のヨウ素溶液(0.25mM)に当該組成物を20℃で5分間処理し、0.20μmフィルターろ過後のろ液の吸光度(500nm)との差分)を求める。斯かる吸光度の差分が所定値以下であることで、加熱調理後の組成物が経時的に弾性を失わないという効果が奏されるため有用である。その原因は定かではないが、アミロース等の水溶性構成成分が溶出しやすい組成物については、組成物中の植物細胞組織が加工時の温度や圧力(特に高温)によって損傷し、組成物構成成分が経時的に流出することで弾性が失われるためと考えられる。具体的に、前記手法で測定された吸光度の差分は、通常0.35以下、好ましくは0.30以下、より好ましくは0.25以下、更に好ましくは0.20以下である。なお、吸光度の差分の下限値は特に限定されないが、通常は-0.20以上である。特に、組成物の乾燥による細胞組織の損傷を防止し、可溶性成分の流出による弾性低下を防止する観点からは、前述の吸光度差分を規定範囲内に調整した組成物とすることが有用である。
本発明の固形状ペースト組成物は、未変性グルテンを含有しない組成物であってもよい。なお、本発明において「未変性グルテン」とは、100℃以上の高温で処理されていない状態のグルテンを意味する。また、本発明の固形状ペースト組成物は、小麦グルテン(特にコムギグリアジン)を含有しない組成物であってもよく、更にはいずれのグルテンも含有しない組成物であってもよい。特に、後述する本発明の製法を用いる場合には、高温高圧の加工条件を適用するため、小麦等に含有されるグルテンは通常は失活してその働き(特に弾性)を失う。よって、結果として得られる本発明の固形状ペースト組成物は、通常は未変性グルテンを含有しない組成物、又は小麦グルテン(特にコムギグリアジン)を含有しない組成物、又はいずれのグルテンも含有しない組成物となる。なお、本発明において、固形状ペースト組成物中の未変性グルテン及び小麦グルテンの含有量は、例えばバイオメダル社製のGlutenTox ELISA Kit(KT-5196)等を用いて、サンドイッチ法によって測定する。
本発明の固形状ペースト組成物は、任意の1又は2以上の調味料、食品添加物等を含んでいてもよい。調味料、食品添加物等の例としては、醤油、味噌、アルコール類、糖類(例えばブドウ糖、ショ糖、果糖、ブドウ糖果糖液糖、果糖ブドウ糖液糖等)、糖アルコール(例えばキシリトール、エリスリトール、マルチトール等)、人工甘味料(例えばスクラロース、アスパルテーム、サッカリン、アセスルファムK等)、ミネラル(例えばカルシウム、カリウム、ナトリウム、鉄、亜鉛、マグネシウム等、及びこれらの塩類等)、香料、pH調整剤(例えば水酸化ナトリウム、水酸化カリウム、乳酸、クエン酸、酒石酸、リンゴ酸及び酢酸等)、シクロデキストリン、酸化防止剤(例えばビタミンE、ビタミンC、茶抽出物、生コーヒー豆抽出物、クロロゲン酸、香辛料抽出物、カフェ酸、ローズマリー抽出物、ビタミンCパルミテート、ルチン、ケルセチン、ヤマモモ抽出物、ゴマ抽出物等)、乳化剤(例としてはグリセリン脂肪酸エステル、酢酸モノグリセリド、乳酸モノグリセリド、クエン酸モノグリセリド、ジアセチル酒石酸モノグリセリド、コハク酸モノグリセリド、ポリグリセリン脂肪酸エステル、ポリグリセリン縮合リノシール酸エステル、キラヤ抽出物、ダイズサポニン、チャ種子サポニン、ショ糖脂肪酸エステル、レシチン等)、着色料、増粘安定剤等が挙げられる。
本発明の固形状ペースト組成物は、豆類以外に、任意の1又は2以上の食材を含んでいてもよい。斯かる食材の例としては、植物性食材(野菜類、芋類、きのこ類、果実類、藻類、穀類、種実類等)、動物性食材(魚介類、肉類、卵類、乳類等)、微生物性食品等が挙げられる。これら食材の含有量は、本発明の目的を損なわない範囲内で適宜設定することができる。
