本発明の調味料の製造方法は、グルタミン酸高含有酵母エキス、及びグルタチオン高含有酵母エキスを含む混合物を加熱する工程を含み、更に必要に応じて適宜選択した、その他の工程を含む。
前記混合物は、少なくともグルタミン酸高含有酵母エキス、及びグルタチオン高含有酵母エキスを含み、更に必要に応じて、その他の酵母エキス、還元糖、食塩、水などのその他の成分を含む。
前記グルタミン酸高含有酵母エキスとしては、グルタミン酸含量が粉末状の酵母エキスに換算して、10質量%以上であり、食用に供されるものである限り、特に制限はなく、適宜選択することができ、例えば、ビール酵母エキス、パン酵母エキス、トルラ酵母エキスなどが挙げられる。前記グルタミン酸高含有酵母エキスとしては、市販品を用いることができ、該市販品としては、例えば、ハイパーミーストHG(アサヒフードアンドヘルスケア株式会社、グルタミン酸含量18質量%以上)、ハイパーミーストHGペースト(アサヒフードアンドヘルスケア株式会社)などが挙げられる。
前記グルタミン酸高含有酵母エキスの前記混合物における含有量としては、粉末状の酵母エキスに換算して、3質量%~24質量%である限り、特に制限はなく、適宜選択することができるが、6質量%~21質量%が好ましく、9質量%~18質量%がより好ましい。前記含有量が、3質量%未満であると、ミートフレーバー、旨味、厚みを欠くことがあり、24質量%を超えると、ミートフレーバーが減少し、ロースト感、オフフレーバーが増すことがある。一方、前記含有量が、9質量%~18質量%であると、ミートフレーバーが生成し、オフフレーバーが少ない点で有利である。
ここで、「粉末状の酵母エキス」とは、水分含量5質量%以下、固形分95質量%以上の酵母エキスを指す。
また、前記グルタミン酸高含有酵母エキスを前記調味料の製造方法に使用する際には、粉末状であってもよく、ペースト乃至溶液状であってもよい。前記グルタミン酸高含有酵母エキスがペースト乃至溶液状の場合、混合物中の前記グルタミン酸高含有酵母エキス濃度は、粉末状の酵母エキスに換算して適宜決定すればよい。
なお、「ペースト乃至溶液状の酵母エキス」とは、水分含量が5質量%を超えるものであれば、特に制限はなく、目的に応じて適宜選択することができるが、一般的に水分含量20質量%~35質量%、固形分65質量%~80質量%の酵母エキスを指す。
なお、市販の酵母エキスには、当初から食塩が添加されているものがあるが、このような酵母エキスを使用する場合には、食塩を抜いた酵母エキス固形分に基づいて前述の水分含量の算出をすればよい。
前記グルタチオン高含有酵母エキスとしては、グルタチオン含量が粉末状の酵母エキスに換算して、5質量%以上であり、食用に供されるものである限り、特に制限はなく、適宜選択することができ、例えば、ビール酵母エキス、パン酵母エキス、トルラ酵母エキスなどが挙げられる。前記グルタチオン高含有酵母エキスとしては、市販品を用いることができ、該市販品としては、例えば、ハイチオンエキスYH-15(株式会社興人、グルタチオン含量15質量%以上)などが挙げられる。
前記グルタチオン高含有酵母エキスの前記混合物における含有量としては、粉末状の酵母エキスに換算して、5質量%~35質量%である限り、特に制限はなく、適宜選択することができるが、8質量%~25質量%が好ましく、11質量%~20質量%がより好ましい。前記含有量が、5質量%未満であると、ミートフレーバーの生成が著しく減少することがあり、35質量%を超えると、オフフレーバー(硫黄臭など)が強くなり、旨味が減少することがある。一方、前記含有量が、11質量%~20質量%であると、ミートフレーバーが生成し、オフフレーバーが少ない点で有利である。
