Abstract
Ένα συστατικό γάλακτος εμπλουτισμένο σε πολικά λιπίδια, ειδικότερα φωσφολιπίδια και σφιγγολιπίδια στο οποίο το ποσοστό φωσφολιπιδίων είναι μεγαλύτερο από 10% κατά βάρος σε σχέση με το βάρος ξηράς ύλης του συστατικού, η διαδικασία λήψης αυτού από παστεριωμένη κρέμα γάλακτος και η εφαρμογή του στα διατροφικά ή/και φαρμακευτικά προϊόντα.