本発明の固形状ペースト組成物を調製する方法は、特に制限されるものではなく、前記の各種要件を充足する組成物が得られる限りにおいて、任意の手法を用いることができる。具体的には、本発明の固形状ペースト組成物の前記の材料、例えば微細化豆類と、任意により用いられるその他の食材、調味料、及びその他の成分とを混合すればよい。必要に応じて加熱や成型等の処理を加えてもよい。中でも、前記の材料を前記の組成を満たすように混合したペースト生地組成物を、所定の高温加圧条件下で混練した後、膨化しないように降温させる特定の方法(以下適宜「本発明の製造方法」と称する。)を用いることで、本発明の固形状ペースト組成物を効率的に製造することが可能である。
(i)微細化豆類を含有するペースト生地組成物を、不溶性食物繊維、でんぷん、及びタンパク質の各含有量が前記範囲内となるように調整する段階。
(ii)前記段階(i)後の組成物を、所定の高温条件下で混練する段階。
(iii)前記段階(ii)後の組成物温度を、膨化しないように所定の温度未満まで降温させる段階。
(iv)前記段階(iii)後の組成物を、所定値以上の水分含量を維持しつつ、後述の式1を満たすように湿潤処理する段階。
以下、斯かる本発明の製造方法について詳細に説明する。
まず、微細化豆類を含有するペースト生地組成物を調製する。ペースト生地組成物は、本発明の固形状ペースト組成物の前記の材料、例えば微細化豆類と、任意により用いられるその他の食材、調味料、及びその他の成分とを混合した組成物である。この際に、不溶性食物繊維、でんぷん、及びタンパク質の各含有量が前記範囲内となるように調整する。なお、本発明の固形状ペースト組成物の材料、不溶性食物繊維、でんぷん及びタンパク質の具体的態様、好適な態様は、前述したとおりである。
前記段階(i)で得られたペースト生地組成物を、所定の高温条件下で混練する。このように高温条件で混練することで、組成物中の不溶性成分が流出しにくくなる。特に、一定の高温加圧条件下で混練を行うことで、斯かる不溶性成分が流出防止される効果が高められる。その理由は定かではないが、一定の高温条件下、好ましくは高温加圧条件下での処理によって、ペースト生地中のタンパク質、でんぷん、不溶性食物繊維が組成物表面に複合体を形成し、特に不溶性成分の流出を抑えている可能性がある。一方、精製でんぷんを原料として使用した通常の冷麺等は、特に食物繊維をごく僅かしか含有しないため、不溶性成分の溶出が抑えられず、本発明の効果を奏さないと考えられる。
前記段階(ii)後、降温せずに組成物を減圧すると、組成物中の水分が急激に蒸発して組成物が膨化し、好ましくない。従って、高温条件での混練処理後、組成物を膨化しないように降温させる。降温温度は、組成物中の水分の急激な蒸発を防ぐ観点からは、通常110℃未満、好ましくは105℃未満、より好ましくは102℃未満、更に好ましくは100℃未満まで降温すればよい。なお、後述のようにエクストルーダーを用いて段階(ii)及び(iii)を実施する場合には、エクストルーダーの出口温度を調節することにより、本段階(iii)における降温温度を制御することができる。
なお、膨化を防止しつつ降温した後、通常は圧力を大気圧程度まで減圧することにより、本発明の固形状ペースト組成物を得ることができる。
以上説明した本発明の製造方法により、本発明の固形状ペースト組成物を効率的に製造することができるが、前記段階(i)~(iii)、特に高温条件での混練処理(前記段階(ii))及び降温処理(前記段階(iii))については、エクストルーダーを用いることが好ましい。即ち、エクストルーダーを用いて前記の段階(ii)及び段階(iii)を実施すれば、圧力条件は通常は前記の範囲を充足するために管理不要であり、温度条件についても効率的に前記の範囲に調整、維持することが可能である。よって、エクストルーダーを用いることで、本発明の固形状ペースト組成物をより効率的且つ簡便に製造することが可能となる。
