La présente invention est relative à la fabrication d'un fromage enrobé, du type comprenant au moins une ganse d'ouverture facile. On connaît un fromage enrobé constitué d'un fromage à pâte souple dont la fermeté va de souple à ferme, c'est-à-dire dont la fermeté mesurée selon les méthodes standards est supérieure à 1 Newton, enrobé dans un matériau de protection constitué soit d'une cire, soit d'un polymère non comestible, soit encore d'un matériau comestible. Afin de faciliter l'élimination des enrobages au moment de la consommation, le fromage enrobé comporte une aide d'arrachage appelée ganse, placée sur le pourtour du fromage et immergée dans l'enrobage. Les extrémités de cette ganse dépassent de l'enrobage afin de servir d'organe de préhension. Ces bandes d'arrachage ou ganse sont constituées d'un matériau souple. Pour fabriquer un tel fromage enrobé, le fromage nu est entouré à l'aide d'une portion de ruban mince conformé en U et de longueur notablement supérieure à celle nécessitée par son entourage. Le fromage supporté par le ruban conformé en U est suspendu et trempé dans un bain d'enrobage une première fois, éventuellement une deuxième fois, puis est refroidi dans de l'eau froide afin de faire solidifier la couche d'enrobage. Lorsque la couche d'enrobage est solidifiée, les deux bras du ruban sont coupés au-delà de la zone dans laquelle ils ont été imprégnés de matière. Ce procédé est bien adapté à la pose de ganse en matériau souple sur les produits de forme simple et symétrique du type de sphère aplatie et dont le poids est supérieur à 20 grammes. Mais il présente l'inconvénient de ne pas être adapté à des formats plus petits ou à des fromages ayant des formes complexes, notamment des formes asymétriques, telles que par exemple des figurines, ou encore des fromages dans lesquels on veut disposer un organe de préhension tel qu'un bâtonnet.
Le but de la présente invention est de remédier à cet inconvénient, en proposant un moyen permettant de fabriquer des fromages enrobés de petites dimensions ou de formes complexes ou comportant un moyen de préhension. A cet effet l'invention a pour objet un procédé de fabrication d'un fromage enrobé du type comprenant au moins une ganse d'ouverture facile, selon lequel, avant enrobage, on dispose sur le fromage nu au moins une ganse semi-rigide maintenue en position par clipsage sur le fromage nu. Par fromage enrobé, on comprend un fromage à texture souple à ferme, c'est-à-dire ayant une valeur de fermeté supérieure à 1 newton.The present invention relates to the manufacture of a coated cheese, of the type comprising at least one easy opening loop. Pour disposer l'au moins une ganse semi-rigide sur le fromage nu, on peut disposer d'au moins une ganse semi-rigide contre la paroi intérieure d'un moule, puis on coule du fromage chaud dans le moule et on laisse refroidir l'ensemble. En outre, avant moulage du fromage, on peut disposer dans le moule un organe de préhension tel qu'un bâtonnet. L'au moins une ganse semi-rigide et l'organe de préhension peuvent constituer une seule pièce, la ganse semi-rigide et le moyen de préhension étant reliés par au moins un point d'ancrage fragile. De préférence, l'au moins une ganse semi-rigide est préformée pour s'adapter élastiquement à la forme d'une section du fromage. L'au moins une ganse semi-rigide peut par exemple être en forme d'oméga.
De préférence, l'au moins une ganse semi-rigide est constituée d'une matière plastique semi-rigide du type polypropylène ou polyéthyléne et est fabriquée par injection ou par thermoformage. Le fromage peut être enrobé par trempage dans au moins un bain d'un matériau d'enrobage tel qu'une cire, un polymère non comestible ou un enrobage comestible. Le fromage peut également être enrobé par pulvérisation d'un matériau d'enrobage. Le fromage peut être de forme asymétrique comportant des contre dépouilles. Le fromage peut également avoir un poids inférieur à 10 grammes. L'invention concerne également un fromage enrobé du type comprenant au moins une ganse d'ouverture facile en un matériau semi- rigide tel que, notamment, le polypropylène ou le polyéthyléne. Le fromage enrobé peut avoir une forme non symétrique et/ou un poids inférieur à 10 grammes. Le fromage enrobé peut comporter au moins deux ganses semi- rigides. Le fromage peut, en outre, comporter au moins un organe de préhension tel qu'un bâtonnet. L'invention va maintenant être décrite plus en détail mais de façon non limitative en regard des figures annexées dans lesquelles : - la figure 1 représente une ganse semi-rigide en forme d'oméga, - les figures 2A, 2B, 2C et 2D représentent quatre étapes de fabrication d'un fromage enrobé selon un premier procédé, - la figure 3 représente un deuxième procédé de fabrication d'un fromage enrobé, - la figure 4 représente un fromage enrobé comportant un moyen de préhension, - les figures 5A et 5B représentent un bâtonnet de préhension d'un fromage enrobé,
