本発明は、カルシウムイオンにより乳風味が改善された水中油型乳化物に関する。
 植物性油脂などを使用した、各種の水中油型乳化物が市販されているが、風味をさらに向上させるべく、各種の検討がなされている。特許文献1(特開2000-333602号公報)は請求項1に「油相が20~50重量%及び水相が50~80重量%からなる水中油型乳化油脂組成物であり、無脂乳固形分当たりのカルシウム含量が200~950mg重量%となるように調整した乳成分及び乳由来のリン脂質を含有することを特徴とする水中油型乳化油脂組成物。」と記載されている。これにより、「乳化剤、クエン酸塩やリン酸塩等の塩類、カゼイネート等を添加することなく、乳化性、ホイップ性及び風味の良好な水中油型乳化油脂組成物を製造する」ことができると記載されている。
しかしながらこの課題を達成するためには、その請求項1にあるとおり、「無脂乳固形分当たりのカルシウム含量が200~950mg重量%となるように調整した」と記載される、カルシウム量を減らした特殊な乳成分が必要で、かつ、「乳由来のリン脂質」も必要であり、汎用性は低い。特許文献1においては、通常の脱脂粉乳の無脂乳固形分当たりのカルシウム含量は1100mg重量%と記載される一方、効果のポイントとして「カルシウム含量を200~950mg重量%となるように調整」することが良好な結果を得るとされており、カルシウムを増やすことによる風味的効果に関する記述はない。

本発明の目的は、起泡性水中油型乳化物において、少ないコストでかつ簡易な方法で乳風味を向上させた製品および、その製造法を提供することにある。
本発明者は上記の課題に対して、従来、風味との関連において考慮されてこなかった金属イオンに着目し、鋭意検討を重ねた。すると不思議なことに、起泡性水中油型乳化物の遠心分離した水相部に含まれる一定量のカルシウムイオンが、その乳風味を強める効果があることを見出し、本発明を完成するに至った。
即ち、本発明は
(1)乳に由来する蛋白を0.5~3重量%含有し、遠心分離した水相部に含まれるカルシウムイオンが30~100mg/100gに調整された、油脂含量15~50重量%の起泡性水中油型乳化物。
(2)乳に由来する蛋白を含む原料がクリーム、バター、チーズ、濃縮ホエイ、濃縮乳、脱脂濃縮乳、無糖練乳、無糖脱脂練乳、加糖練乳、加糖脱脂練乳、全粉乳、脱脂粉乳、クリームパウダー、ホエイパウダー、たんぱく質濃縮ホエイパウダー、バターミルクパウダー、加糖粉乳、調製粉乳、発酵乳、カゼインナトリウム、生乳、脱脂乳から選ばれる1種以上である、(1)記載の起泡性水中油型乳化物。
(3)乳に由来する蛋白を0.5~3重量%、および溶融塩を0.05~0.3重量%(結晶水を除く)配合し、遠心分離した水相部に含まれるカルシウムイオンが30~100mg/100gに調整された、油脂含量15~50重量%の起泡性水中油型乳化物の製造法。
(4)溶融塩がヘキサメタリン酸ナトリウム、第二リン酸ナトリウム、ポリリン酸ナトリウム、クエン酸ナトリウムから選ばれる1種以上である、(3)に記載の起泡性水中油型乳化物の製造法。

本発明によれば、一般的な原材料を使用する水中油型乳化物において、少ないコストで乳風味を強化することができる。すなわち、水中油型乳化物の遠心上清にカルシウムイオンを一定量含有することで、水中油型乳化物の乳味感を強める効果がある。また脱イオン処理した水を併用することで、その効果はより顕著に現れる。

