Abstract
Способ определения характеристик консистенции пищевого материала, который имеет переменные характеристики консистенции, включает прикладывание по меньшей мере одного вибрационного импульса с частотой в пределах заданного диапазона частот и с заданной продолжительностью во времени к испытываемому образцу пищевого материала внутри контейнера для создания по меньшей мере одного экспериментального вибрационного отклика; измерение по меньшей мере одного экспериментального вибрационного отклика испытываемого образца по меньшей мере на один вибрационный импульс; и сравнение по меньшей мере одного экспериментального вибрационного отклика по меньшей мере с одной опорной величиной вибрационного отклика, полученной по меньшей мере от одного калибровочного образца пищевого материала, который имеет известные характеристики консистенции, с определением тем самым характеристик консистенции испытываемого образца, в котором множество вибрационных импульсов с переменными заданными частотами и заданными дискретными интервалами времени прикладывают к испытываемому образцу и измеряют множество экспериментальных вибрационных откликов испытываемого образца. Система для определения характеристик консистенции пищевого материала имеет переменные характеристики консистенции, содержит устройство для генерирования вибрационного импульса, устройство для измерения экспериментального вибрационного отклика испытываемого образца пищевого материала на вибрационный импульс, контейнер для удержания испытываемого образца, и анализатор для сравнения экспериментального вибрационного отклика испытываемого образца с одним или несколькими опорными вибрационными откликами.
