PROCESO PARA PRODUCIR PEPTIDOS BIOACTIVOS EL CUAL COMPRENDE : i) TRATAR UNA FUENTE DE PROTEINA, DE PREFERENCIA PROVENIENTE DEL PESCADO, CON ACIDO (DE PREFERENCIA ACIDO FORMICO, ACIDO ACETICO, ACIDO PROPIONICO, ACIDO CITRICO O SALES DE LOS MISMOS); ii) PONER EN CONTACTO LO OBTENIDO EN (i) CON UNA ENZIMA DE PEPSINA DERIVADA DE PESCADO, DE PREFERENCIA DERIVADA DEL ESTOMAGO DE BACALAO DEL ATLANTICO, BAJO CONDICIONES ADECUADAS PARA EFECTUAR LA FORMACION DE PEPTIDOS BIOACTIVOS QUE TIENEN AMINOACIDOS AROMATICOS EN POSICION N-TERMINAL; iii) SEPARAR LOS LIPIDOS OBTENIDOS EN (ii); iv) SEPARAR LOS SOLIDOS OBTENIDOS EN (ii); v) RECUPERAR EL PEPTIDO BIOACTIVO RESULTANTE.