前記段階(i)~(iii)を経て得られた組成物を、そのまま本発明の固形状ペースト組成物として用いてもよいが、後処理として、前記段階(iii)後の組成物に対し、湿潤環境下で所定の湿潤処理を行うことが好ましい。具体的に、湿潤処理時の相対湿度(RH)は、通常50RH%超であるが、中でも60RH%超とすることが好ましく、更には70RH%超、又は80RH%超、特に90RH%超とすることがより好ましい。
また、組成物の水分含量を低下させる場合、水分含量低下前に湿潤処理を行ってもよい。なお、水分含量低下後に湿潤処理を行ってもよいが、水分含量低下前に湿潤処理を行う方が本発明の効果がより顕著に奏されるため、好ましい。
また、湿潤処理時の雰囲気温度が所定温度以上であると、雰囲気中の飽和水蒸気量が高まり、同じ相対湿度でも効果がより顕著に奏されるため好ましい。斯かる雰囲気温度は、例えば30℃以上が好ましく、中でも40℃以上が好ましく、50℃以上がより好ましく、60℃以上が更に好ましい。
以上の段階(i)~(iii)、必要により段階(vi)を経ることにより、本発明の固形状ペースト組成物を得ることができるが、更に後処理を加えてもよい。
成型処理としては、例えば固形状ペースト組成物を所望の形態(例えば前述のパスタ、中華麺、うどん、稲庭うどん、きしめん、ほうとう、すいとん、ひやむぎ、素麺、蕎麦、蕎麦がき、ビーフン、フォー、冷麺の麺、春雨、オートミール、クスクス、きりたんぽ、トック、ぎょうざの皮等)に成型する処理等が挙げられる。斯かる成型処理は、当該技術分野において通常知られている方法を適宜採用することができる。例えば、パスタや中華麺等の麺のような細長状組成物とする場合、前述のエクストルーダー等の装置を用いて、組成物を細長形状に押し出し成形すればよい。一方、平板状の組成物とする場合、組成物を平板形状に成形すればよい。更には、組成物をプレス成型したり、平板形状に成形した組成物を切断又は型抜きしたりすることで、細長状、粒状、薄片状等の任意の形状の組成物を得ることもできる。
本発明の加熱調理用固形状ペースト組成物は、これを粉砕して粉砕物の形態としてもよい(以下、これを適宜「本発明の粉砕組成物」という。)。ここで、本発明において「粉砕組成物」とは、d90が50μm以上1000μm以下である粉砕物を意味する。なお、d90は、上記した条件により測定するものとする。
本発明の加熱調理用固形状ペースト組成物は、上記した粉砕組成物を凝集して凝集物の形態としてもよい(以下、これを適宜「本発明の粉砕組成物凝集物」という。)。
本発明の粉砕組成物凝集物の製造方法は、例えば、本発明の粉砕組成物を原料として凝集させればよいが、例えば、前述の粉砕組成物の製造方法において、前記段階(v)後、さらに段階(vi)として段階(v)後の粉砕物を凝集させる工程に供すればよく、必要に応じて段階(vi)の前後に他の工程を有していても構わない。段階(vi)の凝集は、例えば、前記段階(ii)において説明した高温加圧条件での混練処理を実施すればよい。こうして得られる本発明の粉砕組成物凝集体は、CBB被染色部位構造が形成されやすい組成物となるため、加熱調理用固形状ペースト組成物として好適に利用できる。粉砕組成物凝集物の形状は喫食が可能であれば、特に限定されない。
尚、前述のCBB染色とは、特に制限されるものではないが、例えば、CBB溶液(Coomassie Brilliant Blue R250:0.1質量%、メタノール:40質量%、酢酸:10質量%)を用いて染色することが挙げられる。

(8)粉末状の「乾燥レンズ豆」
(9)粉末状の「乾燥紫花豆」
なお、微細化豆類は、本明細書に記載の方法により測定した超音波処理後の粒子径d90がいずれも1900μm以下であった。
[加熱調理用固形状ペースト組成物の調製]
(組成)