 本発明で言う溶融塩とは溶融剤とも称せられ、乳に由来する蛋白の溶解を促進するために使用するクエン酸塩やリン酸塩のことである。溶融塩の種類は特に限定されないが、リン酸塩としては正リン酸塩および縮合リン酸塩があり、正リン酸塩としては第二リン酸ナトリウム、縮合リン酸塩としてはポリリン酸ナトリウム、ヘキサメタリン酸ナトリウムが上げられる。またクエン酸塩としてはクエン酸ナトリウムがあげられる。本発明ではこれらのうちの1種類以上を使用することが好適であり、ポリリン酸ナトリウム、ヘキサメタリン酸ナトリウム、クエン酸ナトリウムから選ばれる1種類以上を使用することがより望ましく、ポリリン酸ナトリウム、ヘキサメタリン酸ナトリウムから選ばれる1種類以上を使用することが更に望ましい。溶融塩の量は配合中に0.05~0.3重量%(結晶水を除く)が望ましく、より望ましくは0.07~0.25重量%(結晶水を除く)であり、さらに望ましくは0.08~0.2重量%(結晶水を除く)である。
たとえば第二リン酸ナトリウム(Na2HPO4)では、無水結晶と12分子の水を含む結晶が存在し、分子量は前者は約142であり、後者は約358と倍以上の差がある。しかしながら結晶中に存在する水には溶融塩としての作用は期待できないので、結晶水は除いた量で規定したものである。よって、実際の使用に際しては、無水結晶であっても含水結晶であっても、無水結晶換算での量を規定量にわわせることで、使用することができる。
 溶融塩が少なすぎると、乳化安定性が悪くなり、起泡性水中油型乳化物としての流通が難しくなる場合もある。すなわち起泡性水中油型乳化物においては、流通時には振動等を受けても乳化破壊されない乳化安定性を必要とする一方、客先でホイップされる際には、容易に乳化破壊され、含気する必要がある。乳蛋白はこのような性質を実現するのに好適であるが、そのためには溶融塩にて乳蛋白の溶解を補助することが有利である。一方、溶融塩が多すぎると、溶融塩自体に由来する不味が知覚され好ましくない場合もある。なお、乳に由来する蛋白の添加量や、乳に由来する蛋白を含む原料の種類によっては、溶融塩は必要でない場合もある。いずれにせよ、本願発明のポイントは一定範囲の量のカルシウムイオンの存在による乳風味の強化であり、そのために一定範囲量の乳蛋白が必要であるが、溶融塩は乳に由来する蛋白の併用において、必要により溶解を促進させるための一つの手段である。
 本発明の「遠心分離した水相部」とは、得られた水中油型乳化物を遠心分離して得られる水相部をさす。遠心分離の方法は特に限定されないが、遠心分離後の水相部の吸光度がOD610で10以下となる必要がある。水相部の吸光度が10を超えると、その後のカルシウムイオンの測定を正確に行うことができなくなる場合がある。
水中油型乳化物を遠心分離した後に、水相部のカルシウムイオン量を測定するが、本発明においては「Viscolor ECO Calcium」(セントラル科学貿易扱い)を使用した。これは「マグネシウム塩沈降後の錯体滴定」による測定キットであり、本キットに限らず、「マグネシウム塩沈降後の錯体滴定」であれば適用可能である。遠心分離後の水相部に含まれるカルシウムイオンは30~100mg/100gであり、より望ましくは34~80mg/100gであり、更に望ましくは45~70mg/100gである。カルシウムイオンの量が少なすぎると、カルシウムイオンによる乳風味増強効果が乏しくなる場合があり、またカルシウムイオンの量が多すぎると、塩味などの異味を感じられる場合もある。また、上記のようなカルシウムイオン量とするためには、水溶性カルシウム塩の使用が好適である。具体的には乳酸カルシウム、塩化カルシウムから選ばれる1種以上の使用が好適である。
 なお、本願発明におけるカルシウムは、食する際にイオンとして存在することが重要である。食する際にイオンとして存在して初めて味蕾を刺激し、乳風味の向上につながると考えられる。
 本発明に使用する油脂としては、大豆油、綿実油、コーン油、サフラワー油、オリーブ油、パーム油、ヒマワリ油、菜種油、米ぬか油、ゴマ油、カポック油、ヤシ油、パーム核油、乳脂、ラード、魚油、鯨油等の各種の動植物油脂及びそれらの硬化油、分別油、エステル交換油等の加工油脂(融点1 5 ~ 4 0 ℃ 程度のもの) が例示できる。これらの油脂を目的により適宜配合し使用する。カルシウムイオンの影響による乳風味向上の効果に関しては、油脂を植物性油脂のみとするか、もしくは乳脂を使用する場合も水中油型乳化物中7重量%以下に抑えると、その効果がより顕著に現れる傾向がある。
 油脂の量は起泡性水中油型乳化物中15~50重量%であり、より望ましくは20~45重量%である。油分が少なすぎると、風味の乏しい起泡性水中油型乳化物となる場合がある。また、油分が多すぎると、起泡性等の物性に悪影響を与える場合もある。
 本発明のおける、原料を添加する前の水としては各種の水を使用することができるが、事前に脱イオン処理した水を使用した場合は、カルシウムイオンによる乳風味向上効果がより顕著に現れ好適である。具体的には、25℃での導電率0.00548~0.1mS/mに脱イオン処理された水を使用することが望ましい。脱イオン処理法としてはイオン交換樹脂による方法や、RO膜処理が望ましい。25℃での導電率が高すぎる場合は、脱イオン処理が不十分であり、脱イオン処理することによる効果が得られにくくなる場合がある。一方、はじめからカルシウムイオンを適当量含む水を使用することもできる。
 本発明においては他に、重曹や香料、乳化剤などを、本発明の効果に影響を与えない範囲であれば、適宜使用することができる。
 以下、具体的な水中油型乳化物の調製法を説明する。

