Claims (14)

1. Способ извлечения или очистки белкового материала и/или волокнистого материала из отработанного пивного зерна (ОПЗ), включающий следующие стадии:
обеспечение отработанных пивных зерен (ОПЗ);
проведение ферментативной обработки пивного отработанного зерна и ферментации ферментативно обработанного пивного отработанного зерна молочнокислыми бактериями и/или уксуснокислыми бактериями и/или пробиотиками с получением ферментированного бульона; и
извлечение и/или очистка белкового и/или волокнистого материала из ферментированного ОПЗ.
2. Способ по п. 1, в котором отработанное пивное зерно обрабатывают ферментами для солюбилизации арабиноксиланов.
3. Способ по любому из предыдущих пунктов , включающий ферментативную обработку отработанного пивного зерна, включающую добавление к отработанному пивному зерну одного или более ферментов со следующей ферментативной активностью: альфа-амилазы, глюкоамилазы, целлюлазы, ксиланазы, протеазы, бета-глюканазы и/или их примесей.
4. Способ по любому из предыдущих пунктов, включающий гидролиз белков в ферментированном бульоне, перед экстракцией извлечение и/или очистку белкового и/или волокнистого материала из ферментированного ОПЗ.
5. Способ по любому из предыдущих пунктов, в котором рН ферментационного бульона в конце ферментации варьирует в диапазоне рН 3,5-рН 4,5, предпочтительно рН 3,8 - рН 4,2 и, в частности, рН 3,9-рН 4,1.
6. Способ по пп. 4, 5, отличающийся тем, что рН ферментационного бульона доводят до рН в диапазоне от 2,5 до 3,5, предпочтительно до рН 2,7 для стадии гидролиза белков.
7. Способ по п. 6, в котором рН ферментационного бульона регулируют добавлением серной кислоты и/или фосфорной кислоты.
8. Применение белкового материала, полученного способом по любому из пп. 1-7, в качестве пищевой добавки.
9. Применение белкового материала, полученного способом по любому из пп. 1-7, в качестве кормовой добавки.
10. Применение белкового материала, полученного способом, по любому из пп. 1-7, в качестве пенообразователя, эмульгатора, заменителя животного или яичного белка, молочного белка и / или ингредиента для выпечки.
11. Применение молочнокислых бактерий, предпочтительно вида Lactobacillus plantarum и/или Lactobacillus rhamnosus, более предпочтительно штамма Lactobacillus plantarum F10 и/или Lactobacillus rhamnosus GG (LGG®), для извлечения белкового или волокнистого материала из ОПЗ.
