Description

クリーム類及びその製造方法
 本発明は、クリーム類及びその製造方法に関する。
 乳及び乳製品の成分規格等に関する省令において、「クリーム」とは、生乳、牛乳又は特別牛乳から乳脂肪分以外の成分を除去したものとして規定され、その成分規格として、乳脂肪分が18.0%以上、酸度が0.20%以下であることが規定されている。
 一般に、クリームは、長期保存できるように、高温で加熱処理(例えば、130~140℃、2~4秒間)されている。しかし、この加熱処理によって、クリームの栄養成分が酸化、変性、劣化などし、風味が著しく劣化や散逸することがある。
 このような栄養成分の酸化、変性、劣化、風味の劣化や散逸という問題への対応策として、乳原料の溶存酸素濃度を低減してから加熱処理し、加熱処理によって生じる硫黄化合物(ジメチルジサルファイド)の生成量を低減させる方法が提案されている(特許文献1~3)。
 この時、溶存酸素濃度を低減する従来技術の一つとして、窒素ガス等の不活性ガスと原料を激しく混合する方法が提案されている(特許文献4)。ただし、この場合、不活性ガスを投入する付加的な気体混合装置が必要になり、不活性ガス投入時に多量の発泡を伴うため、気泡による製造上の不具合を防止するための付加的な消泡装置が必要になる。このため、その設備の複雑化や窒素ガスの使用などに伴う費用が発生し、製造費の高騰などへの対策も必要になる。
 前述した他にも、クリームの風味、物性、熱安定性などを向上させる目的で、様々な技術が検討や提案されている(特許文献5~13)。ただし、いずれの場合にも、乳原料の成分を調整した後に、加熱処理を必須とする方法が採用されている。

 本発明は、加熱処理に伴って生じる栄養成分の酸化、変性、劣化などと、特に、風味の劣化や散逸を抑制できるクリーム類の製造方法と、この製造方法によって製造したクリーム類を提供することを目的にしている。さらに、この製造方法によって製造したクリーム類から製造したバター、バターミルクなどを提供することも目的にしている。

 本発明によれば、加熱処理に伴って生じる栄養成分の酸化、変性、劣化や、風味の劣化や散逸を抑制できるクリーム類の製造方法と、この製造方法によって製造したクリーム類を提供することができる。さらに、この製造方法によって製造したクリーム類から製造したバター、バターミルク、バターミルクパウダーを提供することができる。

 本発明のクリーム類の製造方法は、クリーム類の原料(原料乳)に対して加熱処理した後に、遠心分離処理して、クリームを分離し、当該分離したクリームに対して成分調整処理する工程を備えているものである。また、クリーム類の原料に対して加熱処理した後に、遠心分離処理して、クリームを分離する工程を備えているものである。
 ここで、従来の一般的なクリーム類の製造方法では、クリーム類の原料に対して遠心分離処理して、クリーム類及び脱脂乳を分離し、当該分離したクリーム類及び/又は脱脂乳に対して成分調整処理した後に加熱処理(殺菌、滅菌など)していた。
 これに対して、本発明では、クリーム類の原料に対して加熱処理した後に、遠心分離処理して、クリーム類及び脱脂乳を分離し、当該分離したクリーム類に対して、必要に応じて、成分調整処理するように変更している。なお、必要に応じて、さらに加熱処理(殺菌、滅菌など)するようにしてもよい。
 すなわち、従来の一般的なクリーム類の製造方法では、クリーム類の原料に対して加熱処理する前に、遠心分離処理して、遠心分離処理した後のクリーム類に対して、必要に応じて、遠心分離処理した後の脱脂乳を添加(配合)するなどして成分調整処理した後に、加熱処理していた。
 これに対して、本発明では、クリーム類の原料に対して遠心分離処理する前に、加熱処理して、加熱処理した後のクリーム類の原料に対して遠心分離処理した後に、遠心分離処理した後のクリーム類に対して、必要に応じて、遠心分離処理した後の脱脂乳を添加(配合)するなどして成分調整処理するように変更している。なお、この後、必要に応じて、さらに加熱処理するようにしてもよい。
 従来の一般的なクリーム類の製造方法では、加熱生成物による問題を抑制する目的として、原料乳の溶存酸素濃度を低減する追加の製造工程や製造設備などが採用されていた。
 これに対して、本発明では、加熱生成物による問題を抑制する目的としての、原料乳の溶存酸素濃度を低減する追加の製造工程や製造設備などが不要になる。
 これにより、本発明では、従来のクリーム類の製造方法に比較して、特別な製造工程の省略・簡略化や、特別な製造設備の導入費・運転費の削減・低減が可能になる。そして、本発明では、生乳(牛乳)よりも泡立ちやすく消泡しにくい、乳脂肪の含有量が多いクリーム類(生クリームなど)などを製造する場合に特に有効である。
 本発明において「クリーム類」とは、例えば、乳等省令(乳及び乳製品の成分規格等に関する省令)において「クリーム」と定められている規格に該当するものである。具体的には、生乳、牛乳などから乳脂肪分以外の成分を除去して製造されるものの他、還元クリーム、コンパウンドクリーム、合成クリームなどが含まれる。
