Abstract
En fremgangsmåte for fremstilling av matvarer ved anvendelse av granulær pregelatinisert stivelse produsert ved høytrykksbehandling (høyere enn 4000 bar) beskrives. Stivelsen kan behandles ved høyt trykk inne i selve produktet, og matvare- produktet kan hermetisk forsegles i en forbruker- pakning i løpet av trykkbehandlingen.
