Claims (11)
- 우유 성분 및 부형제 중 적어도 하나를 포함하는 풍미제; 및셀룰로오스 에테르계 화합물을 포함하고,상기 셀룰로오스 에테르계 화합물의 고형분 함량은 상기 풍미제의 고형분 함량 100중량부에 대하여 1~5중량부인 거품음료 조성물.
- 제1항에 있어서,식물성 주재료 및 착향료를 더 포함하고,상기 풍미제 및 상기 착향료의 고형분 함량은 상기 식물성 주재료 100중량부에 대하여 각각 100~900중량부 및 0.2~13중량부인 거품음료 조성물.
- 제2항에 있어서,상기 거품음료 조성물은 상기 식물성 주재료 100중량부에 대하여 물 700~14,000중량부를 더 포함하는 거품음료 조성물.
- 제2항에 있어서,상기 식물성 주재료는 커피, 코코아, 녹차, 고구마, 홍차, 블루베리 및 단호박으로 이루어진 군으로부터 선택된 적어도 하나를 포함하는 거품음료 조성물.
- 제2항에 있어서,상기 착향료는 커피향, 밀크향, 크림향, 바닐라향, 버터향, 코코넛향, 초콜렛향, 유질열매(oleaginous seed)향, 녹차향, 고구마향, 홍차향, 블루베리향 및 단호박향으로 이루어진 군으로부터 선택된 적어도 하나를 포함하는 거품음료 조성물.
- 제1항에 있어서,상기 우유 성분은 원유, 일반 우유, 저지방 우유, 무지방 우유, 기능성 우유, 환원우유, 전지분유, 탈지분유 및 유청분말로 이루어진 군으로부터 선택된 적어도 하나를 포함하는 거품음료 조성물.
- 제1항에 있어서,상기 부형제는 말토덱스트린, 폴리덱스트로스, 이눌린, 난소화성 탄수화물, 유청단백, 유청분말, 카제인, 카제인나트륨, 우유단백질, 유청분리단백 및 수용성 식이섬유 및 불용성 식이섬유로 이루어진 군으로부터 선택된 적어도 하나를 포함하는 거품음료 조성물.
- 제1항에 있어서,상기 셀룰로오스 에테르계 화합물은 히드록시프로필메틸 셀룰로오스, 메틸 셀룰로오스 및 히드록시프로필 셀룰로오스로 이루어진 군으로부터 선택된 적어도 하나를 포함하는 거품음료 조성물.
- 우유 성분 및 부형제 중 적어도 하나, 셀룰로오스 에테르계 화합물 및 물을 포함하는 혼합물을 가열 및 교반하여 거품을 형성하는 단계를 포함하는 거품음료의 제조방법.
- 제9항에 있어서,상기 가열은 25~75℃의 온도 범위에서 진행되는 거품음료의 제조방법.
- 제9항에 있어서,상기 혼합물은 식물성 주재료 및 착향료 중 적어도 하나를 더 포함하는 거품음료의 제조방법.