 還元クリームとしては、例えば、本発明のバターや本発明のクリーム類から得られたバターオイルなどに由来する乳脂肪分に、本発明のクリーム類の製造方法から得られる脱脂乳から得られた脱脂粉乳などの無脂乳固形分、乳化剤、水などを添加して製造した還元クリームなどが含まれる。
 コンパウンドクリームとしては、例えば、前記の乳脂肪分と植物性脂肪分に、前記の脱脂粉乳などの無脂乳固形分、乳化剤、安定剤、水などを添加して製造したコンパウンドクリームなどが含まれる。
 合成クリームとしては、例えば、植物性脂肪分に、前記の脱脂乳などの無脂乳固形分、乳由来以外のタンパク質、乳化剤、安定剤、水などを添加して製造した合成クリームなどが含まれる。
 本発明において「クリーム類の原料」には、生乳、牛乳、特別牛乳だけでなく、以下に例示するものなどが含まれる。
 ・乳脂肪分に、脱脂粉乳などの無脂乳固形分、乳化剤、水などを添加したもの
 ・還元クリーム、乳脂肪分と植物性脂肪分に、脱脂粉乳などの無脂乳固形分、乳化剤、安定剤、水などを添加したもの
 ・植物性脂肪分に、脱脂乳などの無脂乳固形分、乳由来以外のタンパク質、乳化剤、安定剤、水などを添加したもの
 本発明において「成分」とは、一般的に乳飲料や乳製品に含まれる成分が含まれ、具体的には、水分、乳脂肪、無脂乳固形分(タンパク質、乳糖などの糖質、ナトリウム、カリウム、マグネシウム、カルシウム、リンなどのミネラル、ビタミンなど)などが挙げられる。
 本発明において「成分調整処理」とは、クリーム類、バター、バターミルクなどの最終製品の組成や品質などを所定の範囲や条件で管理することをいう。各種の原料・素材・中間製品を所定の組成で混合(添加、配合)するなどして、特定の混合処理などによって「成分」の濃度を調整する操作に限定されず、最終製品の組成や品質などを連続的や断続的(定期的など)に評価(分析)して管理するだけの操作が含まれる。
 ここで、例えば、「成分調整処理」の操作には、例えば、以下に例示する操作などが含まれる。
 ・原料乳などを遠心分離処理や膜分離処理するなどして、ここで分離した脱脂乳などの無脂乳固形分を、ここで分離して得られたクリームに混合(添加、配合)するなどして、最終製品や中間製品の乳脂肪や無脂乳固形分を所定の濃度に調整する操作
 ・本発明のバターや本発明のクリーム類から得られたバターオイルなどに由来する乳脂肪分に、本発明のクリーム類の製造方法から得られる脱脂乳から得られた脱脂粉乳などの無脂乳固形分、乳化剤、水などを添加して、還元クリームを製造する操作
 ・乳脂肪分と植物性脂肪分に、前記の脱脂粉乳などの無脂乳固形分、乳化剤、安定剤、水などを添加して、コンパウンドクリームを製造する操作
 ・植物性脂肪分に、前記の脱脂乳などの無脂乳固形分、乳由来以外のタンパク質、乳化剤、安定剤、水などを添加して、合成クリームを製造する操作
 ・原料乳などを膜分離処理するなどして、ここで分離したタンパク質、糖質、ミネラル、ビタミンを中間製品に添加して、最終製品や中間製品のタンパク質、糖質、ミネラル、ビタミンを所定の濃度に調整する操作
 ・減圧処理、加熱処理、凍結処理するなどして、最終製品や中間製品の水分を所定の濃度に調整する操作
 ・乳成分の原料の他の原料を中間製品に添加して、特定の成分を所定の濃度に調整する操作
 前述した通り、本発明において「成分調整処理」の操作は、特に限定されないが、クリーム類の風味の観点から、クリーム類の原料(原料乳)の遠心分離処理によって、クリームを脱脂乳と分離し、この得られたクリームに脱脂乳を添加(配合)して、クリーム類の乳脂肪や無脂乳固形分を所定の濃度に調整する操作が好ましい。また、乳及び乳製品の成分規格等に関する省令において「クリーム」と定められている成分規格(乳脂肪分:18.0%以上、酸度:0.20%以下)に適合するように、この得られたクリーム類の乳脂肪を所定の濃度に調整する操作がより好ましい。
 本発明において「遠心分離処理」とは、例えば、クリームと脱脂乳の適切な分離を目的として、二つ以上の成分の密度差を利用し、遠心力を駆動力として、当該二つ以上の成分を分離や分画する方法と定義される。
 本発明において「遠心分離処理」の装置とは、例えば、卓上型の遠心分離機、連続式の分離版型の遠心分離機(例えば、クリームセパレーター、クラリファイヤーなど)、超遠心分離機、デカンターなどが挙げられる。そして、本発明において、商業的な製造の利便性の観点から、連続式の分離版型の遠心分離機、超遠心分離機を用いることが好ましく、連続式の分離版型の遠心分離機を用いることがより好ましい。また、加熱生成物を効率的かつ衛生的に分離しやすく、風味や品質の良好なクリーム類を調製できる観点から、クリームセパレーターやクラリファイヤーを用いることがさらに好ましく、クリームセパレーターを用いることが特に好ましい。
 なお、本発明において「遠心分離処理」の運転には、連続式の分離版型の遠心分離機(例えば、クリームセパレーター、クラリファイヤーなど)、超遠心分離機などで、クリームや脱脂乳を製造する場合に用いられる通常の操作条件(機器の寸法、回転数(遠心力)、温度、流量(滞留時間)など)を適用すれば良い。
