1. A method of producing protein hydrolyzate from mollusks, e.g. ice, by crushing the mollusks, treating the alkali solution with a concentration of the order of 0.5-1%, separating the hydrolyzate from the valves, filtering, neutralizing and evaporating the hydrolysis obtained3, characterized in that the release of proteinaceous substances, the treatment of mollusks with alkali is carried out in small quantities, and after the separation of the hydrolyzate from the valves, the latter are hydrolyzed with an alkali by concentration, preferably 1.5-2%, followed by the addition of the hydrolyzate to the main one. 2. 2. The method according to claim 1, of l and h and y and with heme, 4 that the stepwise processing of the mollusks with alkali is carried out in three steps in equal parts of the total amount required for hydrolysis, with a duration of 3 hours and 3 hours respectively, but 1 hour. 3. 3. The method according to claim 1, characterized in that the hydrolysis of the valves is carried out for 20-60 minutes.