また、前記グルタチオン高含有酵母エキスを前記調味料の製造方法に使用する際には、粉末状であってもよく、溶液(ペースト)状であってもよい。前記グルタチオン高含有酵母エキスが溶液状の場合、混合物中の前記グルタチオン高含有酵母エキス濃度は、粉末状の酵母エキスに換算して適宜決定すればよい。
例えば、ビール酵母エキスについて、ビール製造過程で得られるビール酵母を適宜ろ過、洗浄などを行い、上述した少なくとも1つの方法により菌体を破砕乃至分解し、得られた粗エキスをそのまま、乃至、更にろ過、濃縮などをおこなって精製エキスとしてビール酵母エキスを得ることができる。
また、前記酵母エキスにおけるグルタチオン含量は、例えば、分光光度計(U-2800A Spectrophotometer、株式会社日立ハイテクノロジーズ製)を用い、Titzeらの方法(Analytical Biochemistry vol.27, p.502(1969))に従って総グルタチオンを測定することにより求めることができる。
前記混合物は、還元糖を更に含むことが好ましい。前記還元糖としては、特に制限なく、適宜選択することができるが、キシロース、グルコース、フルクトース、スクロース、マルトース、アラビノース、ラクトース、及びリボースが好ましい。これらは、1種単独で使用してもよいし、2種以上を併用してもよい。これらの中でも、反応性の高さから短時間で良質なフレーバーを生成できる点で、キシロースがより好ましい。
前記還元糖の前記混合物における含有量としては、0質量%~5質量%が好ましい。前記還元糖を添加しない場合、乃至前記含有量が少ない場合は、ローストフレーバー、オフフレーバーがなく、良質なミートフレーバーが得られる点で好ましく、前記含有量が多い場合は、良質なミートフレーバーに加え、重厚で適度なローストフレーバー(例えば、ローストビーフフレーバー)が得られる点で好ましい。このように、前記還元糖の含有量を適宜選択することにより、従来にない様々なタイプのフレーバーを得ることができる。
一方、前記含有量が5質量%を超えると、ローストフレーバー、オフフレーバーが著しく増加し、ミートフレーバーの生成が著しく減少することがある。
前記加熱温度としては、90℃~150℃である限り、特に制限はなく、目的に応じて適宜選択することができるが、90℃~130℃が好ましく、95℃~125℃がより好ましく、100℃~120℃が特に好ましい。前記加熱温度が、90℃未満であると、ミートフレーバーが効果的に得られないことがあり、150℃を超えると、ローストフレーバー及びオフフレーバーが増すことがある。一方、前記加熱温度が、100℃~120℃であると、ミートフレーバーの生成が多く、オフフレーバーの生成が少ない点で有利である。
前記加熱時間としては、1分間~4時間が好ましく、1分間~1時間がより好ましい。前記加熱時間が、1分間未満であると、安定性を欠くことがあり、4時間を超えると、オフフレーバーが増すことがある。一方、前記加熱時間が、1分間~1時間であると、生成フレーバーの品質、及び製造効率の点で有利である。
前記混合物のpHとしては、3~8が好ましく、4~6がより好ましい。前記pHが、3未満であると、ミートフレーバーが生成しないことがあり、8を超えると、ローストフレーバー、オフフレーバーが増し、旨味、厚みが減少することがある。一方、前記pHが、4~6であると、良質なフレーバーの生成、良好な味質の点で有利である。
また、前記混合物を加熱する方法としては、100rpm~600rpmにて攪拌しながら前記加熱条件にて加熱することが好ましく、そのような装置としては、例えば、加圧加熱反応装置(耐圧硝子工業株式会社製)を用いることができる。
このようにして得られた調味料は、場合により、一般に調味料に許容される添加物を更に加えることもできる。