 このとき、本発明において「遠心分離処理」の操作条件(温度条件)では、遠心分離処理の効率を良くする観点からは、45℃以上の加温処理を含んでいれば特に制限されないが、45~75℃が好ましく、50~70℃がより好ましく、55~65℃がさらに好ましい。
 一方、加熱による製品の品質の低下を防ぐ観点からは、低温での実施が好ましく、具体的には、0~20℃が好ましく、5~15℃がより好ましく、8~10℃がさらに好ましい。
 本発明において「加熱処理」とは、例えば、殺菌、滅菌、中間製品や最終製品の長期保存などを目的として、クリーム類の原料や中間製品などを加熱することである。
 このとき、本発明において「加熱処理」の操作条件では、90℃以上の高温処理に相当すれば特に制限されないが、90~99℃、10~120秒間または、100~150℃、1~20秒間が好ましく、92~99℃、10~90秒間または、110~145℃、1~15秒間がより好ましく、94~99℃、10~60秒間または、120~140℃、1~10秒間がさらに好ましい。
 本発明では、前述したように、クリーム類の原料や中間製品などを加熱処理(高温処理)しても、その直後に遠心分離処理して、クリームを分離し、当該分離したクリームに対して、必要に応じて成分調整処理する。そこで、加熱処理に伴って生じる栄養成分の酸化、変性、劣化などを抑制や防止できることとなる。特に、風味の劣化や散逸などを抑制や防止できることとなる。
 なお、ここで、「直後」とは、例えば、前の処理の終了時から30分以内に次の処理を実施し始めることをいい、好ましくは、前の処理の終了時から15分以内に次の処理を実施し、より好ましくは、前の処理の終了時から10分以内に次の処理を実施するものである。
 従来のクリーム類の製造方法では、乳脂肪の含有量が多いクリーム類(生クリームなど)などの場合、加熱生成物による問題を抑制する目的として、クリーム類の原料(生クリームなど)の溶存酸素濃度を低減させてから加熱処理するため、この原料に窒素ガスなどの不活性ガスを混合させる追加の製造工程や製造設備が必要となる。
 これに対して、本発明では、前述したように、クリーム類の原料の溶存酸素濃度を低減させる追加の製造工程や製造設備と、この原料を消泡などする追加の製造工程や製造設備が不要になる。
 これにより、本発明では、従来のクリーム類の製造方法に比較して、特別な製造工程の省略・簡略化や、特別な製造設備の導入費・運転費の削減・低減が可能になる。そして、本発明では、生乳(牛乳)よりも泡立ちやすく消泡しにくい、乳脂肪の含有量が多いクリーム類(生クリームなど)などを製造する場合に特に有効である。
 本発明では、遠心分離処理工程を経る前の原料乳などが加熱処理工程を経ることとなり、その後に、遠心分離処理工程と、成分調整処理工程を経ることになる。
 そこで、本発明では、前述したように、加熱処理に伴って生じるクリーム類の本来の乳風味などを損なう臭い(加熱臭、還元臭など)や、乳原料に由来する独特な臭い(飼料臭、牧草臭など)を低減して、風味を改善や向上させたクリーム類を提供できるようになる。
 本発明では、例えば、クリーム類の風味を損なう独特な臭いが強い乳原料を使用する場合、その風味を損なう独特な臭いを低減させるための工程として特に効果的に使用することができる。
 本発明のバターの製造方法は、クリーム類の原料(原料乳)に対して加熱処理した後に、遠心分離処理して、クリームを分離し、当該分離したクリームに対して成分調整処理して得られる、本発明のクリーム類に対してチャーニング処理し、バター粒とバターミルクに分離した後に、当該分離したバター粒をワーキング処理するものである。
 本発明において「チャーニング処理」とは、乳原料から分離して得られたクリームを激しく撹拌する操作であり、チャーニング処理により、クリームの脂肪球の乳化の状態を破壊して、脂肪を凝集させ、バター粒を形成させる技術である。つまり、チャーニング処理により、クリームは乳脂肪の凝集物であるバター粒と、それ以外の液体成分であるバターミルクに分離される。
 このとき、チャーニング処理に用いる加工装置は、特に限定されないが、例えば、チャーンが用いられ、バッチ式の加工装置、連続式の加工装置などがある。なお、バターあるいはバターミルクを商業的に大量生産する観点では、連続式の加工装置を用いることが好ましい。
 本発明において「バター粒とバターミルクの分離」の操作は、特に限定されないが、例えば、メッシュフィルター処理、遠心分離処理(デカンター処理など)などを用いることができる。
 このとき、バター粒とバターミルクを分離した後に、バターミルクより1~2℃程度の低い水温で、バター粒を水洗することが好ましい。このように、バター粒を水洗することで、バター粒に残存する余分なバターミルクを除去し、一般的なバターにとって余分な風味成分を除去すると共に、バター粒の硬さを調節することができる。
