Abstract

La presente refiere a un producto alimentario del tipo de galleta de leche, constituido principalmente por ingredientes lácteos con calidades organolépticas, especialmente crujiente y expandido, propios de una galleta. Reivindicación 1: Galleta de leche que incluye: del 30% al 60% en peso de proteínas respecto al peso total de la galleta de leche, de las cuales al menos el 80% son de origen lácteo; del 12% al 45% en peso de monosacáridos y/o disacáridos respecto al peso total de la galleta de leche, de los cuales al menos el 60% en peso de dichos monosacáridos y/o disacáridos son de lactosa; del 1% al 40% en peso de lípidos respecto al peso total de la galleta de leche; menos del 6% en peso de agua respecto al peso total de la galleta de leche.