 使用する原材料の種類により、調製方法は若干異なるが、代表的な配合として「乳に由来する蛋白」を含む原材料として脱脂粉乳を、また溶融塩としてヘキサメタリン酸ナトリウムを、カルシウム塩として乳酸カルシウムを使用する場合を説明する。
 水は概略3等分(A,B,C)する。水Aに乳酸カルシウムを溶解する。また水Bにヘキサメタリン酸ナトリウムや、溶融塩以外の塩類を溶解する。脱脂粉乳は油脂へ分散した後、攪拌しながら水Cを添加して乳化物Dとする。乳化物Dに水A,水Bを混合し、調合液とする。ここで、カルシウムイオンがはじめから存在する水を使用する場合は、カルシウム塩を溶解するための水Aはそのほかの水に適宜割り振ればよく、また、「乳に由来する蛋白」を含む原材料として、脱脂濃縮乳などの液状の原材料を使用する場合は、水Cは必ずしも必要ではなく、適宜それ以外の水に割り振ればよい。また、乳化物Dに混合する前に、AとBを混合することは好ましくなく、乳化物Dに対し、AとBをそれぞれ添加、混合すべきである。また、乳化物Dへは、A,Bの順に添加することが好ましい。
 得られた調合液は60~70℃の状態で約30分程度攪拌する。これを、必要によりホモゲナイザーにより0 ~ 2 5 MP a の条件下にて均質化する。次いで超高温瞬間殺菌処理(UHT)した後、再度、ホモゲナイザーにて0~50MPaの条件下にて均質化し、冷却後、約24時間以上エージングする。
以下に実施例を記載する。%は特に指定しない限り、重量%である。
テスト1:金属の種類の検討
「実施例1、比較例1~4」
各種塩類を塩化物の形で、各金属で同等程度量モル添加して水中油型乳化物を調製し、風味の確認を行った。