 本発明において「ワーキング処理」とは、バター粒を練り合わせる操作であり、ワーキング処理により、バター粒の水分、塩分、脂肪の結晶を均一に分散させ、バターの組織構造を滑らかで良質な状態に調整する技術である。つまり、ワーキング処理により、バター粒の余分な水分は排出され、バター粒の必要な水分は微細な水滴となって、バターに均一に分散される。
 このとき、ワーキング処理に用いる加工装置は、特に限定されないが、バッチ式の加工装置、連続式の加工装置などがある。なお、バターを商業的に大量生産する観点では、連続式の加工装置を用いることが好ましい。
 本発明のバターミルクの製造方法は、クリーム類の原料(原料乳)に対して加熱処理した後に、遠心分離処理して、クリームを分離し、当該分離したクリームに対して成分調整処理して得られる、本発明のクリーム類に対してチャーニング処理し、バター粒とバターミルクに分離するものである。
 本発明のバターミルクパウダーの製造方法は、本発明のクリーム類に対してチャーニング処理し、バター粒とバターミルクに分離して得られる、本発明のバターミルクに対して濃縮処理した後に、乾燥処理するものである。
 本発明において「濃縮処理」の操作は、特に限定されないが、例えば、膜分離処理、減圧濃縮(真空蒸発濃縮)処理、凍結濃縮処理などが挙げられる。
 このとき、本発明において「濃縮処理」は、栄養成分の酸化、変性、劣化などが起こりにくく、栄養成分の組成や濃度を適度に変えられる観点では、膜分離処理を用いることが好ましい。栄養成分の組成(割合)を変えずに、所定時間で効率的に処理する観点では、減圧濃縮(真空蒸発濃縮)処理が好ましい。栄養成分の酸化、変性、劣化などが起こりにくく、栄養成分の組成(割合)を変えない観点では、凍結濃縮処理が好ましい。
 本発明において「乾燥処理」の操作は、特に限定されないが、例えば、噴霧乾燥処理、減圧乾燥(真空蒸発乾燥)処理、凍結乾燥処理などが挙げられる。
 このとき、本発明において「乾燥処理」は、所定時間で効率的に処理する観点では、噴霧乾燥処理を用いることが好ましく、栄養成分の酸化、変性、劣化などが起こりにくい観点では、減圧乾燥(真空蒸発乾燥)処理、凍結乾燥処理を用いることが好ましい。
 本発明の製造方法を用いることで、風味の良好なクリーム類、バター、バターミルク、バターミルクパウダーを得ることができる。
 このとき、これらの風味は、例えば、対象となる試料の香気成分濃度を測定することで評価することができる。
 実際に測定する香気成分は、クリーム類、バター、バターミルク、バターミルクパウダーに特徴的な香気成分であれば、特に限定されないが、乳成分の加熱臭や乳脂肪の劣化臭の原因として公知である観点から、メチルケトン類(2-Pentanone、2-Heptanone、2-Nonanoneなど)、フラン類(Furfuralなど)、メタンチオール(Methanethiol)などの硫黄化合物類であることが好ましい。
 クリーム類のメチルケトン類、フラン類、メタンチオールと、バター、バターミルクのメチルケトン類(2-Heptanone)は、例えば、GC/MS法などの公知の方法で精度良く測定することができる。
 本発明において、クリーム類などの風味は、例えば、本発明で得たクリーム類など(本発明品)の試料と、従来の製造方法で得たクリーム類など(従来品)の試料の香気成分濃度を比較することで評価することができる。そして、実際の製造から冷蔵(例えば、0℃以上10℃以下)で保存して所定日数が経過した試料を測定することで詳細に評価することができる。
 クリーム類の製造直後から冷蔵(例えば、0℃以上10℃以下)で保存して2日後の香気成分濃度の場合、前述した特徴的な香気成分については、従来品として比較して、以下のように低減されていることが好ましく、本発明の製造方法によれば、これらを満たすことができる。
 2-Pentanone 濃度に関しては、本発明品では、従来品と比較して50%以上で低減されることが好ましく、55%以上で低減されることがより好ましく、60%以上で低減されることがさらに好ましく、65%以上で低減されることがとくに好ましい。
 2-Heptanone 濃度に関しては、本発明品では、従来品と比較して40%以上で低減されることが好ましく、45%以上で低減されることがより好ましく、50%以上で低減されることがさらに好ましく、55%以上で低減されることがとくに好ましい。
 2-Nonanone 濃度に関しては、本発明品では、従来品と比較して40%以上で低減されることが好ましく、45%以上で低減されることがより好ましく、50%以上で低減されることがさらに好ましく、55%以上で低減されることがとくに好ましい。
 Furfural 濃度に関しては、本発明品では、従来品と比較して30%以上で低減されることが好ましく、35%以上で低減されることがより好ましく、40%以上で低減されることがさらに好ましく、45%以上で低減されることがとくに好ましい。
 メタンチオール濃度に関しては、本発明品では、従来品と比較して5%以上で低減されることが好ましく、6%以上で低減されることがより好ましく、7%以上で低減されることがさらに好ましく、8%以上で低減されることがとくに好ましい。