粉末状の「乾燥イエローピー」を用いて、表1に記載した条件で加熱調理用固形状ペースト組成物を製造した。なお、実施例9~12においては、組成物中の微細化豆類の乾燥質量割合が75%、50%、30%、15%となるように「小麦粉末」を配合し、また比較例3においては、原料として小麦100%を用いた。
微細化豆類の「超音波処理後d50(μm)」については、レーザー回折式粒度分布測定装置を用いて、以下の条件に従い測定した。測定時の溶媒としてはエタノールを用いた。レーザー回折式粒度分布測定装置としては、マイクロトラック・ベル株式会社のMicrotrac MT3300 EXIIシステムを使用した。測定アプリケーションソフトウェアとしては、DMS2(Data Management System version 2、マイクロトラック・ベル株式会社)を使用した。測定に際しては、同ソフトウェアの洗浄ボタンを押下して洗浄を実施したのち、同ソフトウェアのSet zeroボタンを押下してゼロ合わせを実施し、サンプルローディングでサンプルの濃度が適正範囲内に入るまでサンプルを直接投入した。測定試料は、超音波処理を行っていないサンプルを投入し、サンプルローディングにて濃度を適正範囲内に調整した後、同ソフトの超音波処理ボタンを押下して超音波処理を行った。その後、3回の脱泡処理を行った上で、再度サンプルローディング処理を行い、濃度が依然として適正範囲であることを確認した後、速やかに流速60%で10秒の測定時間でレーザー回折した結果を測定値として採用した。測定時のパラメータとしては、例えば分布表示:体積、粒子屈折率:1.60、溶媒屈折率:1.36、測定上限:2000.00μm、測定下限:0.021μmとした。
微細化豆類(材料)の「アミラーゼ・プロテアーゼ処理後・超音波処理後d90(μm)」については、以下の手順で測定した。即ち、微細化豆類6質量%懸濁液を、0.4容量%プロテアーゼ及び0.02質量%のα-アミラーゼで20℃3日間処理した後、処理後の組成物に超音波処理を行い、その後の粒子径分布(d90)をレーザー回折式粒度分布測定装置にて測定した。より具体的には、微細化豆類300mgを5mLの水と共にプラスチックチューブに入れ、20℃で1時間程度膨潤させた後、小型ヒスコトロンで粥状の物性となるまで処理し(10000rpm、15秒程度)、処理後サンプル2.5mLを分取し、プロテアーゼ(タカラバイオ社製proteinase K)10μL、α-アミラーゼ(Sigma社製α-Amylase from Bacillus subtilis)0.5mgを加え、20℃にて3日反応させた後、処理後組成物に超音波処理を行った上で、粒子径分布(d90)を前述の条件でレーザー回折式粒度分布測定装置を用いて測定した。
加熱加圧に際しては2軸エクストルーダー(サーモフィッシャーサイエンティフィック社製、HAAKE Process11、スクリュー径11mm×2、スクリュー長41cm、セグメント式、同方向回転スクリュー)を使用し、約10g/分のフィード流量で、約3分の処理時間で、表1に記載された条件で行った。
原料投入時の加水量は、対粉末%で計算した(対粉末%とはペースト生地組成物における、原料粉末の乾燥質量に対する水の添加量を表す。例えば「加水量(対粉末%)」50とは、原料粉末1質量部に対して、水0.5質量部添加を表す)。また、最高到達温度はエクストルーダーのバレル中央部(原料投入口と吐出口の中間地点)における温度として測定し、そのエクストルーダーバレル内における滞留時間の過半(さらには非フライトスクリュー部位)において「非加熱(外部加熱なし、サンプル温度概ね30~40℃程度)」、「80℃」、「120℃」、「180℃」となるように加熱条件を調整し、処理時圧力は吐出圧力(出口圧力)が0.1MPa以上となるように加圧条件を調整した。また、押出し口での出口温度は、加圧下で組成物が膨化しない程度の温度(100℃未満)になるように、表1に記載された温度に調整し、その後大気圧下に押し出し成型した。
