Claims (10)

1. Модифицирующая вкусоаромат композиция, содержащая одно или более модифицирующих вкусоаромат соединений, выбранных из группы, состоящей из м-крезола, 9-децен-2-она, 3-н-пропилфенола, 3-этилфенола, гидроксилимонной кислоты, гарциниевой кислоты и их смесей.
2. Модифицирующая вкусоаромат композиция по п.1, дополнительно содержащая растворитель.
3. Модифицирующая вкусоаромат композиция по п.1 или 2, дополнительно содержащая ароматизирующий компонент.
4. Модифицирующая вкусоаромат композиция по любому из пп.1-3, дополнительно содержащая одно или более дополнительных модифицирующих вкусоаромат соединений, отличающихся от одного или более модифицирующих вкусоаромат соединений по п.1.
5. Модифицирующая вкусоаромат композиция по любому из пп.1-3, дополнительно содержащая, по меньшей мере, одно соединение, выбранное из группы, состоящей из 5,6-дигидро-4-гидрокси-6-метил-2Н-пиран-2-она, пантолактона, мевалонолактона, 2-метил-гамма-бутиролактона, 5,6-дигидро-2H-пиран-2-она, 3-метил-2(5Н)-фуранона, 5-метокси-2-пирролидинона, гидроксил-гамма-додекалактона, лактона Массойи, 2-пирролидона, пироглутаминовой кислоты, 4-гидрокси-2-пирролидинона, N-метилкапролактама, эпсилон-капролактама и 3-гидрокси-2-пирона и их смесей.
6. Продукт, выбранный из группы пищевых продуктов и напитков, содержащих модифицирующую вкусоаромат композицию по любому из пп.1-5.
7. Продукт по п.6, в котором модифицирующая вкусоаромат композиция содержит одно или более модифицирующих вкусоаромат соединений, выбранных из группы, состоящей из м-крезола, 3-н-пропилфенола, 3-этилфенола и их смесей в количестве от 0,01 до 1000 ppb.
8. Продукт по п.6, в котором модифицирующая вкусоаромат композиция содержит одно или более модифицирующих вкусоаромат соединений, выбранных из группы, состоящей из 9-децен-2-она, гидроксилимонной кислоты, гарциниевой кислоты и их смесей в количестве от 0,1 до 200 ppm.
9. Применение модифицирующей вкусоаромат композиции по любому из пп.1-5 для модификации восприятия сладкого вкуса, соленого вкуса, вкуса умами, терпкости, слюноотделения и горечи в пищевых продуктах и напитках.
10. Способ улучшения восприятия сладкого вкуса, соленого вкуса, вкуса умами, терпкости, слюноотделения и горечи в пищевых продуктах или напитках, включающий предоставление пищевого продукта или напитка и добавление модифицирующей вкусоаромат композиции по любому из пп.1-5 в пищевой продукт или напиток.