比較例1はコントロールとしての位置づけの配合である。実施例1、比較例2、比較例3、比較例4はそれぞれ、カルシウム塩、カリウム塩、ナトリウム塩、マグネシウム塩を、各金属が水中油型乳化物100gに約1.1mmole添加されるように配合したものである。
配合は表1の通り。
脱イオン水は、イオン交換樹脂により処理を行ったものである。使用したイオン交換樹脂は、三菱樹脂株式会社製SK1B,SA11AおよびSK1AとSA11A混合物である。イオン交換樹脂による処理後の導電率は25℃で0.006mS/mであった。

調製手順

脱イオン水は概略3等分(A,B,C)し、Aには塩化カルシウム、塩化カリウム、塩化ナトリウム、塩化マグネシウムをそれぞれ溶解した。Bにはヘキサメタリン酸ナトリウムおよび重曹を溶解した。
油脂は70℃程度で完全に溶解し、レシチンを溶解した。そこへ脱脂粉乳を添加し、分散した。さらにシュガーエステル(エステルS570)を添加した。そこへ水Cを加え攪拌した。さらに、Aを加えた後、5分程度攪拌し、Bを加えた。その後、60~70℃で30分間攪拌した。
得られた調合液を144℃4秒超高温瞬間殺菌処理した後、45MPaの圧力にてホモゲナイザー処理し、その後5℃へ冷却し24時間エージングした。

水相部に含まれるカルシウムイオンの定量
得られた水中油型乳化物を遠心分離チューブへ入れ、国産遠心器株式会社製遠心分離器H200を用い、9000rpmにて1時間遠心分離した後、3~7℃に設定した冷蔵庫に12時間保管した。その後、水相部をピペットを用い分離した。この水相部の610nmにおける吸光度を島津製作所製分光光度計UV-1600にて光路長1cmのセルを用い測定したところ、7.1であった。また、この水相部に含まれる固形分は4.55重量%であった。
この水相部のカルシウムイオン量を「Viscolor ECO Calcium」(セントラル科学貿易扱い)を用い測定した。
風味評価
水中油型乳化物1Kgにグラニュー糖80g加えてホバートミキサー(HOBART CORPORATION製 MODEL N-5)3速(300rpm)にて、オーバーラン85~150%程度までホイップし、風味評価を行った。風味評価はパネラー5名にて、コントロールを3点とし、最も好ましいものを5点、最も好ましくないものを1点とし、その平均にて表した。4点以上を効果ありと判断した。
結果
表2の通り、カルシウム塩を加えたものが最も良好な風味を示し、好ましかった。それ以外のものは、乳味が弱かったり、不味であったりなど好ましくなかった。

表3に示すとおり各種のカルシウム塩を用い水中油型乳化物を調製し、評価を行った。調製方法および評価方法はテスト1と同様である。結果を表4に示す。

表4に示すとおり、カルシウム塩の中でも水溶性カルシウム塩である乳酸カルシウム、塩化カルシウムが好適であった。難溶性カルシウム塩である炭酸カルシウムを使用した比較例5は、表3に示すとおり水相部中のカルシウムイオン量が低く、効果が低いと想定される。一方、添加量0.1%であっても粉っぽさが感知されており、これ以上の添加は食感の点から難しいと想定される。
テスト3:カルシウム量の検討
「実施例(2)~4、比較例6」
表5に示すように、カルシウムの量を変えて水中油型乳化物を調製し、評価を行った。調製方法および評価方法はテスト1と同様である。結果を表6に示す。

表6に示すとおり、遠心分離した水相部に含まれるカルシウムイオンが30~100mg/100gの範囲において、好ましい風味の水中油型乳化物が得られた。
テスト4:各種溶融塩等の検討
「実施例5~9」
表7に示すとおり、使用する溶融塩を変え、水中油型乳化物の調製を行った。また、脱イオン水の代わりに水道水を使用し調製を行った。調製方法および評価方法はテスト1と同様である。結果を表8に示す。

