Abstract

The method of gel manufacture from brown algae The method of gel manufacture from brown algae providing cutting of the raw material when thallomes are taken, rhizoids are cut, flushed with sea water, washed with fresh water at temperature 25-35 °C for 20-50 minutes with periodical stirring for uniform swelling at least by 30%, then algae are demineralized via embedding with 0.5% acid solution of the group: acetic, citric or hydrochloric acid, having pH=2.0, at mass ratio of algae and solution of 1:1.5 and allow to stand for 1-2 h, then flush with fresh water for 10-12 minutes and macerate in drinking water at temperature 20-35 °C for 30-50 minutes with 1-2 water change, and after flushing let the water drain for 10-20 minutes, algae are minced and boiled after pouring with fresh water at temperature 75-85 °C at a ratio of algae and water of 1 : 1, add sodium bicarbonate to achieve pH= 7.0 - 8.0, which is controlled during boiling for 6-10 h at temperature 70-80 °C stirring it with a stirring apparatus with rotation rate of 15-25 rpm, then it is cooled to 35-45 °C and homogenized for 30 min, then introducing solution of citric acid in quantity of 0.1% and solution of calcium salt in quantity of 0.2%, mixed for 10 minutes, heated to 75 °C and transformed into the form suitable for storage. Presence of polyvalent metal salt of food acid in the obtained gel provided improved consistency of the gel and prolongation of its shelf life. The gel from brown marine algae, obtained by the claimed method, is one of the most modern and quality biologically active products, intended for independent, complex and auxiliary therapy, support of human health and complex treatment of wide-spectrum diseases of gastrointestinal tract, cardiovascular and endocrine systems, has antioxidant and immunomodulating action, as well as improved organoleptic characteristics and minimal probability of side effects.

Method of gel manufacture from brown algae for dietary and medicinal and preventive nutrition
Technical Field
The invention relates to manufacture of food substance "Homogenized brown algae (laminaria and fucus) for dietary and medicinal and preventive nutrition", produced from species laminaria (tangle) and/or fucus.
Endemic brown marine algae grow in the Sea of Okhotsk and the Strait of Tartary of the Far East. It is an ecologically clean place on our planet, which is unique as for the variety of flora and fauna. The peculiarity of this comer of the world lies in the fact, that during boulder-period, when most of the globe was covered with an ice shell, in the Far East, beyond Sikhote Alin range, there was a territory, where soil, sea and ancient plants preserved in unchanged state until nowadays.

For many thousand years of life it was these species of algae that accumulated and preserved the richest composition of microelements and biologically active substances vital for human life.

There is a known method of obtaining dry extract via maceration of medicinal plants in water and further evaporation and drying of the condensed extract, providing that the mixture of medicinal plants, including thallome of brown algae laminaria, bur marigold, cowberry leaves, camomile flowers, motherwort, rose hips and buckthorn bark at a ratio of 4: 1: 1 : 1: 1 : 1 : 1, correspondingly, is extracted with water at a ratio of raw material : extractant of 1: 10-15 at 65-75 °C with stirring, first for 45 min; the extract is poured out; a fresh portion of the hot extractant is added to the raw material in the volume equal to that poured out, it is re-extracted under the same conditions; for the third time the extraction is carried out for 30 min, all three extracts are evaporated at 40-50 °C and pressure of 0.69 MPa (RU No 2000126420, 2002).
The disadvantage of this preparation is its weak consistency, instability
(delamination), poor biologic activity, presence of important contraindications and low attractivity as for its organoleptic characteristics.
There is a known method of obtaining the preparation containing brown algae - laminaria or its concentrate, garlic, sodium alginate and mannitol. The initial components are thoroughly mixed in claimed ratio and granulated with conventional method; the granulate is dried at temperature not exceeding 100 °C; finished product is obtained as 2 mm granules; the granulate is filled in 0.3 g capsules (RU No 2108108, 2000, prototype).
The disadvantage of this preparation is its weak consistency, poor storage stability, i.e., short (less then 30 days) shelf life of the product, poor biologic activity and limited range of functional clinical and preventive potential due to non-optimal technological process of manufacture, when sufficient amount of iodine organic complexes and calcium alginate are not formed, composition and ratio of components, short-term action, and low attractivity as for its organoleptic characteristics (unpleasant aftertaste). The important disadvantage of this preparation is poor assimilability of iodine being a part of its composition. For example, in the Far Eastern regions of Russia the population consuming plenty of seafood, including laminaria, is amenable to diseases typical for iodine deficiency almost to the same extent as in the European part. It is stipulated by the fact that consumption of products comprising iodine in natural state is not sufficiently effective. Such preparation, containing mainly iodine in natural state, is contraindicated in case of nephritis, hemorrhagic diathesis and other states, when iodine preparations are undesirable.

