Abstract
I et første trinn fremstilles ris med et vanninnhold på 38 til 115 vektdeler pr. 100 vektdeler ris ved anvendelse av varmt vann, damp og/eller damp under trykk, den resulterende vannholdige ris underkastes avkjølings-og/eller nedfrysingsprosesser, og risen fås til å absorbere ytterligere vann i et andre trinn, hvorved den totale vannabsorpsjon er 72 til 130 vektdeler pr. 100 vektdeler ris, det produseres en ris med høyt vanninnhold hvori ris-kornene foreligger i tilstanden med nesten ingen gelatinering.Risen med høyt vanninnhold har, selv etter koking og oppvarming, hard overflate og mykt indre og delikat smak, slik at risen overføres til vel-smakende kokt ris. Dersom risen fryse-tørkes overføres den til utmerket hurtigris.