前記調味料の製造方法により、飲食品へ添加できる、良好な風味を持ち、なおかつ、ミートフレーバーなどを付与することができる調味料が製造される。また、前記調味料の添加量やその他混合物の量を適宜調整することによって風味を変えることができ、ドレッシングなどの調味料とすることができる。更に、水層及び油層を乳化させた乳化組成物としての調味料を作ることもでき、また、これらをスプレードライなどの乾燥工程により乾燥させた調味料とすることもできる。
前記調味料の製造方法により、飲食品へ添加できる、良好な風味を持ち、なおかつ、ミートフレーバーなどを付与することができる調味料であって、香味油の形態である調味料が製造される。
前記油脂としては、食用油脂であれば、特に制限はなく、目的に応じて適宜選択することができるが、植物油脂が、アニマルアレルゲンがなく、本発明の調味料の製造方法により、効果的に動物油脂様のミートフレーバーを付与できる点で好ましく、動物油脂が、本発明の調味料の製造方法により、動物油脂様のミートフレーバーを増強できる点で好ましい。
前記植物油脂としては、特に制限はなく、目的に応じて適宜選択することができ、例えば、ヒマワリ油、パーム油、キャノーラ油(菜種油)、大豆油、米油、綿実油、コーン油などが挙げられる。これらの中でも、ヒマワリ油、パーム油、キャノーラ油、大豆油が、代表的な植物油脂である点で好ましく、ヒマワリ油、パーム油、キャノーラ油が、主要なアレルゲンに該当しない点でより好ましく、ヒマワリ油、キャノーラ油が、常温で液状でありハンドリングに優れる点で特に好ましく、ヒマワリ油が、加えてリーン且つ酸化に強い点で最も好ましい。
前記含有量が0.5質量%以上、3質量%未満程度であると、マイルドなミートフレーバーを有する調味料が製造され、ドレッシング、ガーリックオイル、オニオンオイルなどのオイル製品への風味強化やミートフレーバー付与に好適に用いることができる点で有利である。また、前記含有量が3質量%以上であると、より強いミートフレーバーを有する調味料が製造される。したがって、目的とするミートフレーバー強度を有する調味料を提供するため、用途に応じて、混合物の含有量を適宜選択することができる。
前記混合物と油脂とを含む前記懸濁液を加熱する方法としては、特に制限なく、上述した混合物を加熱する方法と同様に、適宜、加熱温度、加熱時間、混合物のpHなどの条件を選択することができる。前記加熱する方法としては、特に制限はなく、目的に応じて適宜公知の方法を選択することができ、攪拌しなくてもよく、100rpm~600rpmなどの条件で適宜攪拌してもよい。
本発明の調味料は、前記調味料の製造方法により得られた調味料であり、更に必要に応じて一般に調味料に許容される添加物などのその他の成分を含むことができる。
本発明の旨味増強剤は、前記調味料を有効成分として含有してなり、更に必要に応じて一般に調味料に許容される添加物などのその他の成分を含む。前記旨味増強剤は、有効成分として含有される前記調味料の作用により、旨味増強作用を発揮する。

前記原料乃至添加物としては、特に制限はなく、目的に応じて適宜選定することができ、例えば、グルコース、フルクトース、スクロース、マルトース、ソルビトール、ステビオサイド、ルブソサイド、コーンシロップ、乳糖、クエン酸、酒石酸、リンゴ酸、コハク酸、乳酸、L-アスコルビン酸、dl-α-トコフェロール、エリソルビン酸ナトリウム、グリセリン、プロピレングリコール、グリセリン脂肪酸エステル、ポリグリセリン脂肪酸エステル、ショ糖脂肪酸エステル、ソルビタン脂肪酸エステル、アラビアガム、カラギーナン、カゼイン、ゼラチン、ペクチン、寒天、ビタミンB類、ニコチン酸アミド、パントテン酸カルシウム、アミノ酸類、カルシウム塩類、色素、香料、保存剤などが挙げられる。
