Abstract

Compositions de paprika d'une stabilité de couleur supérieure mettant en ÷uvre certains agents tensio-actifs, et notamment compositions présentant une résistance accrue à la décoloration dans des aliments exposés à des contraintes d'oxydation, dans lesquels un substrat solide comestible destiné au pigment ou à la couleur paprika peut également être présent. L'invention concerne également un procédé de stabilisation d'un pigment de paprika contre la décoloration due à l'oxydation, des aliments pouvant rencontrer des contraintes d'oxydation et colorés à l'aide d'une composition de paprika stabilisée en couleur de l'invention, un procédé de coloration d'un aliment pouvant être soumis à des contraintes d'oxydation par l'emploi d'une composition de paprika stabilisée en couleur de l'invention, l'amélioration de caractéristiques de stabilisation de couleur dans les compositions et d'efficacité de stabilisation de couleur des procédés de l'invention par l'utilisation d'un anti-oxydant naturel. L'invention concerne en outre l'amélioration des caractéristiques de stabilisation de couleur des compositions ainsi que l'efficacité de stabilisation de couleur des procédés de l'invention par l'emploi dans ces dernières d'un ester d'acide ascorbique comestible soluble dans l'huile.
