Abstract

 動物蛋白加水分解物の代替となる調味料を提供する。  遊離型プロリンを遊離型アミノ酸組成の8.0%以上含み、コラーゲン又はゼラチンを使用していない、調味料組成物;遊離型プロリンを遊離型アミノ酸組成の6.0%以上、及び遊離型グリシンを5.0%以上含み、コラーゲン又はゼラチンを使用していない、調味料組成物;遊離型プロリンを遊離型アミノ酸組成の8.0%以上含む、酵母エキス;酵母エキスを含み、かつ遊離型プロリンを遊離型アミノ酸組成の6.0%以上、及び遊離型グリシンを遊離型アミノ酸組成の5.0%以上含む、調味料組成物等による。本発明はまた、そのような調味料組成物及び酵母エキスの製造のための酵母も提供する。
