Abstract

 製品のロスを減少させ且つ製品コストを軽減することができる素材片凍結方法、素材片輸送又は保管方法、素材片加工方法、及び素材片凍結物を提供する。本発明による素材片凍結方法は、食品の素材片に油をまぶす工程と、素材片を、油の融点よりも高い温度で急速凍結させる工程と、油を、急速凍結させた素材片と一緒に油の融点よりも低い温度で凍結させる工程とを有する。また、本発明による素材片凍結物(1)は、凍結した食品素材片(2)と、食品素材片(2)にまぶされ且つ食品素材片(2)の凍結温度よりも低い融点を有する油(4)と有する。
