Abstract

Un proceso de extracción o purificación de material proteico y/o material fibroso del bagazo de cebada cervecera (BSG), el proceso comprende las etapas de: Proporcionar el bagazo de cebada cervecera; realizar la sacarificación por tratamiento enzimático del bagazo de cebada cervecera y una fermentación del bagazo de cebada cervecera sacarificado con bacterias del ácido láctico y/o bacterias del ácido acético y/o probióticos para obtener un caldo fermentado; y extraer y/o purificar el material proteico y/o fibroso del BSG fermentado.
