Abstract
PURPOSE: To obtain a potage soup having improved dispersibility and storage stability, by adding sodium caseinate and a hydrophilic emulsifier or sodium caseinate and a lipophilic emulsifier and dextrin to a soybean milk.
CONSTITUTION: Sodium caseinate and a hydrophilic emulsifier having an HLB (hydrophilic-lipophilic balance) of 9W16 or sodium caseinate and a lipophilic emulsifier having an HLB of 3W6 and dextrin having a DE (dextrose equivalent) of 5W15 are added to a soybean milk. The potage soup thus obtained is spray dried into a powder or granule, and if necessary a small amount of water is used to give a concentrated paste. A low-molecular weight dextrin having a DE>15 is less effective, and a high-molecular weight dextrin having a DE<5 is powdery to deteriorate the flavor of the product, and causes the deterioration of the effect due to aging undesirably.