 すなわち、クリーム類の製造直後から冷蔵(例えば、0℃以上10℃以下)で保存して2日後の香気成分濃度の場合、本発明により、従来の一般的なクリームと比較して、2-Pentanone 濃度が好ましくは50%以上で低減され、より好ましくは55%以上で低減され、さらに好ましくは60%以上で低減され、とくに好ましくは65%以上で低減されたクリームを製造することができる。また、本発明により、従来の一般的なクリームと比較して、2-Heptanone 濃度が好ましくは40%以上で低減され、より好ましくは45%以上で低減され、さらに好ましくは50%以上で低減され、とくに好ましくは55%以上で低減されたクリームを製造することができる。また、本発明により、従来の一般的なクリームと比較して、2-Nonanone 濃度が好ましくは40%以上で低減され、より好ましくは45%以上で低減され、さらに好ましくは50%以上で低減され、とくに好ましくは55%以上で低減されたクリームを製造することができる。また、本発明により、従来の一般的なクリームと比較して、Furfural 濃度が好ましくは30%以上で低減され、より好ましくは35%以上で低減され、さらに好ましくは40%以上で低減され、とくに好ましくは45%以上で低減されたクリームを製造することができる。また、本発明により、従来の一般的なクリームと比較して、メタンチオール濃度が好ましくは5%以上で低減され、より好ましくは6%以上で低減され、さらに好ましくは7%以上で低減され、とくに好ましくは8%以上で低減されたクリームを製造することができる。
 バターに関しては、バターの製造直後から冷蔵(例えば、0℃以上10℃以下)で保存して2日後の香気成分濃度の場合、本発明品では、従来品と比較して、2-Heptanone 濃度が50%以上で低減されることが好ましく、55%以上で低減されることがより好ましく、60%以上で低減されることがさらに好ましく、65%以上で低減されることがとくに好ましい。
 すなわち、バターの製造直後から冷蔵(例えば、0℃以上10℃以下)で保存して2日後の香気成分濃度の場合、本発明により、従来の一般的なバターと比較して、2-Heptanone 濃度が好ましくは50%以上で低減され、より好ましくは55%以上で低減され、さらに好ましくは60%以上で低減され、とくに好ましくは65%以上で低減されたバターを製造することができる。
 バターミルクやバターミルクパウダーに関しては、バターミルクやバターミルクパウダーの製造直後から常温(例えば、20℃以上25℃以下)で保存して2日後の香気成分濃度の場合、本発明品では、従来品と比較して、2-Heptanone 濃度が70%以上で低減されることが好ましく、75%以上で低減されることがより好ましく、80%以上で低減されることがさらに好ましく、85%以上で低減されることがとくに好ましい。
 すなわち、バターミルクやバターミルクパウダーの製造直後から冷蔵(例えば、0℃以上10℃以下)で保存して2日後の香気成分濃度の場合、本発明により、従来の一般的なバターミルク、バターミルクパウダーと比較して、2-Heptanone 濃度が好ましくは70%以上で低減され、より好ましくは75%以上で低減され、さらに好ましくは80%以上で低減され、とくに好ましくは85%以上で低減されたバターミルク、バターミルクパウダーを製造することができる。
 以下、図1を参照して、生乳をクリーム類の原料として用い、クリーム類を製造する場合において、従来の一般的なクリーム類の製造方法(遠心分離処理、成分調整処理した後に、加熱処理する)と対比しながら、本発明について説明する。
<従来品(クリーム類)の製造>
 図1の左側に、従来法(従来の製造方法)による製造工程を示した。まず、クリームセパレーター(連続式の分離版型遠心分離機、elecrem社製)を用いて、生乳を遠心分離処理して脱脂乳とクリームに分離した。このとき、この遠心分離処理の前に、遠心分離処理に備えて、プレート式熱交換器(岩井機械工業社製)を用いて、生乳を55℃に加温した。そして、クリームの成分調整処理として、この分離した脱脂乳を、この分離したクリームに添加して、乳脂肪分を45%に調整した。
 次に、プレート式熱交換器(岩井機械工業社製)を用いて、この成分調整処理したクリームを加熱処理(130℃、2秒間)した後に、10℃以下に冷却することで、従来法により、クリーム(クリーム類の従来品)を製造した。
<本発明品(クリーム類)の製造>
 図1の右側に、従来法に対比する、本発明の製造工程を示した。
 まず、プレート式熱交換器(岩井機械工業社製)を用いて、生乳(全脂乳)を加熱処理(130℃、2秒間)してから10℃以下に冷却した。次に、プレート式熱交換器(岩井機械工業社製)を用いて、生乳を55℃に加熱した後に、クリームセパレーター(連続式の分離版型遠心分離機、elecrem社製)を用いて、この加熱処理した全脂乳を遠心分離処理して脱脂乳とクリームとに分離した。