表8に示すとおり、溶融塩としてヘキサメタリン酸ナトリウム、クエン酸3ナトリウム、第二リン酸ナトリウム、ポリリン酸ナトリウムを使用したものでも、カルシウムイオンによる効果が確認された。また、実施例5は重曹を配合しない系であるが、これもカルシウムイオンによる効果が確認された。脱イオン水の代わりに水道水を使用したものも、カルシウムイオンによる効果が確認された。なお、使用した水道水の25℃における導電率は7.06mS/mであった。
テスト5:各種乳成分の検討
「実施例10~12」
表9に示すとおり、本願発明へ各種乳成分を併用し水中油型乳化物を調製した。調製方法及び評価方法はテスト1と同様である。結果を表10に示す。

表10に示すとおり、各種乳成分とも、良好な風味が得られた。


テスト6:乳に由来する蛋白の量の検討
「実施例13~14、比較例7」
表11に示すとおり、脱脂粉乳にて各種添加量にて起泡性水中油型乳化物を調製した。調製方法及び評価方法はテスト1と同様である。結果を表12に示す。

表12に示すとおり、配合中の乳由来蛋白量が1.0%(実施例13)、2.7%(実施例14)の場合には、風味良好な起泡性水中油型乳化物を得ることができた。一方、配合中の乳由来蛋白量が4.1%(比較例7)の場合は、乳蛋白に由来すると思われる凝集物が発生し、起泡性水中油型乳化物を得ることができなかった。
テスト7:カルシウムイオンを含む水による検討
「実施例15」
表13に示すとおり、カルシウムイオンを含む水を使用して起泡性水中油型乳化物を調製した。調製方法及び評価方法はテスト1と同様である。結果を表14に示す。

表14に示すとおり、カルシウムイオンを含む水を使用することによっても、風味良好な起泡性水中油型乳化物を得ることができた。
本発明により、水中油型乳化物において、少ないコストでその乳味感を補強することが可能となり、廉価で風味良好な水中油型乳化物を供給することができるようになることから、産業上大いに貢献するものである。

Claims (7)

  1. 乳に由来する蛋白を0.5~3重量%含有し、遠心分離した水相部に含まれるカルシウムイオンが30~100mg/100gに調整された、油脂含量15~50重量%の起泡性水中油型乳化物。
  2. 乳に由来する蛋白を含む原料がクリーム、バター、チーズ、濃縮ホエイ、濃縮乳、脱脂濃縮乳、無糖練乳、無糖脱脂練乳、加糖練乳、加糖脱脂練乳、全粉乳、脱脂粉乳、クリームパウダー、ホエイパウダー、たんぱく質濃縮ホエイパウダー、バターミルクパウダー、加糖粉乳、調製粉乳、発酵乳、カゼインナトリウム、生乳、脱脂乳から選ばれる1種以上である、請求項1記載の起泡性水中油型乳化物。
  3. 乳に由来する蛋白を0.5~3重量%、および溶融塩を0.05~0.3重量%(結晶水を除く)配合し、遠心分離した水相部に含まれるカルシウムイオンが30~100mg/100gに調整された、油脂含量15~50重量%の起泡性水中油型乳化物の製造法。
  4. 溶融塩がヘキサメタリン酸ナトリウム、第二リン酸ナトリウム、ポリリン酸ナトリウム、クエン酸ナトリウムから選ばれる1種以上である、請求項3に記載の起泡性水中油型乳化物の製造法。
  5. 乳酸カルシウム、塩化カルシウムから選ばれる1種以上を原料として使用する、請求項3~4いずれか1項に記載の起泡性水中油型乳化物の製造法。
  6. カルシウムを含む水を使用する、請求項3~5いずれか1項に記載の、起泡性水中油型乳化物の製造法。
  7. 原料を添加する前の水として、25℃での導電率0.00548~0.1mS/mに脱イオン処理された水を使用する、請求項3~6いずれか1項に記載の起泡性水中油型乳化物の製造法。