The technical task of the invention is the creation of effective and inexpensive biologically active broad spectrum preparation, as well as expansion of the arsenal of biologically active preparations.
The technical result, providing solution of the posed task, lies in obtaining of the preparation as a stable complex with prolonged shelf life, enhanced bioavailability and assimilability of iodine, prolonged action and extended range of clinical and preventive (functional) potential, including increased resistance of the organism in case of diseases of gastrointestinal system, cardiovascular and endocrine systems, as well as antioxidant and immunomodulating action, with improved organoleptic characteristics and minimal probability of side effects.
Unique and natural food product, gel from brown marine algae, obtained by this method, can be widely used in restorative medicine, in complex preventive, dietary and medicinal nutrition of patients.
The gel from brown marine algae is a food product that requires further scientific study; polysaccharides can be excreted from it on industrial scale:
fucoidan, which can penetrate tumour cell and inhibit its growth; laminaria, providing 30% of heparin anticoagulant action.
Fucoidan and laminaria inhibit and suspend overgrowth of smooth muscle cells in vascular wall, which is one of the most important elements in blocking of atherosclerotic plaque development, activate enzymes that take part in beta-oxidation of fatty acids, which in the first place promotes decrease in cholesterol, improvement of adipose and carbohydrate metabolism. Alginates (compose 35% of the gel from brown marine algae) have the unique property of enterosorbent, bind heavy metals, toxic and radioactive substances, forming complex aggregates with them.
Due to the fact that alginates are not digested and absorbed in the bowels, but excreted with faeces, the substances bound to it are easily excreted from the organism. It applies not only to toxins that inpour into human organism with food and water, but also to other toxic substances that get into lumen of the intestine from organs, tissues and blood.
The gel obtained by the claimed method is characterized by isotropy of physical-mechanical properties, hydrophilia, transparency, stability to external actions, plasticity and longevity.
The nature of the invention method of gel manufacture from brown algae providing cutting of the raw material, is, when thallomes from fresh brown algae are taken, rhizoids are cut, flushed with sea water and dried, then they are washed with fresh water at temperature 25-35 °C for 20-50 minutes with periodical stirring for uniform swelling at least by 30%, then algae are demineralized via embedding with 0.5% acid solution of the group: acetic, citric or hydrochloric acid, having pH=2.0, at mass ratio of algae and solution of 1 : 1.5 and allow to stand for 1-2 h, then flush from acid in fresh water for 10-12 minutes and macerate in drinking water at temperature 20-35 °C for 30-50 minutes with water change during maceration, and after the last flushing let the water drain for 10-20 minutes, flushed algae are minced and boiled after pouring with fresh water at temperature 75-85 °C at mass ratio of algae and water of 1 :1, add water solution of polyvalent metal salt of food acid in quantity not more than 1.5% of algae weight and sodium bicarbonate to achieve pH= 7.0 - 8.0, which is controlled during boiling that is carried out for 6- 10 h at temperature 70-80 °C with permanent stirring with a stirring apparatus with rotation rate of 15-25 rpm, then it is cooled to 35-45 °C and homogenized for 30 min exposing to hydroacoustic and hydrodynamic oscillations to obtain uniform homogeneous jelly consistency mainly with particle size of 5-45 μηι, then neutralized by introducing solutions of citric acid in quantity of 0.1% and dietary calcium salt in quantity of 0.2% of algae weight, and also introducing at least one element of the group: vanadium, iron, zinc, copper, molybdenum, chromium, manganese, silicon, cobalt, germanium in quantity of 0.01% of algae weight, thoroughly mixed for 10 minutes with rotation rate of 15-2000 rpm, heated to 75 °C and transformed into the form suitable for storage.
At the same time, wherein as brown algae there taken algae of the group: laminaria and fucus from the basin of the Okhotsk Sea, the Bering Sea or the Sea of Japan.
At that, wherein as the solution of polyvalent metal salt there used metal salt solution of the group of microelements or of the group of microelements, constituent of the human organism, for example, of the group: magnesium aspartate, zinc tartrate, iron citrate, magnesium carbonate, aluminum pyrophosphate, chromium pyrophosphate, and as the solution of dietary calcium salt there taken the solution of calcium lactate or calcium citrate.
Moreover, wherein rhizoids are cut manually or with rotating shear blade. In which connection, wherein thallomes are flushed with sea water in cascade or vortex washer or by shower method. At that, wherein if there is spirorbis on the surface of thallome, the cleaning is carried out with brushes, and dry algae are flushed in fresh water by shower method in the bath, washing off sand and salt. Besides, wherein salts of polyvalent metal are added in quantity established in terms of content of metal in finished products not more than 7 mg/kg.
Moreover, wherein for flushing there used natural drinking water with hardness up to 1 mole/m3 or softened (corrected) drinking water with pH not more than 7.8 and hardness up to 0.2 moIe/m3, flushed algae are minced with a mincing machine or pulping machine.
