Thanks to the invention and particularly to the perforations of the film 7, the modified atmosphere may diffuse in both chambers 8, 9 and circulate around the piece of meat 14. The fluid chamber 9 being empty of solid material, the modified atmosphere is not polluted.
  • the perforations 15 of the film 7 are designed for liquid circulation. Some of the perforations could be micro-perforations used for gas circulation only and too small for liquid circulation. In any case, the film 7 should be designed for the modified atmosphere to be able to envelop the piece of food 14 and be in contact with the underside of the food product.

Abstract

Cette barquette est destinée à des aliments exsudant du liquide et sensibles à l'oxygène (14). Elle comprend un compartiment à aliments (8), un compartiment à liquide (9), ainsi qu'une paroi de séparation perforée (7) située entre ces deux compartiments (8, 9) pour le support des aliments (14). Cette barquette est remplie d'une atmosphère modifiée qui enveloppe les aliments (14) grâce aux perforations (15) de la paroi de séparation perforée (7). La paroi de séparation (7) obture les deux compartiments (8, 9) et le compartiment à liquide (9) est vide de matériau de libération de gaz. Grâce à l'invention, l'atmosphère modifiée n'est pas polluée. L'écoulement du liquide exsudé d'un compartiment à l'autre est très lent.
