在本发明的另外的实施方案中,风味改良组合物还包含调味成分。

在本发明的另外的实施方案中,风味改良组合物还包含一种或更多种另外的风味改良化合物,所述一种或更多种另外的风味改良化合物不同于本发明的一种或更多种风味改良化合物。
在本发明的优选的实施方案中,风味改良组合物还包含至少一种选自由以下组成的组的化合物:5,6-二氢-4-羟基-6-甲基-2H-吡喃-2-酮、二氢-3-羟基-4,4-二甲基-2(3H)-呋喃酮(泛内酯)、甲羟戊酸内酯(mevalonolactone)、2-甲基-γ-丁内酯、5,6-二氢-2H-吡喃-2-酮、3-甲基-2(5H)-呋喃酮、5-甲氧基-2-吡咯烷酮、羟基-γ-十二内酯、马索亚内酯(massoia lactone)、2-吡咯烷酮、焦谷氨酸、4-羟基-2-吡咯烷酮、N-甲基己内酰胺、ε-己内酰胺和3-羟基-2-吡喃酮、以及其混合物。在特别优选的实施方案中,间甲苯酚与泛内酯和/或3-正丙基苯酚组合使用。不受任何理论所束缚,假设在本发明的风味改良化合物与选自上述的组的化合物之间发生协同效应。

在另外的实施方案中,本发明提供用于减小食品或饮料中的苦味的方法。
实施例
实施例1–添加至奶酪沙司的间甲苯酚和3-正丙基苯酚
五名专家品尝者食用对照,并且然后食用包含不同风味改良化合物的奶酪沙司。不同风味改良化合物的存在导致增加的咸味感知和增加的唾液分泌。

实施例2–添加至咸味调味剂(salt condiment)混合物的间甲苯酚

咸的–奶酪沙司

Claims (10)
1.风味改良组合物,包含一种或更多种选自由以下组成的组的风味改良化合物:间甲苯酚、9-癸烯-2-酮、3-正丙基苯酚、3-乙基苯酚、羟基柠檬酸、藤黄酸、以及其混合物。
2.根据权利要求1所述的风味改良组合物,还包含溶剂。
3.根据权利要求1或2所述的风味改良组合物,还包含调味成分。
4.根据权利要求1至3中任一项所述的风味改良组合物,还包含一种或更多种另外的风味改良化合物,所述一种或更多种另外的风味改良化合物不同于如权利要求1中定义的所述一种或更多种风味改良化合物。
5.根据权利要求1至3中任一项所述的风味改良组合物,还包含至少一种选自由以下组成的组的化合物:5,6-二氢-4-羟基-6-甲基-2H-吡喃-2-酮、泛内酯、甲羟戊酸内酯、2-甲基-γ-丁内酯、5,6-二氢-2H-吡喃-2-酮、3-甲基-2(5H)-呋喃酮、5-甲氧基-2-吡咯烷酮、羟基-γ-十二内酯、马索亚内酯、2-吡咯烷酮、焦谷氨酸、4-羟基-2-吡咯烷酮、N-甲基己内酰胺、ε-己内酰胺和3-羟基-2-吡喃酮、以及其混合物。
6.产品,选自食品和饮料的组,所述产品包含权利要求1至5中任一项所述的风味改良组合物。
7.如权利要求6所述的产品,其中所述风味改良组合物包含以0.01ppb至1000ppb的量的一种或更多种选自由以下组成的组的风味改良化合物:间甲苯酚、3-正丙基苯酚、3-乙基苯酚及其混合物。

9.根据权利要求1至5中任一项所述的风味改良组合物用于改良食品和饮料中的甜味、咸味、鲜味、涩味、唾液分泌和苦味的感知的用途。
10.改进食品或饮料中的甜味、咸味、鲜味、涩味、唾液分泌和苦味的感知的方法,所述方法包括提供食品或饮料以及将根据权利要求1至5中任一项所述的风味改良组合物添加至所述食品或饮料。
