Abstract

 本発明は、飲食品の塩味様呈味を増強させる方法、並びに、該方法に供することができる調味料組成物及び塩味様呈味増強剤の提供をするものである。本発明は、5’-リボヌクレオチド類と分岐鎖アミノ酸とを有する調味料組成物であって、5’-リボヌクレオチド類100重量部に対して、分岐鎖アミノ酸が0.45~81重量部配合されていることを特徴とする調味料組成物及び塩味様呈味増強剤、飲食品に含まれる食塩100重量部に対して、5’-リボヌクレオチド類を2~90重量部、かつ、分岐鎖アミノ酸を0.05~9重量部配合することを特徴とする飲食品の塩味様呈味増強方法である。