At that, wherein for boiling flushed algae are minced and poured with hot water in boiling pan with ratio of input heating power and operating volume equal 0.20-0.25 kilowatt/1, for example, in the reactor with thermostatically controlled jacket and an agitator having behind jacket space for heating with dry vapour, or in e ectr ic agitator kettle .
Besides, wherein at neutralizing flavour and aromatic additives are introduced into the mass, and as soon as pH = 7.0 - 8.0, immediately before boiling, amaranth or steviazide in quantity up to 1 mg per 1 % of algae weight is added.
In which connection,, wherein before transforming into the form suitable for storage, in obtained gel there should be controlled the content of iodine, which should be not less than 15 mg kg, carbohydrate fractions, which should be: mannitol - 133.4±12. I mg/g, alginic acid - 147.8±10.7 mg/g, as well as there should be checked hygienic characteristics in terms of toxic elements content: lead - not more than 0.5 mg/kg, arsenic - not more than 0.5 mg kg, cadmium - not more than 1.0 mg/kg, mercury - not more than 0.1 mg/kg, DDT - not more than 2.0 mg/kg, radionuclides - not more than 6 Ci/kg
At that, wherein for transforming into the form suitable for storage, the gel is packed hot or preliminary dried and drying is carried out with freeze-drying unit or vacuum drying unit or spray drying unit or convection drying unit, and prepared pasteurized mass is poured on trays or into pans in layers not more than 10 mm, which are put on the selves of the drying unit, where the mass undergoes drying until final humidity not more than 10%. At the same time sodium bicarbonate is an alkali-ash agent, crystalline powder, white, and odourless. Its chemical formula is NaHC03.
Sodium bicarbonate is an antacid. In case of internal use it interacts with HC1 of gastric juice, neutralizing it. It increases excretion of Na+ and C1-, osmotic diuresis; shifting the reaction of bronchial mucus to the alkaline side, increases bronchial secretion, decreases viscosity of the sputum and improves expectoration. It suppresses pain syndrome in case of gastric and duodenal ulcer.
Urine alkalescence prevents precipitation of uric acid in urinary tracts. Per se as a result of C02 neutralization reaction it can cause unpleasant feelings in the stomach and eructation.
Calcium citrate (citric calcium) (E331), chemical formula [OOCC(OH)(CH2COO)2]2Ca3*4H20 - tetrahydrous calcium citrate, is a calcium preparation, approved and recommended to use in food industry. The product is accompanied with sanitary-and-epidemiologic decision of the Ministry of Health of the Russian Federation (RF).
It is determined that calcium ions take part in excitation and contraction of myocytes support of cell penetrability, cell-cell interactions, blood coagulation, secretion of hormones, mediators, enzymes. Calcium ions function as the transformer of information coming into the cell, regulate intracellular metabolism, including energy. From extracellular space they get into protoplasm via special calcium channels, influencing different physiological processes of cell function of all organs, vessel tone, intensity of systole and diastole. Calcium ions play a significant part in formation and preserving of bone tissue. Calcium citrate replenishes the lack of calcium ions in the organism in case of functional (physiologically increased requirement as a result of growth, usual loss of blood in women, elution of bone calcium in elderly people, etc.) and pathological (traumas, haemorrhage, disorder of absorption in gastrointestinal tract, inability of calcium reabsorption in kidneys, etc.) insufficiency of organism replenishment with calcium ions. In case of use of the preparation per se there can be observed loss of appetite and stomachache.
Calcium lactate is a calcium preparation, approved and recommended to use in food industry. The product is accompanied with sanitary-and-epidemiologic decision of the Ministry of Health of the RF.
Calcium lactate regulates phosphoric and calcium metabolism, it has antiinflammatory, antirachitic, vitamin and hemostatic action. It accelerates all phases of blood coagulation, increases adhesion of platelets, and promotes rapid income of tissue thromboplastin into blood. Heartburn can be observed at use of the preparation.
Steviozide, natural sugar substitute, is an extract of honey herb stevia (Paraguay). Steviozide improves the work of cardiovascular, immune and other systems; thyroid gland, liver, kidneys, and spleen. It normalizes pressure, has antioxidant, adaptogenic, antiinflammatory, antiallergenic and mild choleretic action. It suppresses the development of many microorganisms and thus is recommended for oral cavity diseases: protects teeth from caries and gums from parodontosis, which is a frequent cause of teeth loss, including those in case of diabetes, it promotes prevention of bad breath. Steviozide is about 200-300 times sweeter than sugar, has no calories, and does not cause caries.
The process of manufacture comprises the following steps of processing.
1. Preparation of algae. As brown algae there taken algae of the group: laminaria and fucus from the basin of the Okhotsk Sea, the Sea of Japan or the Bering Sea, mainly endemic brown marine algae of the Okhotsk Sea and Strait of Tartary of the Far East, outside discharge zones of industrial and domestic waste. Algae extraction is carried out in accordance to Instructions No 6, approved by the order "DALRYBA" No 466 d/d July, 10, 1985.