グルタミン酸高含有酵母エキス(ハイパーミーストHG、グルタミン酸含量18質量%以上、アサヒフードアンドヘルスケア株式会社)16質量%、グルタチオン高含有酵母エキス(ハイチオンエキスYH-15、グルタチオン含量15質量%以上、株式会社興人)19質量%、キシロース3.0質量%、塩14質量%、及び水48質量%を混合した混合物を、120℃にて30分間加熱した。反応終了後、冷却し、固形分50質量%の調味料1を得た。なお、混合物のpHは、5.0(pH調整なし)であった。
実施例1において、グルタミン酸高含有酵母エキスの配合を表1に示す通りに変えたこと以外は、実施例1と同様にして、実施例2~9の調味料2~9を得た。なお、対照酵母エキスとして、ミーストパウダーN(グルタミン酸含量3.7質量%、アサヒフードアンドヘルスケア株式会社)を用いた。また、酵母エキスの総含有量が35質量%を超える実施例7~9については、相当分の水含有量を減らすことにより配合を調製した。
実施例1において、グルタチオン高含有酵母エキスの配合を表4に示す通りに変えたこと以外は、実施例1と同様にして、実施例10~16の調味料10~16を得た。なお、対照酵母エキスとして、ミーストパウダーN(グルタミン酸含量3.7質量%、アサヒフードアンドヘルスケア株式会社)を用いた。また、酵母エキスの総含有量が35質量%を超える実施例15~16については、相当分の水含有量を減らすことにより配合を調製した。
実施例1において、酵母エキスの配合を表1に示す通りに変えたこと以外は、実施例1と同様にして、比較例1~4の調味料A~Dを得た。
実施例1において、混合のみを行い、加熱しなかったこと以外は、実施例1と同様にして、比較例5の調味料Eを得た。
実施例1において、酵母エキスの配合を表4に示す通りに変えたこと以外は、実施例1と同様にして、比較例6の調味料Fを得た。
作製した調味料1~9(実施例1~9)及び調味料A~E(比較例1~5)について、以下のように官能評価を行った。
<<評価1:グルタミン酸高含有酵母エキスのパラメータ官能評価1>>
調味料1、3及び5(実施例1、3及び5)並びに調味料A(比較例1)を、70℃のお湯にそれぞれ0.7質量%添加し(食塩量:0.3質量%)、官能評価を行った。官能評価は、社内パネラー11人で、ブラインドテストとして行い、下記の評価基準に従い、対照区である調味料Aにおける各評価項目の点数を4点となるよう点数化し、評価項目「ミートフレーバー」、「旨味」及び「厚み」について評価した。評価結果を平均値として表1に示す。
〔評価基準〕
評価項目につきそれぞれ対照区と比較し、7段階評価とし、対照区は4とした。
7:対照区よりかなり強く感じる
6:対照区よりはっきりと強く感じる
5:対照区よりやや強く感じる
4:対照区と同等に感じる
3:対照区よりやや弱く感じる
2:対照区よりはっきりと弱く感じる
1:対照区よりかなり弱く感じる
調味料1、3、及び5(実施例1、3、及び5)並びに調味料A(比較例1)を、70℃のお湯にそれぞれ0.7質量%添加した各サンプル(食塩量:0.3質量%)を用い、官能評価を行った。官能評価は、社内パネラー11人で、ブラインドテストとして行い、上記評価基準に従い、対照区である調味料Aにおける各評価項目の点数を4点となるよう点数化し、評価項目「ミートフレーバー」、「厚み」、「複雑さ」、「旨味」、「塩味」、「苦味」、「甘味」、「酸味」、「先味」及び「後味」について評価した。ここで、「先味」とは、味の立ち上がりが早いこと、味のパンチ、インパクトがあることを意味する。また、「後味」とは、味の持続性があることを意味する。評価結果を平均値として表2及び図1に示す。
また、比較例1のサンプルと実施例1、3、及び5のいずれかのサンプルとで、嗜好性に関する比較官能評価を行った。比較官能評価は、社内パネラー11人で、ミートフレーバーとしてより好ましい方、乃至強い方を挙げることにより行った。表3の数値は、各区について、「好ましい」乃至「強い」と判断した人数を示す。
