colostro bovino e/ou caprino como ingrediente funcional em produtos lácteos fermentados. colostro bovino e/ou caprino processado foi submetido às etapas de desnatamento, tratamento térmico, coagulação, concentração(precipitação, microfiltração, ultrafiltração e cromatografia) e desidratação (a vácuo, liofilização e atomização). o produto obtido pode ser adicionado na formulação de alimentos lácteos fermentados, tais como, iogurtes, leites fermentados, queijos, cremes e gelados comestíveis ou similares. além disso, está invenção representa uma fonte alternativa de compostos imunológicos e antimicrobianos que poderiam ser direcionados a públicos-alvo específicos obtidos a partir do colostro de bovinos e caprinos.