There used algae - raw product or dried, approved for use in food industry by the State Sanitary and Epidemiological Service of the Russian Federation:
2. Cutting.
In fresh brown algae the thallomes (sea stem) are taken, rhizoids (nodes) are cut manually or with rotating shear blade. Unfit plants are excepted.
3. Washing.
Thallomes are flushed with sea water in cascade or vortex washer or by the shower method. If there is spirorbis (seashells) on the surface of thallome, the cleaning is carried out manually with brushes and further flushing.
After washing thallomes are put on the net tray for water draining and drying. Dried algae are washed with fresh water in the bath by the shower method washing off sand and salt. After that it is allowed to stand at temperature 25-35 °C for 20-50 minutes with periodic stirring for uniform swelling at least by 30%.
4. Demineralization
Algae are poured with 0.5% solution of acetic or citric or hydrochloric acid (pH=2.0) at mass ratio of algae: solution of 1 :1.5 and allowed to stand for 1-2 h.
5. Flushing.
After indicated period of time the algae are flushed to wash off the acid with fresh water by showering for 10 minutes and macerated in the bunker in drinking water at temperature 20-35 °C for 30-50 minutes with 1-2 change of water during maceration.
After the last flushing the container with algae is taken out of the bunker and allowed to drain for 10-20 minutes.
6. Mincing
Flushed algae are minced with mincing machine M-250, MUM-300, MUM-600, TLI2H (production of China) or with pulping machine MPR-350.01 and loaded into boiling pan.
7. Boiling.
Minced algae are loaded into boiling pan with ratio of input heating power and operating volume equal to 0.040-0.045 kilowatt/1, for example, in the reactor with volume of 1050 1, having electric heating units with power of 45 kilowatt and having behind jacket space for heating with dry vapour, or in electric agitator kettle (with similar ratio of electric heating units power and volume) and with thermostatically controlled jacket. Hot drinking water at temperature 75-85°C with ratio of algae weight of 1 : 1 is poured into the reactor, water solution of polyvalent metal salt of food acid (of the group: magnesium aspartate, zink tartrate, iron citrate, magnesium carbonate, aluminum pyrophosphate, chromium pyrophosphate) is added in quantity not more than 1.5% of algae weight and sodium bicarbonate is added to obtain pH=7.0 - 8.0, which is controlled during boiling, and steviozide up to 1 mg per each per cent of the weight. Boiling is carried out for 6-10 h at temperature 70-80°C with permanent stirring with a stirring apparatus with rotation rate of 15-25 rpm.
8. Homogenization.
After boiling is completed the obtained mass is cooled to 35-45°C and homogenized for 30 min, for example, with homogenizer of RPA type. Rotary pulsating apparatus (RPA) combines the principle of operation of hydrodynamic oscillation generator and centrifugal pump. With pulsating, percussive and hydrodynamic actions, with action of centrifugal force jointly with hydroacoustic and hydrodynamic oscillations, occurring in the RPA, there are changed physical-mechanical properties of the product, which transforms into most effective and suitable for organism uptake form. During the process of homogenization particles are minced to the size of about one micron, uniformly distributing in the mass of the product. With pulsating, percussive and hydrodynamic actions, jointly with hydroacoustic and hydrodynamic oscillations there take place the processes of dispersion, emulsification, dissolution, extraction, oxidation, and polymerization.
At the same time, intensive acoustical action results in eradication of bacteria and microorganisms at this stage. Released substances of peptide origin are able to regulate different stages of proliferation and differentiation of T-lymphocytes and lymphocytes, i.e. influence the links of immune response. Homogenized product does not stratifies at long-term storage, is suitable for transporting, preserving its physiological characteristics.
9. Neutralizing
Solutions of citric acid in quantity of 0.1% of the algae weight and 15-25% solution of calcium dietary salt in quantity of 0.2% of the algae weight are introduced into the homogenized mass. As the solution of calcium dietary salt there is introduced the solution of calcium lactate or calcium citrate. At this stage flavour and aromatic additives can be introduced (according to the specific formulation, for example, lemon- balm or caraway in quantity of 0.05% of algae weight).- he mass is thoroughly mixed for 10 minutes. During processing there occurs release of alginic acid, which is an intercellular substance and one of the components of alga cell walls. Introduced substances form complex compounds with products of alga homogenization, mainly sodium-calcium alginates, which are realized due to obtained molecular level of particle dispersiveness. Most of iodine is as iodineorganic compounds. As a result, the gel is a biologically active preparation, containing ions of Ca2+, Na+, K+ and CI- and quatarons, having spatial backbone skeleton from spirals of tie water molecules, where in antrums there are bound with water molecules via coordination bond and brought to a coherent state cluster information structures of the initial raw material with inherent in the latter typical frequency of excitation and absorption spectra in ultraviolet and blue part of the spectrum at 175 - 420 nm.
