Abstract
L'invention concerne une enzyme de rupture de pullulane, et un procédé d'élaboration. On utilise un micro-organisme du genre Aureobasidium Genus à cet effet. L'invention concerne également un procédé de dégradation de pullulane faisant appel à cette enzyme, et un procédé de production de pullulane à viscosité réduite et/ou de rapport Mw/Mn réduit. On peut utiliser cette enzyme pour produire un pullulane à faible viscosité et de rapport Mw/Mn réduit, et également facile à manipuler.
