1374856 九、發明說明: 【發明所屬之技術領域】 本發明係相關於加熱蒸發雙氧水,使用已蒸發的過氧 化氫作爲殺菌劑之殺菌用雙氧水。更詳細而言,係相關於 在雙氧水中添加少量的安定劑,極力降低雜質的含量,且 含有特定的添加成分之殺菌用雙氧水。 【先前技術】 近年’將飲料、食品等無菌充塡於容器的裝置發達及 PET瓶的普及,使用於無菌充塡的殺菌劑,亦需求使用性 優異的殺菌劑。使用雙氧水的殺菌方法,係以蒸發機加熱 雙氧水至沸點以上使氣化,同時噴霧空氣和過氧化氫的氣 體以殺菌容器之方法(參考專利文獻1)。惟,部分添加於 雙氧水的安定劑殘留附著在噴霧噴嘴、蒸發機,阻塞細管 線部位,阻礙無菌充塡裝置的安定運轉。 使用於工業用、食品添加物等的雙氧水中,添加安定 劑乃爲要藉著含有分解成分而抑制過氧化氫的分解。安定 劑係使用具有可形成分解成分例如鐵等和配位化合物或螯 合化合物能力之物質,自古以來,有倂用焦磷酸鹽和正磷 酸等的無機化合物之方法。藉由抑制其添加量,可降低在 噴霧噴嘴、蒸發機的附著物量(參考專利文獻2 )。惟,抑 制安定劑的添加量後,在輸送、保存於儲存槽等時,增加 過氧化氫的分解損失、異常分解等危險。又,使用於噴霧 噴嘴、充塡裝置等和雙氧水接觸的部位之奧氏體系不銹鋼 材質,係與具有螯合化合物形成能的安定劑反應,其結果 1374856 溶解析出鐵、鉻等並增加過氧化氫的分解。 半導體級雙氧水,係幾乎不含過氧化氫分解成分,又 因不添加安定劑,雖解決附著殘留於噴霧噴嘴、蒸發機, 阻塞細管線部位,阻礙無菌充塡裝置安定地運轉等問題, 惟半導體級雙氧水,在送出、輸送、接收設備等必需使用 高級材質,其使用上需格外謹慎及高成本。 (專利文獻1 )特開平1 1 -4 7242號公報 (專利文獻2 )特開平1 〇 -1 5 2 1 1 6號公報 【發明內容】 本發明的目的係解決先前技術中的課題,使無菌充塡 裝置可安定地運轉,且提供即使使用奧氏體系不銹鋼材製 造的輸送設備及儲存槽,亦可安全地輸送、保存之殺菌用 雙氧水。 本發明者等致力硏究於雙氧水的安定劑添加量、安定 劑的種類、蒸發殘留、雜質、安定性等的關係結果發現,使 用Fe濃度爲2ppb以下,AI濃度至少爲1 5ppb,且添加作 爲安定劑的正磷酸其總添加量之最大値爲40ppm之殺菌用 雙氧水,降低噴霧噴嘴、蒸發機的附著殘留量,不阻塞噴 嘴等細管線部位,可使無菌充塡裝置安定地運轉。又發現, 即使使用奧氏體系不銹鋼材製的輸送設備及儲存槽,該雙 氧水在輸送中及保存中,過氧化氫幾乎不被分解而完成本 發明。 亦即,本發明係相關於使用於無菌充塡裝置,爲要以 過氧化氫蒸氣殺菌容器或包裝材料之殺菌用雙氧水,過氧 1374856 化氫濃度爲30〜45重量% ,Fe濃度爲2ppb以下,A1 至少爲1 5ppb,以及至少由正磷酸形成的安定劑的濃 色^__4 9 P 之殺菌用雙氧水。又,本發明係相關於使 菌充塡裝置的容器或包裝材料之殺菌方法中,包括加 發該殺菌用雙氧水,使產生的過氧化氫蒸氣與該容器 裝材料接觸的工程之殺菌方法。 【實施發明之最佳型態】 本發明中,可使用非半導體及雙氧水。本發明的 用雙氧水的過氧化氫濃度爲30〜45重量% 。本發明中 氧水宜爲具安全性、有效性,且添加經過厚生勞動大 定爲食品用添加物的安定劑(焦磷酸蘇打 '正磷酸) 氧水,尤宜只使用正磷酸作爲安定劑之雙氧水^ 安定劑的添加量宜爲盡可能地少,考量常用的雙 中的過氧化氫分解成分的惰性化和細管線部位的阻塞 多爲40ppm’宜爲1〜40ppm。若超過40ppm,爲要將 的過氧化氫噴霧在容器或包裝材料的噴霧噴嘴,因殺 雙氧水中的安定劑而經常阻塞,必須進行附著物的去 業,阻礙無菌充塡裝置的安定運轉。