Abstract

ел ч I Изобретение относитс к масложировой промьшшенности и касаетс способов очистки масел. Целью вл етс упрощение способ за счет совмещени разложени мыл в.жире и его промывки. По предлагаемому способу мыло из нейтрализованного жира вывод т в один этап. Промывку нейтрализованного жира осуществл ют.непосред ственно водным промывным раствором содержащим минеральную кислоту в недостатке. При этом часть мьша разлагают до свободных жирных кислот , а оставшеес мыло раствор етс в водном растворе образовавшейс натриевой соли минеральной кислоты Эта соль используетс как гидротро на добавка, котора способствует переходу мыла из жира в водньй рас вор и преп тствует образованию эмульсии, трудноразрушаемой в цент робежном поле. При этом из минерал ных кислот используют дешевую ортофосфорную или серную кислоту, натри евые соли которых вл ютс наиболе ж тфективными гидротропными добавка ми при промывке. Цель не будет достигнута, если нейтрализованный жир обрабатывать вод-ным промывным раствором, содержащи кислоту в количестве, определ емом из стехиометрического расчета по реакции разложени мьша или вз том с избытком. При этом кислотное число нейтрализованного жира превысит предел, установленный дл рафинированного жира, за счет вьщелени псего количества жирных кислот из мыла. После этого дл уменьшени кислотного нисла рафинированньй 72 жир необходимо подвергать повторной нейтрализации, что значительно усложн ет способ. Способ осуществл ют следующим образом. В лабораторный смеситель, вьтолненный в виде двух стекл нных баллонов , соединенных трубкой (вместимостью 150 МП каждьй), помещают навеску нейтрализованного подсолнечного масла массой 100 г.. В смесителе с помощью термостата поддерживают температуру t . До такой же температуры нагревают водньй раствор ортофосфорной кислоты заданной концентрации, которьй берут в количестве 10% от массы масла. Раствор ввод т пипеткой в один из баллонов. Перемеща дес ть раз содержимое из одного баллона в другой с помощью резиновой груши под давлением, провод т смешивание компонентов. Полученную смесь раздел ют на лабораторной центрифуге при вращении ротора 6000 об/мин в течение 10 мин. В отделенном масле определ ют кислотное и наличие мыла (индикатор фенолфталеин ). Результаты опытов приведены в аблице. В опытах 1 и 2 кислотное число масла не превьщ1ает 0,4 мг КОН, а в опыте 3 промытое нейтрализованное масло не отвечает требовани м стандарта (см.ГОСТ 1129-73). Таким образом, использование изобретени позвол ет исключить промывку масла водой. При этом экономи воды составл ет 10% от массы исходного масла, а потери пищевого жира снижаютс приблизительно на 0,04%.The invention relates to the oil and fat industry and concerns methods for the purification of oils. Washing of the neutralized fat is carried out directly with an aqueous washing solution containing mineral acid in a deficiency. In this case, part of the meat is decomposed to free fatty acids, and the remaining soap is dissolved in an aqueous solution of the sodium salt of the mineral acid formed. This salt is used as a hydrotro for the additive, which promotes the transfer of soap from fat to water and prevents the formation of an emulsion, which is difficult to break in the center robust field. In this case, mineral acids use cheap orthophosphoric or sulfuric acid, the sodium salts of which are the most effective hydrotropic additives during washing. The goal will not be achieved if the neutralized fat is treated with a water-washing solution containing acid in an amount determined from the stoichiometric calculation by decomposition reaction with excess or with excess. At the same time, the acid number of the neutralized fat will exceed the limit set for refined fat due to the release of fatty acids from the soap. Thereafter, in order to reduce the acid low, refined 72 fat must be re-neutralized, which makes the process much more complicated. The method is carried out as follows. A sample of neutralized sunflower oil weighing 100 g is placed in a laboratory mixer, filled in the form of two glass cylinders connected by a tube (with a capacity of 150 MP each). The temperature is maintained at a mixer using a thermostat. A water solution of orthophosphoric acid of a given concentration is heated to the same temperature, which is taken in an amount of 10% by weight of the oil. The solution is pipetted into one of the cylinders. By moving the contents from one cylinder to another ten times using a rubber bulb under pressure, the components are mixed. The resulting mixture was separated in a laboratory centrifuge with a rotor rotating at 6000 rpm for 10 minutes. The acidic and the presence of soap (phenolphthalein indicator) are determined in the separated oil. The results of the experiments are given in the table. In experiments 1 and 2, the acid number of the oil does not exceed 0.4 mg KOH, and in experiment 3 the washed neutralized oil does not meet the requirements of the standard (see GOST 1129-73). Thus, the use of the invention eliminates the washing of the oil with water. In this case, the water saving is 10% by weight of the original oil, and the loss of edible fat is reduced by approximately 0.04%.