- les figures 6A, 6B, 6C et 6D représentent quatre étapes de la fabrication d'un fromage enrobé comportant un bâtonnet de préhension, - la figure 7 représente une pièce qui constitue un organe de préhension et une ganse. Dans toutes ces figures, les éléments correspondants portent les mêmes repères. Dans un premier mode de réalisation, un fromage enrobé de forme sphérique aplatie, conforme à l'invention, comporte une ganse semi-rigide 1 , représentée à la figure 1 , ayant une forme générale d'oméga disposée autour du talon du fromage et maintenue en position par clipsage. Cette ganse semi-rigide 1 est en matériau polymère par exemple en polypropylène ou en polyéthyléne donnant à la fois de la rigidité et de l'élasticité ; elle est fabriquée par exemple par un procédé classique d'injection ou de thermoformage. Cette ganse clipsée sur le fromage présente l'avantage de tenir en position toute seule, ce qui rend possible la fabrication de fromages de poids faible (moins de 10 grammes) ou de forme complexe. Selon un premier procédé, pour fabriquer le fromage enrobé, dans une première étape représentée à la figure 2A, on écarte les deux lèvres 3 de la ganse 1 , par déformation élastique, de façon à augmenter le diamètre de l'anneau formé par la ganse 1 , et on dispose à l'intérieur un fromage 2 nu et solide de diamètre légèrement supérieur au diamètre de la ganse lorsqu'elle est en position de repos. Dans une deuxième étape représentée à la figure 2B, on relâche l'effort d'écartement des lèvres 3 de la ganse 1 si bien que la ganse 1 vient s'appliquer élastiquement contre le fromage 2, et assure ainsi un maintien de la ganse 1 par clipsage. Dans une troisième étape représentée à la figure 2C, à l'aide d'une pince 4, on saisit les deux lèvres 3 de la ganse 1 et on plonge l'ensemble constitué par la ganse 1 et le fromage 2 dans un bain 5 d'un matériau d'enrobage tel que par exemple de la cire ou un polymère non comestible ou encore une matière comestible liquide à température élevée et
devenant solide à plus basse température. Cette opération de trempage du fromage dans la matière d'enrobage peut être renouvelée une ou plusieurs fois. Puis, lorsque l'ensemble est bien recouvert d'une pellicule de matériau d'enrobage, l'enrobage est solidifié, par exemple en trempant l'ensemble dans de l'eau froide. Ce procédé d'enrobage est connu en lui-même de l'homme de métier. On obtient ainsi le fromage enrobé repéré généralement par 6 à la figure 2D qui correspond à la solidification, constitué d'un fromage 2 solide, enrobé dans une couche d'enrobage 7 et qui comporte une ganse 1 dont les lèvres 3 débouchent à l'extérieur de la couche d'enrobage 7. Dans ce procédé, la ganse 1 qui est élastique et qui donc se comporte comme un ressort pour venir se clipser sur le fromage 2, a l'avantage d'être bien fixée au fromage nu avant l'enrobage. Cet avantage permet de manutentionner facilement l'ensemble, de le plonger dans des bains de matériau d'enrobage, même lorsque le fromage nu est de petite dimension, en particulier lorsque le fromage nu a un poids inférieur à 10 grammes. C'est également le cas lorsque le fromage n'est pas de forme sphérique aplatie comme représenté sur les figures mais lorsque le fromage est de forme complexe comme, par exemple, un fromage de forme triangulaire, ou en forme de figurine, d'étoile, de goutte, ou encore de tout autre objet. Dans ce cas, la forme de la ganse peut être adaptée de façon à être complémentaire d'une forme méridienne du fromage après clipsage. Selon un deuxième procédé représenté à la figure 3, une ganse 1 est disposée à l'intérieur d'un moule 8, de telle sorte qu'elle est plaquée contre la paroi du moule 8 par un effort tendant à augmenter son diamètre. Une pâte fromagere 10 est coulée à chaud à l'intérieur du moule 8 par l'intermédiaire du tube d'injection 9. Lorsque le moule 8 est rempli de pâte fromagere 10, on laisse refroidir et solidifier la pâte fromagere 10 et on obtient ainsi un fromage solide qui comporte à sa périphérie une ganse 1 fixée par clipsage sur le
fromage. Le fromage ainsi obtenu avec sa ganse peut alors être enrobé après démoulage en appliquant le même procédé que dans le cas précédent. Dans les deux variantes qui viennent d'être décrites, l'enrobage est réalisé par trempage dans un bain de matière d'enrobage liquide, suivi d'une solidification. Mais toute autre méthode d'enrobage connue de l'homme de métier peut être utilisée. En particulier, l'enrobage peut être réalisé par pulvérisation sur l'ensemble formé par le fromage et la ganse d'une substance d'enrobage. Ces procédés de fabrication permettent de fabriquer à des cadences industrielles élevées des produits de faible poids c'est-à-dire allant de 3 à 10 grammes, ou des produits ayant des formes symétriques ou non symétriques ou ayant des formes complexes telles que des ovoïdes, des gouttes, etc.. pouvant comporter des contre dépouilles. Au cours de l'utilisation, le consommateur n'a qu'à tirer sur les extrémités libres de la ganse semi-rigide pour libérer le fromage de la coque d'enrobage qui se scinde en deux parties. Afin de pouvoir bien séparer le fromage des deux parties de la coque d'enrobage, il est souhaitable de disposer la ganse dans une position telle que chacune des parties d'enrobage soient de faible profondeur. Dans un autre mode de réalisation qui va être décrit maintenant, le fromage enrobé comporte en outre un moyen de préhension tel qu'un bâtonnet 11 , implanté dans le fromage 2. Comme représenté à la Figure 4, le bâtonnet 11 est implanté dans l'élément de fromage nu 2 dans une position telle qu'il passe entre les lèvres 3 de la ganse 1. Le bâtonnet comporte dans sa partie médiane une surépaisseur 12, qui forme un appui et qui sépare le bâtonnet 11 en une partie 11' destinée à être introduite dans le fromage 2, et une partie 11" destinée à la préhension. La surépaisseur ou ergot 12 est conformée de façon à bloquer l'enfoncement du bâtonnet 11 dans le fromage 2 de telle sorte que seule la partie 11' soit introduite à l'intérieur du fromage.