Synergetic action of the ingredients at optimally selected active dosage serve for prevention of secondary immunodeficiency, which develops due to stress, vaccination, radiation or chemotherapeutical treatment, placental transmission influenza virus to the fetus, as well as due to age-related changes of immune systems, that are the factors of disease development.
After that the mass is heated up to 75 °C (pasteurized) and transform into the form suitable for storage, pack hot or delivered for drying.
10. Drying.
For drying there used freeze-drying unit Rl-ISS-101, unit of TG-15 or TG-50 type (Germany) or vacuum drying unit SPT-200, spray drying unit "Niro atomizer" or convection drying unit IP- 120 (Hungary).
Prepared pasteurized mass is poured on trays or into pans in layers not more than 10 mm, which are put on the selves of the drying unit, where the mass undergoes drying. Final humidity of the product should not exceed 10%.
1 1. Packing.
1 1.1. Packing dry.
Final powder of the preparation is packed into heat-sealing filmy bags according to TU 15-1106-90 with critical mass 100 g or into another container from the materials approved for contact with food products by the State Sanitary and Epidemiological Service of the RF and providing safety of the product.
1 1.2. Packing hot.
The mass is packed hot with filler UD-2 or UFM in sealed containers and cooled.
Final gel contains 92-94% of water, 6-8% of dry substances, including alginic acid 5-6% in the form of sodium-calcium alginate, cellulose - 1-1.5%, protein - 1%, mineral micro- and macroelements: molybdenum (12x10 - 3%), manganese (4.4x10 - 3%), iron (13x10 - 3%), fucoidan, steviozide, solution of polyvalent metal salt of food acid, microelements, etc. Nitrous substances are represented by 17 amino acids, including 7 essential ones. The final product has elastic sliding consistency, pleasant sour-sweet taste and tonic aroma with notes of jasmine and mountain herbs. Preservation (stability) of properties has been controlled for 6-8 months of storage at temperature 8-12°C as for appearance - preservation of taste, colour, consistency and odour, absence of stratification, swelling, gas-formation. No changes of the mentioned indexes have been observed during storage.
Examples of practical use of the preparation - gel, obtained by the claimed method, are given below.
Example 1
The study of action of the gel, obtained by the claimed method, in case of diseases of gastrointestinal tract was carried out in the following groups of patients: patients of the test group - 32 individuals (28 men, 4 women) with average age 55 ± 7.8 years old. Control group - 28 individuals with average age 55 ±5.6 years old.
The patients complained of: nausea, eructation, heartburn, epigastric pain and heavy feeling in the right hypochondrium, intestinal upset as diarrhea or constipation. In laboratory studies in a number of patients have been found increased levels of AST, ALT, LDH and bilirubin due to indirect fraction. In coprogram there was an increased quantity of fatty acids. Coprogram indexes before and after use of the gel from brown marine algae (% of total number of cases).

Test group for 21 days along with conventional in similar cases medicinal preparations received 50±5 g of the gel, obtained by the claimed method, 30 min before meals in the morning and in the evening. 15 individuals of the total number received the product, produced only from laminaria, and as dietary calcium salt - lactate calcium, other 17 individuals - the product, produced from laminaria and fucus in mass ratio of 1 : 1, and as dietary calcium salt - citrate calcium, in this batch the composition of the product contained steviozide. Shelf life of these products was 6 months. Control group received only standard medicinal treatment and a known preparation, containing laminaria, - Lamisan-L.
Patients of the test group since day 5-7 of the course noted steady improvement of cenesthesia: normalization of the appetite, decreased heartburn, eructation, nausea, epigastric pain and heavy feeling in the right hypochondrium, and normalization of the stool. Subjective improvement was confirmed by positive dynamics of objective indexes in the test group. In 80 % of the patients at palpation dramatically decreased or was totally absent epigastric pain and in the area of duodenum bulb projection, as well as down the bowels and in the right hypochondrium. In the control group positive dynamics was less evident, improvement of patients' cenesthesia began, as a rule, in much later terms (10-18 days later). Such signs as heavy feeling in the right hypochondrium, skin itch, scelalgia, dyspepsia phenomena in the test group were arrested in shorter terms in comparison with patients of the control group. In biochemical analysis of the test group patients, receiving both variants of the product, total protein and bilirubin content had clear tendency towards normalization. In the control group positive chances were less evident and began in much later terms. Girdle pain, dyspepsia phenomena in test group patients were arrested in shorter terms in comparison with control group patients. None of the patients noted unpleasant gastric feelings and eructation, unpleasant aftertaste or other unpleasant phenomena.
