Abstract
Ingrediente lácteo enriquecido en lípidos polares, en particular en fosfolípidos y en esfingolípidos, en el que el porcentaje de fosfolípidos es superior al 10% en peso, con respecto al peso de materia seca del ingrediente, su procedimiento de obtencion a partir de crema de leche pasteurizada y su aplicacion en productos alimentarios y/o farmacéuticos.