調味料1及び10~16(実施例1及び10~16)並びに調味料A及びE~F(比較例1及び5~6)を、70℃のお湯にそれぞれ0.7質量%添加した各サンプル(食塩量:0.3質量%)を用い、官能評価を行った。官能評価は、社内パネラー11人で、ブラインドテストとして行い、上記評価基準に従い、対照区である調味料Aにおける各評価項目の点数を4点となるよう点数化し、評価項目「ミートフレーバー」、「厚み」及び「旨味」について評価した。評価結果を平均値として表4に示す。
対照コンソメスープ(対照サンプル)として、加工用クノールブイヨンKF(ビーフレスタイプコンソメスープ、味の素株式会社)の1.0質量%を70℃のお湯に溶かしたコンソメスープを用いた。調味料1(実施例1)及び調味料A(比較例1)の一方を0.35質量%添加したものを調味料添加コンソメスープ(試験サンプル)とし、官能評価を行った。なお、各サンプルの食塩量が一定となるよう補正した。官能評価は、社内パネラー11人で、ブラインドテストとして行い、上記評価基準に従い、対照サンプルにおける各評価項目の点数を4点となるよう点数化し、評価項目「ミートフレーバー」、「厚み」、「複雑さ」、「旨味」、「塩味」、「苦味」、「甘味」、「酸味」、「先味」及び「後味」について評価した。評価結果を平均値として表5及び図2に示す。
また、対照サンプル及び試験サンプルの中で、嗜好性に関する比較官能評価を行った。比較官能評価は、社内パネラー11人で、コンソメスープとしてより好ましい方、乃至ミートフレーバーとしてより強い方を挙げることにより行った。表6の数値は、各区について、「好ましい」乃至「強い」と判断した人数を示す。
実施例1において、加熱温度を表7に示す通り、それぞれ100℃、150℃、80℃、及び180℃に変えたこと以外は、実施例1と同様にして、実施例17~18の調味料17~18及び比較例7~8の調味料G~Hを得た。
調味料1及び17~18(実施例1及び17~18)並びに調味料G~H(比較例7~8)を、70℃のお湯にそれぞれ0.7質量%添加した各サンプル(食塩量:0.3質量%)を用い、官能評価を行った。社内パネラー11人で、評価項目「ミートフレーバー」、「ローストフレーバー」及び「オフフレーバー」について、下記の評価基準に従い、ブラインドテストとして評価を行い、最も多くのパネラーが選択した評価を記した。評価結果を表7に示す。

実施例1において、混合物のpHを表8に示す通り、それぞれ3、4、6、7、8及び2に変えたこと以外は、実施例1と同様にして、実施例19~23の調味料19~23及び比較例9の調味料Iを得た。
調味料1及び19~23(実施例1及び19~23)並びに調味料I(比較例9)を、70℃のお湯にそれぞれ0.7質量%添加した各サンプル(食塩量:0.3質量%)を用い、官能評価を行った。社内パネラー11人で、評価項目「ミートフレーバー」、「ローストフレーバー」及び「オフフレーバー」について、下記の評価基準に従い、ブラインドテストとして評価を行い、最も多くのパネラーが選択した評価を記した。評価結果を表8に示す。

実施例1において、キシロース(還元糖)の含有量を、表9に示す通り3質量%から、それぞれ0.0質量%、0.5質量%、1.0質量%、2.0質量%、5.0質量%及び10.0質量%に変えたこと以外は、実施例1と同様にして、実施例24~28の調味料24~28及び比較例10の調味料Jを得た。