In test group patients, receiving any of the mentioned product variants, by day 18- 21 there has been observed improvement of ultrasonic pattern of the liver. In the control group ultrasound data by that moment has not had significant changes. In most patients for further 3-4 months had no complains, typical for the moment of initiation of the course with intake of the gel, obtained by the claimed method.
Example 2
The study of antibacterial properties of the gel, obtained by the claimed method, was carried out in 32 patients, divided into two groups: the main group - 16 individuals and control group - 16 individuals. Average age of the patients (in both groups) was 52±1.6 years old. These groups were identical as for the age and disease standard in accordance with ICD (International Classification of Diseases) - 10.
At the beginning of the course, endoscopy in case of chronic constipation allowed to find bacterially conditioned structural changes of the large intestine mucous membrane, manifested as focal inflammatory (49.2%) changes, as well as presence of erosions on the mucous membrane of the large intestine (31.1%). Morphological changes of the large intestine mucous membrane were found in all patients. There were ratio distortions of opportunistic and saprophitic gut organisms; opportunistic microflora was sawn in 80.2% patients. In patients of the control and test groups in disbacteriosis faeces analysis there was found the presence of aurococcus and increased coli titer. Two individuals of the test group had nephritis, one - hemorrhagic diathesis.
The test group for 28 days along with conventional in similar cases medicinal preparations received 70±5g of the gel 30 min before meals in the morning and in the evening. The control group received only standard medicinal treatment. 8 individuals of the total number received the product with shelf life of 6 months, produced only from laminaria, and as dietary calcium salt - citrate calcium, in this batch the composition of the product contained steviozide. Other 9 individuals - the product with shelf life of 6.5 months, produced from laminaria and fucus in mass ratio of 1 :2, and as dietary calcium salt - lactate calcium.
Laboratory and instrument methods of treatment and examination were carried out according to the standards.
On the basis of endoscopic and morphological studies of the test group patients during the course revealed positive dynamics of changes of the large intestine mucous membrane, manifested as decrease of inflammatory (89.4%) and elimination of erosive changes of the large intestine mucous membrane (100%), decrease of cellular infiltration (74.8%) in the patients. Under the influence og the gel from brown marine algae chemical changes in the faeces normalized: PH normalized in 98.3% patients, organic acids and ammonia normalized in 98.5%, mucin preserved in the faeces only in 4.7% patients, tissue protein was not found. In all test group patients in shorter terms in comparison with the control group there occurred cicatrization of the ulcerous defect, cicatricial deformity was less evident. Positive dynamics of controlled indexes in nephritis and diathesis patients practically did not differ from the dynamics of other patients, worsening of other indexes was not found. The patients noted pleasant taste and order of the product, absence of unpleasant aftertaste. In most patients for further 4- 5 months had no signs of disbacteriosis and acute condition of the disease, typical for the moment of initiation of the course with intake of the gel, obtained by the claimed method.
Example 3
Efficiency evaluation of the treatment of iodine deficiency was carried out in two groups of pregnant women. Test group 1 of 47 individuals, control group 2 of 36 individuals.

There was found reliable differences in iodide content in blood before and after treatment iodine deficiency in women. The first group included 86 pregnant women, receiving complex treatment, appropriate to the form of anaemic state, and additionally iodine-containing medicinal and preventive product - gel from brown marine algae as 50±5 g of the gel 30 min before meals in the morning and in the evening for 12 days before every control study. 36 women of the total number received the product with shelf life of 5.5 months, produced only from laminaria, and as dietary calcium salt - citrate calcium, in this batch the composition of the product contained steviozide; other 26 women - the product with shelf life of 6 months, produced only from fucus, and as dietary calcium salt - lactate calcium, in this batch the composition of the product contained steviozide; other 24 women - the product with shelf life of 6 months, produced from laminaria and fucus in mass ratio of 2:1, and as dietary calcium salt - citrate calcium.
The second group . consisted of 65 pregnant women and also received complex treatment according to anaemia and one of the preparations, containing laminaria, - Laminarid or Lamisan-L (water concentrate of laminaria), practically equivalent to the prototype. The control was carried out via determination of iodide activity in whole blood with the method of direct potentiometry using ion-selective electrodes of the firm "SguShg" (Czech). The norm of these indexes is 20-50 μιηοΐε/ΐ. Initially complex clinical and laboratory study was carried out when registering in the maternity consulting centre in early pregnancy. Women having iodide content in blood of 12.32±2.23 μηιοΐε/ΐ before 12 week of pregnancy were selected in test and control groups. During the course complex clinical and laboratory studies were carried out on 16-24, 28-32, 34-38 week of pregnancy. In the first group at product intake - gel from brown marine algae, there was observed increase in iodide content in blood to indexes close to the lower limit of the norm. In women, receiving a known product, there was registered only insignificant index improvement, which remained significantly lower than the norm by the end of the course, i.e. iodine deficiency was insignificantly compensated. None of the patients, receiving the product, noted unpleasant aftertaste, unpleasant gastric feeling, loss of appetite, stomachache. Improvement of indexes in the test group in all women, receiving any variant of the product, was stable and preserved during the periods between courses of product intake.