 そして、クリームの成分調整処理として、この分離した脱脂乳を、この分離したクリームに添加して、乳脂肪分を45%に調整することで、本発明により、クリーム(クリーム類の本発明品)を製造した。
 図1に例示したように、従来の製造工程では、生乳(全脂乳)を遠心分離処理した後に、ここで得られた脱脂乳をクリームに添加して成分調整処理した後に、このクリームを加熱処理している。このため、固形分濃度や脂肪濃度などが高く、粘度も高い状態で加熱処理することになり、加熱処理装置(熱交換器、殺菌機など)の種類や形状、加熱処理の条件によって、加熱部(伝熱面など)が焦げ付くなどの問題が発生しやすいこともあった。
 一方、図1に例示したように、本発明では、生乳(全脂乳)を加熱処理し、この全脂乳を遠心分離処理した後に、ここで得られた脱脂乳をクリームに添加して成分調整処理している。このため、固形分濃度や脂肪濃度などが低く、粘度も低い状態で加熱処理することになり、加熱処理装置(熱交換器、殺菌機など)の種類や形状、加熱処理の条件によらず、加熱部(伝熱面など)が焦げ付くなどの問題が発生しにくくなる。
 なお、上述したように、本発明は、従来の一般的なクリーム類の製造方法である、(1)クリーム類の原料を遠心分離処理する工程、(2)クリーム類の原料(遠心分離処理後)を成分調整処理する工程、(3)クリーム類(成分調整処理後)を加熱処理する工程を、(1’)クリーム類の原料を加熱処理する工程、(2’)クリーム類の原料(加熱処理後)を遠心分離処理する工程、(3’)クリーム類の原料(遠心分離処理後)を成分調整処理する工程に変更したものである。
 そこで、本発明では、そのクリーム類の製造方法を導入するにあたり、原則として、新たな設備(遠心分離処理装置、加熱処理装置、タンクなど)を増設や配備しなくても良い。つまり、本発明は、従来の製造工程を利用しながら、配管の構成を組み替えるなどで実現できるため、その導入費などを抑制して、経済的に導入することができる。
<官能評価(クリーム類)>
 上述したように、従来法によって製造したクリーム(従来品)と、本発明によって製造したクリーム(本発明品)について、それぞれ官能評価を行った。 まず、官能評価用の試料を調製した。すなわち、それぞれのクリームを製造直後から冷蔵(5℃±0.5℃)に2日間で保存し、それぞれのクリームの900gに対して、砂糖を63gで添加して溶解させ、5℃±0.5℃に冷却した。そして、卓上ホイッパー(愛工舎製作所製)を用いて、それぞれのクリームをホイップし、それぞれのクリームの試料を調製した。
 次に、この官能評価を3点識別法で行った。すなわち、従来法で製造したクリーム(従来品)と、本発明で製造したクリーム(本発明品)の2種類の試料を識別するために、何れか一方を2個、他方を1個、合計で3個を用意した上で、被験者が異なると感じた1個を、被験者に選択させ、その当否の程度から、これら2種類の試料の差異を評価(判定)した。具体的には、従来品の試料(A)と本発明品の試料(B)を、AABまたはABBの組み合わせで、被験者に提供し、被験者が異なると感じた1個の試料を、被験者に選択させた。その結果として、AとBには、統計的に有意な差があった(有意水準:5%)。
 このとき、本発明品では、従来品と比較して、加熱臭が低減され、後味のスッキリ感が大きくなり、新鮮な風味となる傾向が確認された。
<香気成分の分析(クリーム類)>
 上述したように、従来法によって製造したクリーム(従来品)と、本発明によって製造したクリーム(本発明品)について、それぞれ香気成分の分析を行った。以下に、香気成分の分析方法を示した。
 これらのクリームの試料の5gを20mL容のバイアル瓶に分注し、分析時の内部標準物質として、メチルイソブチルケトン(和光純薬工業社製)のメタノール溶液(20mg/L)を5μLで添加し、それぞれの試験溶液を調製した。そして、これら試験溶液の入ったバイアル瓶を、オートサンプラー(「COMBIPAL」、エーエムアール社製)にセットし、バイアル瓶のヘッドスペースに固相マイクロファイバー(DVB/Carboxen/PDMS、2cm、SUPELCO社製)を暴露させながら、加温処理(60℃、40分間)して、それぞれの試験溶液からヘッドスペースに香気成分を揮発させた。さらに、オートサンプラーを用いて、固相マイクロファイバーをGC/MS(機種名「HP5975」(MS)、「HP6890N」(GC)、何れも、Agilent technologies社製)の注入口へセットしてから、加温処理(250℃)し、香気成分をGC/MSに導入して分析を行った。
 ここで、分析用のGCカラムには、DB-WAX(30m×内径0.25mm、膜厚0.25μm、Agilent technologies社製)を用いた。そして、分析用のGCのキャリアガスには、ヘリウムを用い、流速は1.0mL/分に設定した。また、カラムの昇温では、40℃、5分間で保持した後に、15℃/分で250℃まで昇温し、250℃、10分間で保持する条件に設定した。MS法による分析対象の成分の検出では、トータルイオンクロマトグラムとマススペクトルの結果から、ライブラリに照合して確認した。
