Abstract
A method for making biscuit-whipped butter cookies comprises making dough by means of whipping mélange with sugar, margarine, flavouring and aromatic additives, mixing the whipped mass with wheat flour, forming dough half-finished products by separating, baking products. While whipping the mélange, carrot puree with an increased content of low metaxylated pectine in an amount from 10.0 to 34% and a complex mixture of emulsifying agents, namely the paste "Ester M-02", in an amount from 3.0 to 7.0 % from the weight of sugar-egg-fat mixture are added.