Example 4
Efficiency evaluation of the treatment in patients with cardiovascular diseases was carried out in two groups. Group 1 of 34 individuals (men and women) - test, group 2 of 30 individuals (men and women) - control.
The first group for 45 days received complex treatment and medicinal and preventive product - gel from brown marine algae, obtained by the claimed method, as 50±5 g of the gel 30 min before meals in the morning and in the evening. 16 individuals of the total number received the product with shelf life of 6 months, produced only from laminaria, and as dietary calcium salt - citrate calcium, in this batch the composition of the product contained steviozide, other 18 individuals - the product with shelf life of 6.5 months, produced from laminaria and fucus in mass ratio of 2: 1, and as dietary calcium salt - lactate calcium.
The second group received complex treatment and one of the known preparations, containing laminaria, - Laminarid or Lamisan-L.
Changes of indexes of lipid and carbohydrate metabolism, ABD level and prothrombin index in patients with cardiovascular diseases under the influence of oral intake of the gel from brown marine algae.

The results presented in the table above demonstrate more effective normalizing influence of the preparation, obtained by the claimed method, on pathogenetic links of cardiovascular diseases, seen in patients, receiving any of the product variants. Control analyses, done in 3 and 6 months after completion of the course, demonstrated that indicated indexes changed insignificantly in comparison with the moment of completion of the course. Patients notes pleasant taste and odour of the product, absence of dyspeptic phenomena and unpleasant aftertaste.
Examples listed above and other studies evidently prove medicinal properties of different components of the gel from brown marine algae with microelements, obtained by the claimed method, as well as its potential in restorative medicine as an agent of general health improvement of the organism and preserving and increasing health reserve, and also as a product, used in complex therapy of diseases. Negative sequences after preparation's intake have not been revealed, i.e. side effects (being the reason for determining contraindications) have not been revealed. Presence of the polyvalent metal salt of food acid in the finished gel provides improvement of the gel's consistency and prolongation of its shelf life. The result of preparation's intake preserves for a period at least 3 times exceeding the period of the course. Proved by the studies at temperature 5-12°C, the term of total preservation of the properties is 9 months.
The most efficient was the use of the gel from brown marine algae, obtained by the claimed method, in complex treatment of the patients in the following clinical groups:
CHD. Atherosclerotic cardiosclerosis. Arterial hypertension Postinfarction cardiosclerosis.
It is recommended to use food product - gel from brown marine algae as medicinal and preventive nutrition in complex treatment of patients with endocrinological pathology.
Thyroid gland pathology. Hypothyroidism.
Diabetes mellitus of type I and II and vascular complications of diabetes mellitus.
Obtained results of the study provide grounds to recommend food product - gel from brown marine algae, obtained by the claimed method, as dietary and medicinal and preventive nutrition in case of diseases of gastrointestinal tract, chronic constipation, intestinal dysbacteriosis, as well as in case of the following diseases:
gastric ulcer, duodenum bulb ulcer, chronic gastritis, intestinal dysbacteriosis, chronic non-specific ulcerative colitis, chronic hepatitis, liver cirrhosis, chronic pancreatitis.
External use of the gel is possible as application on joint regions, on the surface of varicose veins 2-3 times a day per se or in combination with other ointments (preliminary mixed them at a ratio of 1 : 10), the course of treatment is 1-2 months.
For hemorrhoids and anal fissures the gel can be used as applications in the region of fissures and introduction into the rectum, such procedures are recommended to do in the evening (before going to bed) and to combine them with preliminary introduction of herbal microclysters.
It is recommended to combine the course of treatment with the gel from brown marine algae with taking a bath. Usually good effect is seen after taking 1 -2 bathes a week for 3-4 months as during this period there occurs rejuvenation of the body skin, enchancement of its turgor and elasticity.
The gel from brown marine algae, obtained by the claimed method, is one of the most modern and quality biologically active products, intended for independent, complex and auxiliary therapy, support of human health and complex treatment of wide-spectrum diseases of gastrointestinal tract, cardiovascular and endocrine systems, it has antioxidant and immunomodulating action, as well as improved organoleptic characteristics and minimal probability of side effects.
So, there has been created effective and inexpensive biologically active broad spectrum preparation, as well as the arsenal of biologically active preparations has been expanded.
At the same time the preparation is obtained as a stable complex with prolonged shelf life, enhanced bioavailability and assimilability of iodine, prolonged action and extended range of clinical and preventive (functional) potential, including increased resistance of the organism in case of diseases of gastrointestinal system, cardiovascular and endocrine systems, as well as antioxidant and immunomodulating action, with improved organoleptic characteristics and minimal probability of side effects.

