Дл этого стыки икры обрабатывают раствором фермента - коллагеназы из гепатопанкреаса крабов Erlmacrus esenbeeki, Paralithodes platypus. Parallthodes brevipes, Chionoecetes japonlcus, Chionoecetes oplllo при 35-40°С в течение 10-60 мин дл разрушени соединительных тканей, при этом берут раствор фермента с активностью 5 тыс.-5000 тыс. единиц на 1 л и при соотношении ксллаге- назы к сырью 5 тыс.-5000 тыс. единиц к 1 кг.FIELD OF THE INVENTION The invention relates to the fishing industry, in particular to the technology of processing food caviar.
