Abstract
Se describe un tambor de doble pared, de cilindros concéntricos, que tiene sellos extremos y una aislación entre los cilindros. El tambor está abierto en sus dos extremos, y gira alrededor de su eje longitudinal central que tiene una inclinación (pitch) con respecto a la horizontal, estando la entrada, en el lado elevado. Las restricciones en cuanto al diámetro en los extremos de entrada y de descarga del tambor, aumentan el tiempo de permanencia del producto en el tambor. Unos izadores situados en los extremos de entrada y de descarga, empujan el material alimenticio flexible susceptible de echarse a perder por contaminación microbiana, de forma de hebras, tal como hebras de pasta cocida, alejándolo de la entrada y hacia fuera de la descarga. Hay unas espigas montadas perpendicularmente con respecto a la pared cilíndrica interior, las cuales apuntan hacia el eje central del tambor. Uno líquidos tales como ácidos y aceites, son rociados por sobre el material alimenticio presente en el tambor, desde una barra de rociado o de múltiple rociado. Las espigas izan y separan de manera contínua las hebras de material alimenticio mientras éste se va desplazando a través del tambor, y mezclan el líquido y el producto, resultando un revestimiento uniforme. Estos procesos y aparato, producen un material alimenticio en forma de hebras flexible, recubierto de manera uniforme, tal como fideos ("spaghetti"), con una mínima pérdida de temperatura. El material alimenticio escurre libremente y no se enmaraña en la descarga del tambor. Las fluctuaciones de flujo debidas al equipo situado corriente arriba en la línea de producción quedan suprimidas, obteniéndose un flujo contínuo del producto hacia el equipo situado corriente abajo en la línea de producción. (figura 1)