Claims
1. The method of gel manufacture from brown algae providing cutting of the raw material when thallomes from fresh brown algae are taken, rhizoids are cut, flushed with sea water and dried, then they are washed with fresh water at temperature 25-35 °C for 20-50 minutes with periodical stirring for uniform swelling at least by 30%, then algae are demineralized via embedding with 0.5% acid solution of the group: acetic, citric or hydrochloric acid, having pH=2.0, at mass ratio of algae and solution of 1 : 1.5 and allow to stand for 1-2 h, then flush from acid in fresh water for 10-12 minutes and macerate in drinking water at temperature 20-35 °C for 30-50 minutes with water change during maceration, and after the last flushing let the water drain for 10-20 minutes, flushed algae are minced and boiled after pouring with fresh water at temperature 75-85 °C at mass ratio of algae and water of 1 : 1, add water solution of polyvalent metal salt of food acid in quantity not more than 1.5% of algae weight and sodium bicarbonate to achieve pH= 7.0 - 8 0, which is controlled during boiling that is carried out for 6-10 h at temperature 70-80 °C with permanent stirring with a stirring apparatus with rotation rate of 15-25 rpm, then it is cooled to 35-45 °C and homogenized for 30 min exposing to hydroacoustic and hydrodynamic oscillations to obtain uniform homogeneous jelly consistency mainly with particle size of 5-45 μη , then neutralized by introducing solutions of citric acid in quantity of 0.1% and dietary calcium salt in quantity of 0.2% of algae weight, and also introducing at least one element of the group: vanadium, iron, zinc, copper, molybdenum, chromium, manganese, silicon, cobalt, germanium in quantity of 0.01% of algae weight, thoroughly mixed for 10 minutes with rotation rate of 15- 2000 rpm, heated to 75 °C and transformed into the form suitable for storage.
2. The method of claim 1, wherein as brown algae there taken algae of the group: laminaria and fucus from the basin of the Okhotsk Sea, the Bering Sea or the Sea of Japan.
3. The method of any one of claims 1 to 2, wherein as the solution of polyvalent metal salt there used metal salt solution of the group of microelements or of the group of microelements, constituent of the human organism, for example, of the group: magnesium aspartate, zinc tartrate, iron citrate, magnesium carbonate, aluminum pyrophosphate, chromium pyrophosphate, and as the solution of dietary calcium salt there taken the solution of calcium lactate or calcium citrate.
4. The method of any one of claims 1 to 2, wherein rhizoids are cut manually or with rotating shear blade.
5. The method of any one of claims 1 to 2, wherein thallomes are flushed with sea water in cascade or vortex washer or by shower method.
6. The method of any one of claims 1 to 2, wherein if there is spirorbis on the surface of thallome, the cleaning is carried out with brushes, and dry algae are flushed in fresh water by shower method in the bath, washing off sand and salt.
7. The method of any one of claims 1 to 2, wherein salts of polyvalent metal are added in quantity established in terms of content of metal in finished products not more than 7 mg/kg.
8. The method of any one of claims 1 to 2, wherein for flushing there used natural drinking water with hardness up to 1 mole/m3 or softened (corrected) drinking water with pH not more than 7.8 and hardness up to 0.2 mole/m3, flushed algae are minced with a mincing machine or pulping machine.
9. The method of any one of claims 1 to 2, wherein for boiling flushed algae are minced and poured with hot water in boiling pan with ratio of input heating power and operating volume equal 0.20-0.25 kilowatt/1, for example, in the reactor with thermostatically controlled jacket and an agitator having behind jacket space for heating with dry vapour, or in electric agitator kettle.
10. The method of any one of claims 1 to 2, wherein at neutralizing flavour and aromatic additives are introduced into the mass, and as soon as pH = 7.0 - 8.0, immediately before boiling, amaranth or steviazide in quantity up to 1 mg per 1% of algae weight is added.

The method of any one of claims 1 to 2, wherein before transforming into the form suitable for storage, in obtained gel there should be controlled the content of iodine, which should be not less than 15 mg/kg, carbohydrate fractions, which should be: mannitol - 133.4=1=12.1 mg/g, alginic acid - 147.8±10.7 mg/g, as well as there should be checked hygienic characteristics in terms of toxic elements content: lead - not more than 0.5 mg/kg, arsenic - not more than 0.5 mg/kg, cadmium - not more than 1.0 mg/kg, mercury - not more than 0.1 mg/kg, DDT - not more than 2.0 mg/kg, radionuclides - not more than 6 Ci/kg
12. The method of claim 11, wherein for transforming into the form suitable for storage, the gel is packed hot or preliminary dried and drying is carried out with freeze-drying unit or vacuum drying unit or spray drying unit or convection drying unit, and prepared pasteurized mass is poured on trays or into pans in layers not more than 10 mm, which are put on the selves of the drying unit, where the mass undergoes drying until final humidity not more than 10%.