Pour fabriquer un tel fromage enrobé comportant un moyen de manutention, après avoir implanté le bâtonnet 11 dans le fromage nu 2, on peut procéder comme représenté aux figures 6A à 6D, dans lesquelles la première étape représentée à la figure 6A consiste à disposer une ganse semi-rigide 1 autour du fromage 2 nu et solide dans lequel est implanté le bâtonnet 11 , de façon à obtenir un ensemble constitué par un fromage 2 avec son bâtonnet 11 autour duquel est clipsé la ganse 1 , comme représenté à la figure 6B. L'ensemble ainsi constitué peut alors être saisi à l'aide d'une pince puis enrobé par trempage dans un bain de produit d'enrobage liquide 5. Le trempage peut se faire en une ou plusieurs étapes comme dans le procédé décrit précédemment. Le trempage est suivi d'une étape de solidification par refroidissement, pour obtenir un fromage enrobé 6', représenté à la figure 6D comportant un fromage 2 solide dans lequel est implanté un bâtonnet 11 , entouré d'une ganse semi- rigide 1 et une couche d'enrobage 7 de même nature que les couches d'enrobage des fromages à enrober comme décrit dans le premier mode de réalisation. Comme dans le premier mode de réalisation, l'enrobage peut également être réalisé par pulvérisation. Dans un autre mode de réalisation du procédé de fabrication du fromage enrobé comportant un moyen de préhension, on peut utiliser une pièce en matière plastique 13 représenté à la figure 7, constituée d'un bâtonnet 11 et d'une ganse 1 de forme générale en oméga, assemblée en une seule pièce, le bâtonnet et la ganse oméga étant reliés entre eux par au moins un point de liaison 14 fragile constituant un point de rupture pour permettre l'ouverture du fromage enrobé. Dans ce cas, le fromage est fabriqué par moulage à chaud, l'ensemble ganse-bâtonnet étant disposé préalablement dans le moule. Le procédé de moulage à chaud du fromage est, d'une façon générale, connu de l'homme de métier. Dans les modes de réalisation qui viennent d'être décrits, le fromage enrobé ne comporte qu'une ganse. Mais, on peut prévoir soit plusieurs ganses, soit des ganses comportant au moins deux brins qui se croisent, de façon à permettre une ouverture de l'enrobage selon un mode
en « quartier d'orange » ou selon un mode d'ouverture dite « tulipe », connus en eux-mêmes. En ce qui concerne les techniques de fabrication du fromage enrobé, l'homme de métier comprendra que l'invention s'applique à tout type de fromage dont les fromages fondus et les fromages obtenus par les procédés dits de « retexturation », procédés connus en eux-mêmes.

According to a second method shown in Figure 3, a loop 1 is disposed inside a mold 8, so that it is pressed against the wall of the mold 8 by a force tending to increase its diameter. A cheese paste 10 is poured hot inside the mold 8 via the injection tube 9. When the mold 8 is filled with cheese paste 10, the cheese paste 10 is allowed to cool and solidify and thus obtained a solid cheese which has at its periphery a loop 1 fixed by clipping on the cheese. The soaking is followed by a solidification step by cooling, to obtain a coated cheese 6 ′, shown in FIG. 6D comprising a solid cheese 2 in which a stick 11 is implanted, surrounded by a semi-rigid loop 1 and a coating layer 7 of the same kind as the coating layers of the cheeses to be coated as described in the first embodiment. As in the first embodiment, the coating can also be carried out by spraying. In another embodiment of the process for manufacturing coated cheese comprising a gripping means, it is possible to use a plastic part 13 shown in FIG. 7, consisting of a stick 11 and a loop 1 of general shape omega, assembled in one piece, the stick and the omega loop being interconnected by at least one fragile connection point 14 constituting a breaking point to allow the opening of the coated cheese. In this case, the cheese is produced by hot molding, the strap-rod assembly being previously placed in the mold. The process for hot molding cheese is generally known to those skilled in the art. In the embodiments which have just been described, the coated cheese has only one loop. However, one can provide either several loops, or loops comprising at least two strands which intersect, so as to allow an opening of the coating according to a mode in “orange quarter” or according to an opening mode called “tulip”, known in themselves.