調味料1及び24~28(実施例1及び24~28)並びに調味料J(比較例10)を、70℃のお湯にそれぞれ0.7質量%添加した各サンプル(食塩量:0.3質量%)を用い、官能評価を行った。社内パネラー11人で、評価項目「ミートフレーバー」、「ローストフレーバー」及び「オフフレーバー」について、下記の評価基準に従い、ブラインドテストとして評価を行い、最も多くのパネラーが選択した評価を記した。評価結果を表9に示す。

まず、実施例1と同様に、グルタミン酸高含有酵母エキス(ハイパーミーストHG、グルタミン酸含量18質量%以上、アサヒフードアンドヘルスケア株式会社)16質量%、グルタチオン高含有酵母エキス(ハイチオンエキスYH-15、グルタチオン含量15質量%以上、株式会社興人)19質量%、キシロース3.0質量%、塩14質量%、及び水48質量%を混合した混合物を調製した。次いで、得られた混合物20質量部に油脂としてヒマワリ油80質量部を加えて混合し、得られた懸濁液を120℃にて30分間加熱した。反応終了後、静置及び冷却し、層分離した上層(油層)のみを分取し、調味料29を得た。なお、混合物のpHは、5.0(pH調整なし)であった。
実施例29において、油脂を加えて混合のみを行い、加熱しなかったこと以外は、実施例29と同様にして、比較例11の調味料Kを得た。
まず、実施例1と同様に、グルタミン酸高含有酵母エキス(ハイパーミーストHG、グルタミン酸含量18質量%以上、アサヒフードアンドヘルスケア株式会社)16質量%、グルタチオン高含有酵母エキス(ハイチオンエキスYH-15、グルタチオン含量15質量%以上、株式会社興人)19質量%、キシロース3.0質量%、塩14質量%、及び水48質量%を混合した混合物を、120℃にて30分間加熱した。
次いで、得られた加熱後の混合物20質量部に油脂としてヒマワリ油80質量部を加えて混合し、得られた懸濁液を120℃にて30分間加熱した。反応終了後、静置及び冷却し、層分離した上層(油層)のみを分取し、調味料30を得た。
また、実施例30において、加熱後の混合物20質量部に油脂としてヒマワリ油80質量部を加えて混合のみを行い、加熱しなかったこと以外は、実施例30と同様にして、実施例31の調味料31を得た。
実施例29において、酵母エキスの配合を表10に示す通りに変えたこと以外は、実施例29と同様にして、比較例12の調味料Lを得た。
また、比較例12において、油脂を加えて混合のみを行い、加熱しなかったこと以外は、比較例12と同様にして、比較例13の調味料Mを得た。
実施例29において、酵母エキスの配合を表11に示す通りに変えたこと以外は、実施例29と同様にして、比較例14~15の調味料N~Oを得た。
調味料29~31(実施例29~31)及び調味料K~M(比較例11~13)を、70℃のお湯にそれぞれ0.7質量%添加した各サンプル(食塩量:0.3質量%)を用い、官能評価を行った。官能評価は、社内パネラー7人で、ブラインドテストとして行い、上記評価1における評価基準に従い、対照区である調味料Aにおける各評価項目の点数を4点となるよう点数化し、評価項目「ミートフレーバー」、「ローストフレーバー」及び「オフフレーバー」について評価した。評価結果を平均値として表10に示す。
また、同様にして、調味料29(実施例29)及び調味料N~O(比較例14~15)について、官能評価を行った評価結果を、平均値として表11に示す。
実施例29において、油脂を表12に示す通りに変えたこと以外は、実施例29と同様にして、実施例32~33の調味料32~33を得た。
実施例32~33において、油脂を加えて混合のみを行い、加熱しなかったこと以外は、実施例32~33と同様にして、比較例16~17の調味料P~Qを得た。
調味料29及び32~33(実施例29及び32~33)並びに調味料K及びP~Q(比較例11及び16~17)を、70℃のお湯にそれぞれ0.7質量%添加した各サンプル(食塩量:0.3質量%)を用い、官能評価を行った。社内パネラー7人で、評価項目「ミートフレーバー」及び「酸化臭」について、下記の評価基準に従い、ブラインドテストとして評価を行い、最も多くのパネラーが選択した評価を記した。評価結果を表12に示す。
