Під час приготування кріосорбету, безпосередньо в суміш інгредієнтів додають рідкий азот, суміш перемішують протягом 60-120 с, під час охолодження суміш загустіває, структура стає ніжнішою і утворюються кристали льоду з мінімальними розмірами.A method for producing a cryosorbent involves preparing a mixture of fruits, stirring, freezing in a refrigerator, during which the liquid mixture is thoroughly stirred until thickened to avoid the formation of large crystals of ice.