 図2に、従来法で製造したクリーム(従来品)と本発明で製造したクリーム(本発明品)について、それらの香気成分の比較を示した。具体的には、従来品の香気成分(メチルケトン類、フラン類、メタンチオール)の濃度を1に設定し、本発明品の香気成分の濃度と相対的に比較した。なお、メチルケトン類(2-Pentanone、2-Heptanone、2-Nonanone)は、乳脂肪分の熱劣化の指標であり、これらの成分が多いと、より乳脂肪分の熱劣化が進行していることとなる。フラン類(Furfural)は、メイラード反応(糖類とアミノ化合物を加熱したときに見られる反応)の指標であり、この成分が多いと、より特有の香気成分も生じ、ある基準では、より自然な風味の劣化が進行していることとなる。硫黄化合物(メタンチオール)は、加熱臭の指標であり、この成分が多いと、より加熱臭を感じることとなる。
 それぞれのクリームを製造直後から冷蔵(5℃±0.5℃)に2日間で保存した試料の香気成分(図2)の分析結果によると、本発明品では、従来品に比較して、2-Pentanone 濃度が69%で小さくなり、2-Heptanone 濃度が54%で小さくなり、2-Nonanone 濃度が57%で小さくなり、Furfural 濃度が50%で小さくなると共に、メタンチオール濃度が10%で小さくなっていた。
 図2から、本発明では、従来法に比較して、2-Pentanone、2-Heptanone、2-Nonanoneなどのメチルケトン類の含有量を大幅に低減させて、つまり、乳脂肪分の熱劣化を大幅に低減させて、クリーム類を製造できることが明らかとなった。また、本発明では、従来法に比較して、クリーム類の製造直後(製造日)から所定時間が経過しても、乳脂肪分の熱劣化を大幅に低減させた状態で、クリーム類を提供できることが明らかとなった。
 このとき、本発明品では、乳脂肪分が4重量%程度の生乳(全脂乳)の状態で加熱処理しているのに対して、従来品では、乳脂肪分が45重量%程度のクリームの状態で加熱処理している。つまり、本発明品では、従来品に比較して、乳脂肪分の含有量(濃度)が低い状態で加熱処理しており、これにより、乳脂肪分の熱劣化を大幅に低減できたと考えられた。
 図2から、本発明では、従来法に比較して、Furfuralなどのフラン類の含有量、メタンチオールなどの硫黄化合物の含有量を低減させて、つまり、自然な風味の劣化、加熱臭を低減させて、クリーム類を製造できることが明らかとなった。
 また、本発明では、従来法に比較して、クリーム類の製造直後(製造日)から所定時間が経過しても、自然な風味の劣化、加熱臭を低減させた状態で、クリーム類を提供できることが明らかとなった。
<従来品(バター、バターミルク)の製造>
 前記の従来法で製造したクリームから、次の手順に基づいて、バターとバターミルクを製造した。すなわち、クリームの800gをボウルに計量し、卓上型ミキサー(HOBART社製)にワイヤーを取り付け、それをボウルに入れて、チャーニング処理した。そして、チャーニング処理しているときに、クリームからバターミルクが分離され、そのバターミルクがボウルから飛び跳ねるくらいのところで、チャーニング処理を停止した。その後に、バターミルクを取り除いて容器に移し、卓上型ミキサーのワイヤーをビーターに付け替えて、ワーキング処理した。そして、ワーキング処理しているときに、適宜、バターミルクを取り除きながら容器に移し、ワーキング処理の時間を合計で5分間に設定し、ワーキング処理を停止した。その後に、バターを取り出して容器に移し、バターを製造した。また、前述したように、バターミルクを容器に移したが、これらを容器で混合し、バターミルクを製造した。
<本発明品(バター、バターミルク)の製造>
 前記の本発明で製造したクリーム(本発明品)から、次の手順に基づいて、バターとバターミルクを製造した。すなわち、クリームの800gをボウルに計量し、卓上型ミキサー(HOBART社製)にワイヤーを取り付け、それをボウルに入れて、チャーニング処理した。そして、チャーニング処理しているときに、クリームからバターミルクが分離され、そのバターミルクがボウルから飛び跳ねるくらいのところで、チャーニング処理を停止した。その後に、バターミルクを取り除いて容器に移し、卓上型ミキサーのワイヤーをビーターに付け替えて、ワーキング処理した。そして、ワーキング処理しているときに、適宜、バターミルクを取り除きながら容器に移し、ワーキング処理の時間を合計で5分間に設定し、ワーキング処理を停止した。その後に、バターを取り出して容器に移し、バターを製造した。また、前述したように、バターミルクを容器に移したが、これらを容器で混合し、バターミルクを製造した。
<香気成分の分析(バター、バターミルク)>
 上述したように、従来法によって製造したクリームから製造したバター(従来品)、バターミルク(従来品)と、本発明によって製造したクリームから製造したバター(本発明品)、バターミルク(本発明品)について、それぞれ香気成分の分析を行った。以下に、香気成分の分析方法を示した。