上記押出し成形した加熱調理用固形状ペースト組成物のうち表1に「常温乾燥の有無」の「有」、「冷蔵乾燥の有無」の「有」と記載されたものについては、表1に記載された条件で、水分含量20質量%以下かつ水分活性値が0.85以下となるまで通風乾燥した(「冷蔵乾燥」は雰囲気温度4℃にて、「常温乾燥」は雰囲気温度20℃にて、16時間程度の通風乾燥である。また「40℃乾燥」は雰囲気温度40℃にて、24時間程度の通風乾燥である)。
実施例1~37及び比較例1~7で得られた加熱調理用固形状ペースト組成物について、下記の分析及び官能評価を行った。
各組成物1質量部を、40質量部の水(90℃)中に投入し、90℃、5分間恒温処理後の水を採取し、そのヘイズ値を測定した。ヘイズ値の測定は積分球式光電光度法による濁度測定器(WA6000T(日本電色工業株式会社製))を用いて、20℃に調整したサンプルを、光路長5mmの石英セルに入れ、蒸留水を対照とした透過測定によって、定法に従って測定した。また測定時の水の外観についてコメントを記載した。
上記のように調製した各組成物(事前に表面に付着している粉末等を組成物表面に傷をつけないようにハケで除去した)1質量部を、10質量部の希釈ヨウ素溶液(0.25mM)に投入し、常温(20℃)で5分間静置後、0.20μmフィルター(Millex-LG、0.20μm親水性ポリテトラフルオロエチレン(PTFE)、13mm)でろ過した。次いで、希釈ヨウ素溶液(0.25mM)の吸光度(500nm)と、ろ液の吸光度(500nm)を、光路長10mm角セルを用いて分光光度計(島津製作所社製UV-1800)により測定した。そして、得られた吸光度から、両者の差分(組成物添加後のヨウ素溶液のろ液の吸光度-組成物添加前のヨウ素溶液の吸光度)を求めた。また測定時の希釈ヨウ素液への組成物からの成分流出状況についてコメントを記載した。
上記のように調製した各組成物1質量部と、比較対象として市販のパスタ(ママースパゲティ1.4mm)とを、10質量部の水中で90℃、5分間加熱調理したものについて、官能評価を行った。具体的には、加熱調理後の組成物を紙皿に静置し、常温(20℃)で10分間静置した。その後、訓練された官能検査員10名が料理を試食前の物性、喫食時の食味について「保管後の弾性低下」、「結着性」、「喫食による評価」について下記の基準で評価を行った。そして、官能検査員10名の評点の平均値を算出し、小数第1位を四捨五入して最終評点とした。
常温静置前(加熱調理直後)の組成物品質との比較で、下記の5段階で評価した。
5:保管前後で弾性が低下しない
4:保管前後で弾性があまり低下しない
3:保管前後で弾性がやや低下するが、品質として問題がないレベル
2:保管前後で弾性が低下する
1:保管前後で弾性が大きく低下する
常温(20℃)で10分間静置後の組成物について、10本程度の組成物を持ち上げた際の組成物同士の結着しやすさを下記の5段階で評価した。また、評価時の組成物の切れやすさについて、コメントを記載した。
5:組成物同士が結着していない
4:組成物同士が一部で結着する
3:組成物同士が半数程度結着する
2:組成物同士が大半で結着する
1:組成物同士がほぼ全て結着する
常温(20℃)で10分間静置後の組成物について、市販のパスタの食感と比して組成物の食感を下記の5段階で評価した。
5:市販のパスタより、なめらかに感じられ、優れる
4:市販のパスタより、ややなめらかに感じられ、やや優れる
3:市販のパスタと、なめらかさが同程度である
2:市販のパスタより、ややなめらかさが感じにくく、やや劣る
1:市販のパスタより、なめらかさが感じられず、劣る