相反地若不添加 劑’過氧化氫的安定性差,導致異常分解,發生安全 疑慮。又,本專利中,% 、PPm及ppb均爲重量基準 雙氧水的分解成分,例如重金屬類,以工業方法 的雙氧水中含有的分解成分,係限定於鐵、鉻、鎳、 本發明的殺菌用雙氧水中,鎳、鈀濃度宜爲分別在〇 以下’尤宜0.01〜O.Ippb。又,鐵、鉻濃度宜爲分別在 濃度 度取 用無 熱蒸 或包 殺菌 ,雙 臣認 之雙 氧水 ,至 氣化 菌用 除作 •1, < 丨*_, 安疋 上的 〇 製造 範。 1 ppb 2 pp b 1374856 以下,尤宜0.1〜2ppb。本發明中,特別是鐵濃度控制在 2ppb以下較佳。使鐵濃度在2ppb以下的方法,例如使雙 氧水和陽離子交換樹脂或陰離子交換樹脂接觸之方法、使 雙氧水經過加熱蒸發’凝縮精製含過氧化氫的水蒸氣之方 法等。 本發明的殺菌用雙氧水中,鋁濃度至少爲15ppb,宜 爲15〜lOOOppb,尤宜15〜300pbb,又更宜爲15〜200ppb。 使鋁濃度至少爲1 5ppb之方法,例如使雙氧水和陽離子交 換樹脂或陰離子交換樹脂接觸之方法、使雙氧水經過加熱 蒸發,凝縮精製含過氧化氫的水蒸氣之方法等。 本發明的殺菌用雙氧水特別適用於飲料 '食品等無菌 充塡的容器及包裝材料之殺菌。構成部分無菌充塡裝置的 殺菌裝置’至少具有過氧化氫饋入部位、具加熱裝置的蒸 發機及噴霧噴嘴。其結構無特別的限制,可使用週知的裝 置例如上述專利文獻1及2記載的裝置。 由過氧化氫饋入部位導入蒸發機的殺菌用雙氧水,係 以加熱裝置加熱至其沸點以上的溫度,宜爲沸點〜2 〇 〇 〇c以 氣化。氣化的殺菌用雙氧水,係藉著由雙氧水饋入部位或 獨ΑΔ的饋入部位導入的壓縮空氣等,移動至蒸發機的下流 側’由設置於蒸發機的下流側末端的噴霧噴嘴噴霧在容器 或包裝材料。被噴霧的氣體狀雙氧水,經冷卻凝縮形成重 霧狀,以微細的滴液附著於容器或包裝材料的表面,發揮 殺菌作用。經過殺菌處理的容器或包裝材料,經乾燥後輸 送至飲料、食品等的無菌充塡工程。 1374856 本發明的殺菌用雙氧水含有鋁和正磷酸。鋁和正磷酸 係於奧氏體系不銹鋼材的表面形成磷酸鋁的鈍態被膜,具 有降低鐵、鉻、鎳的溶解析出,抑制過氧化氫的分解之作 用。因此,與該殺菌用雙氧水接觸的殺菌裝置的部位之材 質,宜使用SUS304、304L、316、316L等奧氏體系不銹鋼 材。 【實施例】 其次,以實施例及比較例更具體地說明本發明。惟, 本發明不受限於下述的實施例。以原子吸光分析測定鋁濃 度、鐵濃度及鉻濃度,除此以外之測定係依據JIS K- 1 463。 (1 )過氧化氫濃度 以N/10過錳酸鉀水溶液滴定而求得》 (2 )安定度 將一定量的試驗品置於沸騰水浴中加熱5小時。冷卻 後,加水至加熱前的體積後,直接定量過氧化氫,依據下 式求出安定度(% )。 H = ( J,/J ) X 1 00 (惟’ Η爲安定度(% ),J ’係加熱5小時後的過氧化氫濃 度(% ) 係加熱前的過氧化氫濃度(% )。) (3 )鋁濃度 以原子吸光分析法測定。 (4 )鐵濃度 以原子吸光分析法測定。 (5 )鉻濃度 1374856 以原子吸光分祈法測定。 (6 )蒸發殘留 將250g試驗品置入燒杯,放入白金片使過氧化氫分解 後’將分解液移至白金皿,於水浴上蒸發乾燥固化後,於 105〜110 °C乾燥2小時。在具有矽膠的乾燥器內放冷後, 測疋殘留的重量’依據下式求出蒸發殘留(ppm)。 C = ( D/S) Χίο6 (惟’ C係蒸發殘留(ppm )、D係殘留量(g )、S係 試驗品採量(g )。) 實施例〗〜2、比較例1〜4 將規定的雙氧水的過氧化氫濃度調整爲約35重量 % 。使添加規定量的安定劑而製得的各試驗品雙氧水進行 各測定。結果如第1表所示。