 これらのバターミルクの試料の10gを20mL容のバイアル瓶に分注し、25℃の条件下にて、40mL/分の窒素を10分間で連続的に吹き付け、ここで揮発した香気成分をTDUチューブ(GESTEL社製)に吸着させる方法で、それぞれの試料からTDUチューブに香気成分を抽出することで、香気成分をGC/MS(HP5975C(GC)、HP7890A(MS)、何れも、Agilent technologies社製)に導入して分析を行った。
 ここで、分析用のGCカラムには、DB-WAX(30m×内径0.25mm、膜厚0.25μm、Agilent technologies社製)を用いた。TDUチューブを加熱処理(230℃)し、香気成分を脱着させ、冷却ユニットで-50℃まで冷却して、香気成分を濃縮した後に、GC/MSに導入した。カラムの昇温では、40℃、2.5分間で保持した後に、5℃/分で240℃まで昇温し、240℃、10分間で保持する条件に設定した。MS法による分析対象の成分の検出では、トータルイオンクロマトグラムとマススペクトルの結果から、ライブラリに照合して確認した。なお、バターの香気成分の分析では、バターミルクの香気成分の分析と比較して、固相マイクロファイバーに1cm長のものを用いた以外は同等である。
 図3に、従来法で製造したバター(従来品)、バターミルク(従来品)と本発明で製造したバター(本発明品)、バターミルク(本発明品)について、それらの香気成分の比較を示した。具体的には、それぞれのバター、バターミルクの製造直後から冷蔵(5℃±0.5℃)に2日間で保存した従来品の香気成分(2-Heptanone)の濃度を1に設定し、本発明品の香気成分の濃度と相対的に比較した。なお、メチルケトン類(2-Heptanone)は、乳脂肪分の熱劣化の指標であり、これらの成分が多いと、より乳脂肪分の熱劣化が進行していることとなる。
 それぞれのバター、バターミルクを製造直後から冷蔵(5℃±0.5℃)に2日間で保存した試料の香気成分(図3)の分析結果によると、バターの場合、本発明品(バター)では、従来品(バター)に比較して、2-Heptanone 濃度が70%で小さくなっており、バターミルクの場合、本発明品(バターミルク)では、従来品(バターミルク)に比較して、2-Heptanone 濃度が90%で小さくなっていた。
 図3から、本発明では、従来法に比較して、2-Heptanoneなどのメチルケトン類の含有量を大幅に低減させて、つまり、乳脂肪分の熱劣化を大幅に低減させて、バター、バターミルクを製造できることが明らかとなった。また、本発明では、従来法に比較して、クリーム類の製造直後(製造日)から所定時間が経過しても、乳脂肪分の熱劣化を大幅に低減させた状態で、バター、バターミルクを提供できることが明らかとなった。
<従来品(バターミルクパウダー)の製造>
 減圧濃縮機(真空蒸発濃縮機)を用いて、従来法で製造したバターミルク(従来品)を濃縮して、濃縮バターミルク(固形分濃度:約35重量%)を製造した。そして、噴霧乾燥機を用いて、この濃縮バターミルクを乾燥して、バターミルクパウダー(水分:約3重量%)を製造した。
<本発明品(バターミルクパウダー)の製造>
 減圧濃縮機(真空蒸発濃縮機)を用いて、本発明で製造したバターミルク(本発明品)を濃縮して、濃縮バターミルク(固形分濃度:約35重量%)を製造した。そして、噴霧乾燥機を用いて、この濃縮バターミルクを乾燥して、バターミルクパウダー(水分:約3重量%)を製造した。
 以上、添付図面を参照して、本発明の好ましい実施例を説明したが、本発明は上述した実施の形態、実施例に限られるものではなく、特許請求の範囲の記載から把握される技術的範囲において種々に変更可能である。

Claims (10)

  1.  クリーム類の原料に対して加熱処理した後に、遠心分離処理して、クリームを分離し、当該分離したクリームに対して成分調整処理する工程を備えていることを特徴とする、クリーム類の製造方法。
  2.  クリーム類の原料に対して加熱処理した後に、遠心分離処理して、クリームを分離する工程を備えていることを特徴とする、クリーム類の製造方法。
  3.  前記加熱処理が90℃以上の高温処理であることを特徴とする、請求項1又は2記載のクリーム類の製造方法。
  4.  請求項1乃至3のいずれか一項の製造方法によって製造したクリーム類。
  5.  請求項4のクリーム類に対してチャーニング処理し、バター粒とバターミルクに分離した後に、当該分離したバター粒をワーキング処理することを特徴とする、バターの製造方法。
  6.  請求項5の製造方法によって製造したバター。
  7.  請求項4のクリーム類に対してチャーニング処理し、バター粒とバターミルクに分離することを特徴とする、バターミルクの製造方法。
  8. 請求項7の製造方法によって製造したバターミルク。
  9.  請求項8のバターミルクに対して濃縮処理した後に、乾燥処理することを特徴とする、バターミルクパウダーの製造方法。
  10.  請求項9の製造方法によって製造したバターミルクパウダー。