A)五味(甘味:砂糖の味、酸味:酒石酸の味、旨み:グルタミン酸ナトリウムの味、塩味:塩化ナトリウムの味、苦味:カフェインの味)について、各成分の閾値に近い濃度の水溶液を各1つずつ作製し、これに蒸留水2つを加えた計7つのサンプルから、それぞれの味のサンプルを正確に識別する味質識別試験。
B)濃度がわずかに異なる5種類の食塩水溶液、酢酸水溶液の濃度差を正確に識別する濃度差識別試験。
C)メーカーA社醤油2つにメーカーB社醤油1つの計3つのサンプルからB社醤油を正確に識別する3点識別試験。
また、前記の何れの評価項目でも、事前に検査員全員で標準サンプルの評価を行い、評価基準の各スコアについて標準化を行った上で、10名によって客観性のある官能検査を行った。各評価項目の評価は、各項目の5段階の評点の中から、各検査員が自らの評価と最も近い数字をどれか一つ選択する方式で評価した。評価結果の集計は、10名のスコアの算術平均値から算出し、更にパネラー間のばらつきを評価するために標準偏差を算出した。
実施例1~12及び比較例1~3で得られた加熱調理用固形状ペースト組成物の分析及び官能評価の結果を下記の表2-1及び表2-2に示す。
乾燥イエローピーの代わりに、乾燥シロエンドウマメ、乾燥緑豆、乾燥グリーンピース、乾燥ブルーピー、乾燥ヒヨコマメ、乾燥インゲンマメ、乾燥レンズ豆、又は乾燥紫花豆を用い、下記の表3-1及び表3-2に記載した条件で、表3-1及び表3-2に示す形状に加工して加熱調理用固形状ペースト組成物を製造した。製造条件の詳細は前記Iにおいて説明したとおりである。
Claims (39)
- 下記(1)から(4)を全て充足する、豆類を含有する加熱調理用固形状ペースト組成物。
(1)不溶性食物繊維を乾燥質量換算で3質量%以上含有する。
(2)でんぷんを乾燥質量換算で10質量%以上含有する。
(3)タンパク質を乾燥質量換算で4質量%以上含有する。
(4)90℃、40倍量の水中で当該組成物を5分間恒温処理した後の水のヘイズ値が25%以下である。 - さらに下記(5)を充足する、請求項1に記載の組成物。
(5)ヨウ素溶液(0.25mM)の吸光度と、10倍量のヨウ素溶液(0.25mM)に当該組成物を20℃で5分間処理し、0.20μmフィルターろ過後のろ液の吸光度(500nm)との差分が0.35以下である。 - さらに下記(6)を充足する、請求項1又は2に記載の組成物。
(6)全油脂分含量が乾燥質量換算で17質量%未満である。 - さらに下記(7)を充足する、請求項1~3のいずれか1項に記載の組成物。
(7)乾燥基準含水率が50質量%以下である。 - 未変性グルテンを含有しない、請求項1~4のいずれか1項に記載の組成物。
- 下記処理Aを加えた後の組成物について超音波処理をした場合における粒子径分布d90が1000μm以下である、請求項1~5のいずれか1項に記載の組成物。
[処理A]
組成物6質量%の水懸濁液を、0.4容量%のプロテアーゼ及び0.02質量%のα-アミラーゼによって、20℃で3日間処理する。 - 組成物全体のでんぷんに対する豆類に由来するでんぷんの比率が、乾燥質量換算で10質量%以上である、請求項1~6のいずれか1項に記載の組成物。
- 前記豆類が、エンドウ属、インゲンマメ属、キマメ属、ササゲ属、ソラマメ属、ヒヨコマメ属、及びヒラマメ属から選ばれる1種以上の豆類を原料とするものである、請求項1~7のいずれか1項に記載の組成物。
- 請求項1~8のいずれか1項に記載の組成物を粉砕してなる、粉砕組成物。
- 請求項9に記載の粉砕組成物を凝集してなる、粉砕組成物凝集体。
- 下記の段階(i)から(iii)を含む、豆類を含有する加熱調理用固形状ペースト組成物の製造方法。
(i)微細化豆類を含有するペースト生地組成物を、不溶性食物繊維の含有量が乾燥質量換算で3質量%以上、でんぷんの含有量が乾燥質量換算で10質量%以上、タンパク質の含有量が乾燥質量換算で4質量%以上となるように調整する段階。