なお、「酸化臭」とは、油脂を加熱した際に生じる、油脂の劣化臭である。

実施例29において、混合物の含有量(混合物と油脂との総量に対する含有量)を、20質量%から、表13に示す通りに変えたこと以外は、実施例29と同様にして、実施例34~37及び比較例18の調味料34~37及び調味料Rを得た。
調味料29及び34~37(実施例29及び34~37)並びに調味料R(比較例18)を、70℃のお湯にそれぞれ0.7質量%添加した各サンプル(食塩量:0.3質量%)を用い、官能評価を行った。社内パネラー7人で、「フレーバー」の生成強度について、「±」(ない、乃至感じられない)及び「+」~「+++++」の5段階の評価にて、ブラインドテストとして評価を行い、最も多くのパネラーが選択した評価を記した。評価結果を表13に示す。
Claims (20)
- グルタミン酸含量が10質量%以上であるグルタミン酸高含有酵母エキス、及びグルタチオン含量が5質量%以上であるグルタチオン高含有酵母エキスを含む混合物を加熱することを特徴とする調味料の製造方法。
- グルタミン酸含量が10質量%以上であるグルタミン酸高含有酵母エキス3質量%~24質量%、及びグルタチオン含量が5質量%以上であるグルタチオン高含有酵母エキス5質量%~35質量%を含む混合物を加熱することを特徴とする調味料の製造方法。
- 混合物が、グルタミン酸高含有酵母エキスを6質量%~21質量%含む請求項1から2のいずれかに記載の調味料の製造方法。
- 混合物が、グルタミン酸高含有酵母エキスを9質量%~18質量%含む請求項1から2のいずれかに記載の調味料の製造方法。
- 混合物が、グルタチオン高含有酵母エキスを8質量%~25質量%含む請求項1から4のいずれかに記載の調味料の製造方法。
- 混合物が、グルタチオン高含有酵母エキスを11質量%~20質量%含む請求項1から4のいずれかに記載の調味料の製造方法。
- 混合物が、還元糖を更に含む請求項1から6のいずれかに記載の調味料の製造方法。
- 還元糖が、キシロース、グルコース、フルクトース、スクロース、マルトース、アラビノース、ラクトース、及びリボースからなる群より選択される少なくとも1種である請求項7に記載の調味料の製造方法。
- 混合物に油脂を加え、加熱する請求項1から8のいずれかに記載の調味料の製造方法。
- 混合物に油脂を加え、加熱して油層を分取する請求項1から8のいずれかに記載の調味料の製造方法。
- 油脂が、ヒマワリ油、パーム油、キャノーラ油、及び大豆油からなる群より選択される少なくとも1種である請求項9から10のいずれかに記載の調味料の製造方法。
- 混合物の含有量が、混合物と油脂との総量に対し、0.5質量%以上である請求項9から11のいずれかに記載の調味料の製造方法。
- 90℃~130℃で加熱する請求項1から12のいずれかに記載の調味料の製造方法。
- 1分間~4時間加熱する請求項1から13のいずれかに記載の調味料の製造方法。
- pH3~8において加熱する請求項1から14のいずれかに記載の調味料の製造方法。
- 請求項1から15のいずれかに記載の調味料の製造方法により得られたことを特徴とする調味料。
- ミートフレーバーを呈する請求項16に記載の調味料。
- ミートフレーバーが、チキンフレーバー及びビーフフレーバーの少なくともいずれかである請求項17に記載の調味料。
- 請求項16に記載の調味料を有効成分として含有することを特徴とする旨味増強剤、塩味増強剤、厚み増強剤、乃至ミートフレーバー増強剤。
- 請求項16から18のいずれかに記載の調味料を含むことを特徴とする飲食品。
