Abstract
Cette invention se rapporte aux techniques de traitement thermique de produits alimentaires en vrac, et concerne un procédé consistant à placer le produit dans une sole qui est montée sur une base de manière à pouvoir tourner dans un plan perpendiculaire au fond. Le produit est chauffé par contact avec la sole chauffée et/ou depuis le haut sous l'effet du rayonnement thermique qui est émis par une unité de chauffage infrarouge capable de se déplacer par rapport à la sole. Le produit est ensuite mélangé à l'aide d'un mélangeur capable de se déplacer par rapport à la sole. A la fin du dégraissage, on retire le mélangeur de la sole, ainsi que l'unité de chauffage infrarouge si elle a été utilisée, puis on retourne la sole et l'on déverse tout le volume du produit dégraissé hors de ladite sole. Ce dispositif comprend une base (1), une sole (2), un mélangeur (4) comportant un dispositif d'actionnement (7), et une unité de chauffage (10). La sole (2) est montée sur la base (1) de manière à pouvoir tourner dans un plan qui est perpendiculaire au fond. Le mélangeur (4) est monté au dessus du fond de la sole (2) sur un cadre (6) qui est monté sur la base (1) de manière à pouvoir tourner et/ou se déplacer linéairement. L'unité de chauffage (10) est fixée à la sole (2) sous le fond de celle-ci ou sur la base (1), et/ou consiste en une unité de chauffage infrarouge (11) montée au dessus de la sole (2) sur un cadre (6).