(ii)前記段階(i)後の組成物を、温度100℃以上200℃以下で混練する段階。
(iii)前記段階(ii)後の組成物温度を、組成物が膨化しない温度まで低下させる段階。 - 前記段階(iii)後に、さらに(iv)の段階を含む、請求項11に記載の製造方法。
(iv)前記段階(iii)後の組成物を、雰囲気の相対湿度(RH%)が50RH%超の環境下で湿潤処理する段階。 - 前記段階(iv)の湿潤処理を、下記の式1を満たす条件下で行う、請求項12に記載の製造方法。
A×T≧40 (式1)
〔式中、Aは、雰囲気の相対湿度(RH%)を示し、Tは、湿潤処理時間(hr)を示す。但し、A>50RH%である。〕 - 前記段階(ii)及び/又は前記段階(iii)を加圧条件下で行う、請求項11~13のいずれか1項に記載の製造方法。
- 前記加圧条件が0.1MPa以上の圧力を印加する条件である、請求項14に記載の製造方法。
- 前記段階(i)における微細化豆類が、下記処理Aを加えた後に超音波処理をした場合における粒子径分布d90が1000μm以下の微細化豆類である、請求項11~15のいずれか1項に記載の製造方法。
[処理A]
微細化豆類6質量%の水懸濁液を、0.4容量%のプロテアーゼ及び0.02質量%のα-アミラーゼによって、20℃で3日間処理する。 - 前記段階(ii)の混練を比力学的エネルギー(SME)値350kJ/kg以上の条件下で行う、請求項11~16のいずれか1項に記載の製造方法。
- 前記段階(ii)及び/又は前記段階(iii)を、エクストルーダーを用いて行う、請求項11~17のいずれか1項に記載の製造方法。
- 前記エクストルーダーが1軸エクストルーダー又は2軸エクストルーダーである、請求項18に記載の製造方法。
- 前記エクストルーダーのバレル全長に対するフライトスクリュー部位長の比率が95%以下である、請求項18又は19に記載の製造方法。
- 前記段階(ii)の混練時間が0.1分間以上60分間以内である、請求項11~20のいずれか1項に記載の製造方法。
- 前記段階(iii)における降温温度が、95℃以下である、請求項11~21のいずれか1項に記載の製造方法。
- 前記段階(iii)後、さらに下記の(v)の段階を含む、請求項11~22のいずれか1項に記載の製造方法。
(v)前記組成物を粉砕し、粉砕組成物とする段階。 - 前記段階(v)後、さらに下記の(vi)の段階を含む、請求項23に記載の製造方法。
(vi)前記粉砕組成物を凝集させて、粉砕組成物凝集体とする段階。 - 請求項11~24のいずれか1項に記載の製造方法により製造される加熱調理用固形状ペースト組成物。
- 下記の段階(i)から(iii)を含む、豆類を含有する加熱調理用固形状ペースト組成物の品質改善方法。
(i)微細化豆類を含有するペースト生地組成物を、不溶性食物繊維の含有率が乾燥質量換算で3質量%以上、でんぷんの含有率が乾燥質量換算で10質量%以上、タンパク質の含有率が乾燥質量換算で4質量%以上となるように調整する段階。
(ii)前記段階(i)後の組成物を、温度100℃以上200℃以下で混練する段階。
(iii)前記段階(ii)後の組成物温度を、組成物が膨化しない温度まで低下させる段階。 - 前記段階(iii)後に、さらに(iv)の段階を含む、請求項26に記載の方法。
(iv)前記段階(iii)後の組成物を、雰囲気の相対湿度(RH%)が50RH%超の環境下で湿潤処理する段階。 - 前記段階(iv)の湿潤処理を、下記の式1を満たす条件下で行う、請求項27に記載の方法。

- 前記品質改善が、前記組成物の加熱調理後における、結着及び/又は弾性低下の抑制である、請求項26~37のいずれか1項に記載の方法。
- 請求項26~38のいずれか1項に記載の方法により品質が改善されてなる加熱調理用固形状ペースト組成物。
