Abstract

 本発明は大豆蛋白質、水及び油脂を含む液状組成物の製造後、保存中に油分分離の発生を抑えるための手段を提供することを課題とする。  大豆蛋白質、油脂及び水の乳化を安定化させる乳化剤として、水分の多いO/W乳化系で通常使用されることの多い親水性乳化剤でなく、一般的にはマーガリンやバターなどのW/O型エマルジョンの乳化によく使用される親油性乳化剤を使用することにより、大豆蛋白質と油脂を含有する大豆蛋白質含有液状組成物の保存中における油分分離が抑制されるこという知見を得ることができ、上記課題を解決するに至った。
